| Smoked trout omlette (norther California style) Posted: 7/4/2007 12:58:05 PM | Here's one for all you nature kids and hillbillies to try if, like me, you seem to always have some smoked trout in your refrigerators. This dish will impress your weekend guests for that Sunday brunch, and it's easy:
1 smoked trout - often plenty for two omlettes. I prefer using wild brook trout. 2 TBS. grated onion 1/2 tsp. grated horseraddish 1/8-1/4 package (1 lb.) cream cheese 1/4 cup grated cheddar cheese 3-6 eggs Lemon wedges
Flake up that fish real good and get all the little bones out...that's the only real effort needed for this. Put the flaked fish in a bowl and mix in the onion, horseraddish, a splash of lemon juice, and the cream cheese. There is your filling...all done! Next, you beat your eggs and get the omlette started. Add your filling on top, fold the omlette, and top with the grated cheddar cheese. Go light on the cheddar, or you may cover up some wonderful, smokey flavors. If you have some fresh dill in your yard, that makes a nice addition for a topping.
This omlette goes real well with some champaigne or white wine. Enjoy...this was my second recipe published and the easiest one to make. | |
