anyone have a good recipe...one thats tried and true... for croissants?...please...no googled recipes...last time i googled a recipe for croissants and tried it i damn near burned my house down...boy howdy butter sure burns!...lol...

I don't think the recipe makes much difference. It's puff pastry; the key is proper handling. Roll, fold, refrigerate. Roll, fold, refrigerate. Roll, fold refrigerate. Bake before it warms up and the butter melts. It's been years since I made any, but if memory serves, the ingredients don't include much beyond flour, water, and butter. Try changing what flour you use, or what butter. Main thing - cold water, cold butter.

I make passable croissant dough in my bread machine ... not perfect yet, but I'm working on it. Then yes, roll, cut, fold, refrigerate, bake. Sure do taste good even if they aren't as pretty as I'd like.

mine tasted ok too...cept the ones that got a little burned...the birds ate those ones...i'll give'em another whirl one of these days...next time butter goes on sale cheap...
i think the recipe i used was one of the recipes put out by someone that likes to think there is a certain mystique about cooking
