I saw the deer meat thread and thought that three pages of responses was quite a few and thought my reply would get missed, so I opened a new one. I hope I am not stepping on any toes here...

I don't "cut" my deer meat with any fats of any other animals, I use plain ground deer, so it doesn't stick together well with patties. I came up with a solution:

2 pounds ground deer
1 packet of ranch dressing mix (dry)
1 packet onion soup mix (dry)
1 cup shredded cheddar cheese

mix all ingredients together well and let sit for an hour. after the flavors mix, put the mixture through your grinder again to mix the ingredients better. ( I bet a food processor will work for this step also.) Form into patties and grill, fry, or whatever you want to do. When I pan fry these, I usually make a mushroom gravy and put that on top. It is easy and tastes good too.

Thanks iowaboy, I'll have to try that:-) I get lots of deer meat from the hunters who hunt my farm during season. They're always generous, lucky me!! I never cared for the burger as much and always thought there must be something I can do to add some zip to it. I don't usually like to add other animal fats to my mix either, but it looks like this would make a patty hold it's shape better while cooking. The mix you have here sounds like it will taste really good and give it that zip I'm looking for, will definitely give it a try!

that cheddar cheese holds it together and gives it moisture. I have tried mozzerella cheese also, but cheddar gives it good flavor along with the moisture and holding it together.
some time I might even try pepper jack cheese and see how that goes.

Try throwin in some cheap breakfast sausage, gives it a really good pepper flavor. A client of mine uses it instead of pork fat to keep it from being drier than a popcorn fart..

Oooooooohhhh!!!!! I like the idea of the pepper jack, yum! Also, rk, never thought about adding in some breakfast sausage. Drier than a popcorn fart...boy, that really says it all about ground deer meat, lol. The dryness is one of the things I don't like about it.

FunkyGuy, sure....ate Bambi, and Bambi's friend Brier Rabbit too. My girls always called them Bambi burgers (as in 'you're not going to try and serve us Bambi burgers again are you Mom!?!?)

He turned me on to a couple pounds. He grinds the whole deer up, adds a bunch of roll sausage and soaks it in buttermilk. Even good as a pattie on a sandwich...
