Spinach and Feta Muffins

Fusion food! This makes a lot but they freeze well.

1.5 litres (6 cups) cake flour
45 ml baking powder
15 ml salt
10 ml dried oregano
750 ml crumbled feta cheese
600 grams fresh spinach, washed, tough stems removed, cooked and drained off all excess moisture or the equivalent in frozen spinach, well drained.
300 ml olive oil
250 ml milk
6 big eggs, beaten

Preheat the oven to 180 degrees and prepare about 4 dozen muffin cups.

Sieve all the dry ingredients together in a big mixing bowl. Add the spinach, feta cheese and spinach and mix lightly. Make a well in the middle, pour in the rest of the liquid ingredients and mix until just combined (overbeating tends to make holes in the muffins)

Fill muffin cups about two thirds full and bake for about 25 minutes or until done when tested with a skewer. If your oven is too small to take them all in one go, you may need to add a little water to the remaining batter as it thickens on standing.

Oh man that sounds tasty! I add this one to my recipe file. Thanks for sharing. I love both spinach & feta. Only thought of having them together in a salad. I bet the muffins served with a spinach and feta salad would be interesting...

These sound really, really good!! (Although I just finished eating all of the spinach that I had . . . . I don't quote Rachel Ray often (OK, this is a first), but she is really right about frozen spinach being the best bargain around; I had a 5-oz. package of pre-washed baby spinach and when I wilted it down, it was barely 1/2 cup.)

If someone could translate the quantities to "American" measures, I would appreciate it. Not just for this recipe, but for reference. (Perhaps someday we Yanks will get with the program!)

I'm thinking that throwing in some Kalamata olives would be good, but I will make these true to the recipe first (pending translation!).

these do sound good, and a measurement translation would be appreciated, i do agree with rx!
me, i'd tweak them a bit with garlic or scallions, a good complement with the coming savory dishes of autumn's rich bounty of foods. mm, a good roast or soup or stew, thanks for posting, OP.
