| worlds easiest peanut butter cookies Posted: 5/1/2007 4:29:23 PM | 1 cup peanut butter (either crunchy or smooth your choice) 1 egg 1 cup sugar
that's it, just 3 ingredients. (nope I didn't leave anything out) mix well, using teaspoon of dough at a time roll into balls and place on cookie sheet. 350 degree oven. 6-12 minutes depending on how soft or crisp you like them.
I usually also roll them in sugar before baking but that's optional.
To further complicate them, you can add a hershey's kiss in the center, the old thumbprint style.... | |

I also (being a farm gal) have better ways to attract and kill mice than peanut butter or traps...but that belongs elsewhere too right?

But I also figure with a cup of peanut butter, the calories from the sugar aren't going to hurt (much!). I wonder about the cooking reaction, I'm not sure Splenda would cook up the same way....might have to add a little flour? Try a half a batch just to see? Report your results back to the forum?? Since I don't like Splenda, I wouldn't be a good choice to try it !  | |

Anyone tried replacing the sugar with Splenda?? Oh sure, make your daughter the test dummy....
My mom is diabetic and I cook for her using Splenda all of the time. I always keep a large pkg of it in my house. I've made her pumpkin pies, apple turnovers, peach cobblers, cookies, etc. They all turn out great! We really haven't been able to tell much difference in most things. It's all I use in iced tea, but it doesn't work well with hot coffee.
The only thing I don't think it worked well for was a pound cake. My mom thought it was good, but I wasn't pleased with it. It seemed to be much more dense than it should have been. It could have been something other than the Splenda that caused that problem. I haven't tried again.
A friend said she used it once in Christmas cookies, and she didn't think they came out very well. But again, was it the Splenda or something else? | |
