| Avocado Recipes & Uses Posted: 5/5/2007 11:45:15 PM | I'm an absolute fool for avocado's although a friend says I'm a fool for eating them.
Do you like them. How do you use them, and will you share your favorite recipes using avocado? I love putting avocado on hamburgers. I also add avocado to my pico de gallo. | |

Then that is my chip dip. I haven't experimented with them much, yet, but I am sure after reading all the other responses to this thread I will have some new interesting ideas to try..... | |

We add very finely chopped onion and garlic, chopped tomato, a squeeze of lemon or lime and a big shot of tobasco. The original recipe called for mayonnaise as well. We also use avacadoes in our salads and on our omelettes. | |

In sandwiches, I put a few thick slices, sprinkle some Half the Salt over them, then add a couple of tomato slices, add a bunch of lettuce................. yummy!   I also love putting Avocado when I make Maki Sushi rolls.

That's the fresh uncooked salsa that we eat with chips. Tomato, onion, cilantro, garlic, jalapeno, a little lime, a little salt and freshly ground pepper. I also like adding a little red pepper sauce. Made some last night with chive and cilantro fresh from the garden. Unfortunately, it's too early here for tomatoes from the garden. But it was still Yummy! | |

| Avocado Recipes & Uses Posted: 5/7/2007 7:51:13 AM | There's no mayo in real salsa. Just (roma/plum) tomatos, onion, chilis, cilantro, salt and lime. Mix that with mashed avacado and you have real guacamole.
They're also good mashed up as a sadwhich filling with salt and pepper.
Also stuffed with bay shrimp mixed with a bit of mayo. | |

Cut one avocado in half, remove seed but DO NOT PEEL, toss a healthy-sized garlic clove into the seed cavity, a turn or two off a pepper mill, a sparse pinch of salt, and a teaspoon of olive oil rubbed on the top and in the cavity. Wrap in foil and roast for about 10 to 15 minutes at 400-450*F. When done, mash it all together in the peel, and then scrape the whole mess onto a warmed poppyseed roll. Add salt and pepper to taste.
You can also use it as above as the base on a toasted crusty Italian loaf and add sliced provolone, mozzarella, cappicola ham, and/or salami, some tomato and romaine lettuce. | |

| Avocado Recipes & Uses Posted: 5/8/2007 3:29:06 AM | Killer Guacamole (kraft recipe) awesome 2 avocados skinned and seeded - save a seed 1 tsp lime juice 2-4 garlic minced (depending on how garlicky you want it) 1-2 tbsp mayo salt and pepper (optional) Mash the avocados, add the rest of the ingredients put the seed in it-it keeps it from browning. can be used as dip with tortilla chips or top up your sandwiches with it. really good stuff.- always a hit. | Avocado Recipes & Uses Posted: 5/8/2007 4:36:26 AM | Hello..I have been eating Avocados on a regular basis for awhile now. They are loaded with MONOUNSATURATED FAT. That is the best fat anyone can eat. I haven't done anything unusual with them. However, this recipe would be nice as a pate. Take a cup of walnuts and grind until very fine, and add 1 Avocado, 1 tbsp.extra virgin olive oil, 1/8 tsp(or more, your choice) of allspice and 2 cloves of garlic..2 tsp. of fresh ginger root..or 1 tsp.ground ginger... 2 cloves garlic(mashed), salt and pepper to taste, and any herbs you like..eg: mixed herbs/tarragon and blend all together, in a blender or food processor. You can use it on bread, or your favourite crackers.
Also, you can do the same with an eggplant. The only differerence is...bake an eggplant (pierce with a fork in several places) for 45 minutes, slash to let steam escape and then scoop all of the eggplant in a blender or food processor, and add 1 cup walnuts (grind to very fine texture in advance) and add 2 cloves mashed/crushed garlic..1tbsp.extra virgin olive oil...1/8 tsp.allspice...salt and pepper to taste, and any other herbs you like..eg: mixed herbs/tarragon,etc) and 2 tsp.fresh gingerroot..or 1 tsp.ground ginger
This makes a most delicious and nutritious pate, make no mistake about it. Enjoy! | |

| Avocado Recipes & Uses Posted: 5/8/2007 10:20:35 AM | Halve avocado(s), remove the nut, brush with lemon, fill with a cold crab salad, serve with iced Aqvavit. Makes a nice summery luncheon.
For a zippy little dip, mash two peeled avocados, stir in ½ cup mayo (or plain yogurt, or sour cream, or a thick creamy dressing of your choice), 3 T of lemon juice (or sub lime if you prefer), 1 t chili powder, 1 clove minced garlic (or to taste), ½ t jalapeño pepper sauce (or to taste), and ¼ t of coarse ground sea salt (or to taste). Let sit for at least an hour to marry the flavours, and serve.
There's another I do as an entrée with chicken breast cut up, heavy cream, cognac, mushrooms and avocado that's quite tasty, but I'll have to look for it to refresh my memory of relative quantities. | |

Chicken Breast with Avocado
2 lb. boneless chicken breasts 1 large avocado ½ lb. large mushrooms 4 tbs. butter ¼ cup scallions, finely chopped ¼ cup cognac 2 cups whipping cream pinch cayenne
Cut chicken into 1" pieces. Cut avocado into 8 pieces, lengthwise; halve avocado pieces. Cut stems from mushrooms and slice caps into ½" pieces. Heat butter in large skillet; add chicken. Season with salt and pepper; cook over high heat, stirring, about 5 minutes or until tender. Remove chicken to heat-proof serving dish. Add mushrooms and scallions to skillet and cook 1 minute; add cognac and stir. Add cream and cook down over medium heat, about 8-10 minutes. Add cayenne, avocado, and juices from chicken; heat through. Pour sauce over chicken, heat through and serve immediately. | |

Avocado and Orange Salad 1 medium head romaine, torn 1 small can mandarin oranges, drained 1 avocado, sliced ½ cup olive oil ½ cup orange juice 1 tbs. white wine vinegar (rice wine works well too) 1 small clove garlic ¾ tbs. grated orange peel (zest) ¾ tsp. basil ½ tsp. sugar
Combine dressing ingredients, mixing well; season to taste with salt and pepper. Let stand for at least 1 hour. Pour dressing over salad and toss to coat. | |

½ Avocado, halved and peeled 1 ½ cups cups mango nectar ½ cup crushed ice Sugar to taste
In mixer, blend avocado with juice and sugar; chill. Pour over ice. Enjoy! | |

Every house I lived in while in Hawaii, had an avo tree on the property. Smooth skin, bumpy kine, regardless. They are technically a fruit. I take them and half 'em, remove the seed, and plant it. The more avo's the better. Then I sprinkle some sugar on them and enjoy. Yep, I said it...SUGAR. It's fantastical. I also add them to my fruit salads. Everyone thought it was honeydew. No, it's avocado, and it absolutely ROCKS in a fruit salad. Try it, you will be so surprised. I am spoiled having all the free fruit in HI, now that I am in TX, avos are extremely expensive, and I can't just plant a tree.

| Avocado Recipes & Uses Posted: 5/10/2007 3:09:08 PM | My favourite quick snack is an avocado, eaten with a teaspoon out of its peel with a dollop of salad cream (British salad dressing/mayo-type creation by Heinz) in each dent from the pit.
My favourite sandwich is avocado, (sliced) ham, mayo with a splash of lime juice (or real lime mayo if I'm just back from Mexico), tomato and cheese, with a sprinkle of black pepper on multigrain bread.
They're yummy - and good for you too.
