Posted: 5/28/2007 1:23:44 PM | I like to add in some oregano, parsley, tarragon (yes tarragon lol), plus I like things a little spicy so i'll occasionally throw in some dried crushed chill peppers or cajun spice. I also use the juice that the tuna is packed in (water packed only). I don't add the sweet pickles, b/c I'm allergic, so I substitute baby carrots chopped up small. Changing up the pasta helps sometimes, I'm partially to scooby-doo noodles Just have fun with it, my theory is if something doesn't taste right then you know not to use that combination again.

I don't use chopped sweet pickles though. I just use green relish. I've also added some alderwood smoked salt to mine which added a nice smokey component. Generally I tend to stay away from elbow macaroni. I go for a nice bowtie or farfalle (the corkscrews). You could also make tricolour pasta salad with tricolour farfalle. For produce you could add in onions, garlic and how about some diced sweet bell peppers?

Posted: 5/28/2007 4:19:50 PM | Can still keep your Great Tuna Macaroni Salad recipe just remove the sweet pickles and replace it with frozen peas and carrots and add thyme or tarragon. If you want it spicy remove sweet pickles and add jalapenos, onions, chili sauce, garlic cloves, salt and pepper. BON APPETIT!

Posted: 5/28/2007 4:45:42 PM | Ok have to say my current favortite macorni is mini sea shells, the tuna noodle recipe that has been around for years but add a dash of crushed red pepper to taste, and celery seed and celery salt, it's a very nice balance of hot and sweet. I also tend to cut the mayo in half and add Olive oil to replace the liquid.
let me know how you like it, Dan

I tried the crushed red pepper and the celery seed/salt and it was superb. It was so good that the salad was finished up at one seating, that never happens!! I always have leftovers for lunch the following day. I need to get busy and make more, to fulfill my lunch obligations. I have a favour to ask? May I have your recipe for the way you prepare your porterhouse steak? I looked at your profile and just the mention of it made me curious to want to sample it. Hope you don't mind the gall of me to ask. Thanks for submitting suggestions to my GREAT macaroni salad query and take care, Nancy

Then to add flavor and bulk- chopped celery, chopped red onion, well drained cut pieces of mandarin orange and small chunks of pineapple, and pecans. Season with seasalt and white pepper to taste

I skip the sweet pickle, add celery, green onion, peppers, any or a combo of mayo/yogurt/sour cream /salad dressing ... depends on my taste at the time, some Louisiana hot sauce. Bit of lemon, bit of dill (or sometimes, just some brine from my zesty dill pickles). Tomatoes optional.

Hi; I have a great Tuna Macaroni Salad I have made for years but looking for something different.Mine is the usual tuna, elbow macaroni, mayo, chopped celery and chopped sweet pickles. It just seems to be lacking something!!
It is missing exactly 1/2 Cup of Ranch Dressing. I guarantee this will make it better or I will double your money back!
Usually I do a lot of the herbs and spices and extra vinegar and/or lemon juice but if you want one quick ingredient to add lots of spices and flavor for you then the ranch dressing is it.
Most ranch dressings are mostly parlsey and vinegar, anway. It is just easier to add one ingredient that has them all rather than pulling out all the spices individually.
Peppercorn Ranch makes a great additive, too. Realize I said half cup for a huge batch. If its just me I use maybe 2 T. Mix it in with the mayo earlier and reduce the mayo accordingly so its not drowning in sauce.
Also egg yolks can add richness and a nice color. Cooked egg yolks, I use them in my picnic potato salad.

I use large sea shells 1 can of tuna 1 can of cream of chicken (i like the organic) 3 tbs butter (melted) 1/4 c. milk pepper to taste 1/4 - 1/2 cup fresh Parmesan cheese (or grated) Velveeta Cheese slices Shredded cheese for casseroles. (you can purchase it that way)
** Or you can be simple and add a package of cheese mix from a box of mac and cheese if you are in a hurry... just do not forget the Parmesan.
Heat all the butter, milk, pepper, cheeses, and then add tuna. Add Sea Shells and mix! IT IS SOOOO CREAMY... AND THE CREAMINESS GETS CAUGHT IN THE SEA SHELLS... WHICH MAKES IT ALL THE BETTER! yummy!
