| Meatloaf even meatloaf haters will eat... Posted: 3/22/2007 5:19:14 AM | When my kids were younger, they had a hatred of meatloaf I have never before encountered in any individuals now or since... like a "vampire hates garlic" kind of revulsion. I took it upon myself to experiment with various ingredients... and I believe I may have hit on a good one. I think I did, because they ask me to make it first thing when they come to see me. Feel free to try it, or hate it, or tell me your recipe is better... all the things we do on here.
Almost Famous " I can keep this down! It's actually good!" Meatloaf
1lb ground beef ( not lean, it will make it too dry.) 6oz sausage meat( you can use Italian or Country... you pick) 1 egg, beaten 1 medium onion, finely chopped 1 clove garlic, crushed 1 tablespoon sage leaves, chopped 2 tablespoons mustard ( deli style, no yellow crap!) 1 teaspoon horseradish 4oz Quaker oats 6-8 slices thick cut bacon ½ tsp paprika salt and freshly ground black pepper
Directions 1.Heat the oven to 350F 2.Place all the ingredients in a large mixing bowl and mix thoroughly - it s best to use your hands here... I mean REALLY use your hands. 3.Transfer the mix to a 2lb loaf pan and pat down until level. Cover the top of the mixture with the bacon 4.Bake in the oven for 1 hour 30 minutes or until the meatloaf is cooked through.
I usually hold a little of the mustard in reserve and slather a bit on the bacon top about 2-3 minutes before I take it out of the oven.
Slice, serve, be worshipped!

Posted: 9/14/2007 5:11:19 PM | I never had meatloaf when I was a kid so I was always interested in why people hated it....I love it....I even have a cookbook entitled 52 Meatloaves...one for every week of the year. This is one from there...I think a little more sophisticated that Mom made.
Tex-Mex Chili-Cheese Meatloaf (from the El Paso Chili Company’s Border Cookbook and adapted by SuzyCC)
3 tbsp. olive oil 1 large onion, finely chopped 1 large sweet red pepper, cored, seeded and finely chopped 2 to 3 fresh jalapeño chiles, seeded and minced 3 garlic cloves, peeled and minced 2 tbsp. mild chili powder blend 2tsp. salt 2 tsp. leaf oregano, crumbled 2 tsp. ground cumin 1-28 oz. can crushed tomatoes 1 ½ lbs. ground beef ½ lb. ground pork 1 c. fine dry breadcrumbs 2 eggs, beaten 1 c. corn kernels, defrosted, if frozen 3 green onions, trimmed and sliced 8 oz. sharp cheddar cheese, grated.
Preheat oven to 350F.
In a medium skillet over moderate heat, warm olive oil. Add listed ingredients up to and including cumin. Cover, lower the heat, and cook, stirring once or twice for 10 mins. Add the tomatoes and cook, covered, stirring once or twice for 10 mins. Remove from heat and cool to room temp.
In a large bowl combine beef and pork. Add tomato mixture, bread crumbs and eggs and mix well (hands are best for this job). Add the corn and green onions and mix well. Add the cheese and mix well.
Transfer mixture to a shallow baking dish and form it into a flat loaf. Bake about 1 hour and 20 mins., or until the interior reaches the temp. of 160F. Pour fat from the dish before serving with salsa of your choice.
Sometimes I grate extra cheese and put it on top when the loaf is done. Return to the oven until the cheese is well melted. | |

1lb ground beef 1 lb of ground pork, veal,turkey or chicken and at times I have used jimmy dean sausage 1 pack of lipton onion soup mix 1 package of onion mushroom soup mix half a stock of celery minced finely Half a carrot graded or chopped finely 1 small clove of garlic 1 small shallot 2 small to med eggs 1 tablesppon of salt, I use sea salt 1/2 tablespoon of fresh gound black peper 1/4th cup of mustard 2 tablesoons of worcestershire sauce 1/2 cup of plain bread crumbs
mix well and bake in a 8 inch metal pan until done. Drain any grease Once done, spread 2 small cans or one large can of refried beans on top. The meatloaf will have pulled away from the sides, this will allow you to spread the beans down the side of the loaf to, just like icing a cake. Add cheese of choice. I use kraft crumbles mix. place foil over top and stick back in the oven for 5 minutes The heat on bottom from the hot meatloaf will help heat the refried beans Once cheese is melted slice and serve
Put salsa and sour cream on top, its very yummy and makes meatloaf more fun and everythings in one dish.

In the south, we serve meatloaf with mashed potatoes or au gratin potatoes, green beans or cream style corn ( some serve both ), tea. I like to fix meatloaf with Campbell's Healthy Request tomato soup. Most folks in the south use ketchup. Ketchup has too much of a bite! Also, I always found oats makes meatloaf kinda "rubbery" in texture and prefer dried bread crumbs. Everyone has their own method of fixing it. | |

| Meatloaf even meatloaf haters will eat... Posted: 2/8/2008 3:25:24 PM | I make a meatloaf similar to the OPs. One change I have, is I thickly slice a tomato, to put on top of the meatloaf, BEFORE I put the thick-cut bacon on top. :-) Makes for a VERY moist, and juicy meatloaf.

| Meatloaf even meatloaf haters will eat... Posted: 2/8/2008 7:06:58 PM | Deli mustard ~ you can pick it up at Sobey's, I picked some up yesterday. That's what it's called, deli mustard. It is NOT Dijon mustard.
Meatloaf is made with ground beef. You serve it up like you would any other meat. It is really good cold, on a sandwich, slices up easily.

I also like to make meat loaf with ground buffalo. To make it moist, grind vegetables (carrots, celery, onions and/or sweet peppers) to mix into the meat loaf mixture. A great sneaky way to get kids to eat their veggies . . . also adults. You really can't taste the vegetables unless you put in great quantities of peppers and celery. | |

| Meatloaf even meatloaf haters will eat... Posted: 3/10/2008 2:10:48 AM | I was born and raised on a farm, this is a simple no fail recipe anyone can make. Cheap too. 1.5 lb of hamber 2 slices of bread torn up 2 eggs to use for binding 1/4 cup ketchup 2T mustard 1/2 cup any ranch dressing
Mix together and put it in a pam cover casserole bowl. Cook in oven about 40 min to 50 min test to see if it is done. At 30 min add dressing for the top.
Dressing: 3/4 cup brown sugar and 3/4 cup ketchup mix together. Pour over top of meat loaf. Place back in oven to disolve the sugar and ketchup. Remove when knive test is clean. Great for sandwiches too. | |

The yellow stuff is really just mustard seed and vinegar though very strong taste still rather bland. I am sure using one of these is a good choice depending on how you want your meatloaf to taste.
These are all very good recipes! Meatloaf is indeed an American staple and everyone seems to have their own variation. To make some of these a bit more for a balanced diet, I would use very lean beef and mix it will regular ground turkey or turkey sausage. I would replace the molasis with honey clove and nutmeg mix, and breadcrumbs with whole wheat bread/wheatgerm or oatmeal.
I have seen a few people use bacon though i would use a leaner thicker version, it seems to be very good if you use bacon to also use prunes or raisins and sage along with using bacon in meatloaf. Topping with tomatoes is a very good idea and I will do that next time.
Using fresher ingredients always tastes better and is a healthier choice, however if you use fresh veggies, make sure you saute them in olive oil first then drain them as so they don't water down your meatloaf! | |

| Meatloaf even meatloaf haters will eat... Posted: 3/11/2008 1:47:27 AM | Rose, I made a meatloaf a couple of days ago- for a side, I made roasted "fries" (chips for the folks over the pond)...
I took about 6 medium potatoes and 3 medium onions, taters cut in half lengthwise and then sliced about 1/4-3/8" thick onions thick sliced top-to-bottom. Toss them in a couple of shakes of hot paprika and a bit of pepper. Set out the meatloaf in a large pan, layer some onions on top of the meatloaf, then surround the loaf with the rest of the onions and sliced taters. Mix 1/4 cup each of ketchup and brown mustard and pour it over the top (meat and onions and taters), then into the oven to bake at 350F until done. The sliced taters come out with a slight crunch like fries, but without the grease and saltiness.
You can also use herbed rice -cook rice (NOT INSTANT) with a 1/2 tsp each of parsley flake, oregano, basil, 1/4 tsp dill, and minced garlic to taste. Add some pan drippings to the rice just before serving.
And deli mustard will be labeled as just that. If I recall, it's slightly darker than the bright yellow stuff, but not coarse-ground. | |

I did a 40-60 meat/oat, onion & celery ratio and it still turned out pretty great despite meat being the lesser ingredient. you basically just put what you normally want in the meat..
1lb to 2lbs of hamburger may add 1lb sausage in trade at least 1 egg garlic clove crushed onion finely diced (1 med) oatmeal (not sure.. i do it by the hands and guess work lol ) add more spices to taste... 10 oz. to 12oz. frozen spinach.. defrosted Parmesan cheese (not the powder) I buy the big bag of shredded use as needed)
mix all you ingredients. .............. minus cheese and spinach....
yes there goes your hands all up in the mix then either use wax paper or foil tear out a piece at least a foot in a half.. roll out the meat mixture into a rectangle that will hopefully fit into your 9x12 pan when your done.. when all evened out ... press out all excess water from spinach spread the spinach out on top of meat evenly... then spread a layer of the cheese across it then roll the meat up like you would a ice cream cake start at little end roll towards other little end..
preheat oven to 350degrees bake until done.. about 1hour 30 min | |
