| The ONLY squash I'll eat Posted: 9/17/2007 11:08:50 AM | | Acorn squash...cut in halves, scoop out the seeds,,,put one strip of bacon in the bottom of each...add two large tablespoons of brown sugar, fill to the top with the rest of the bacon... (one pound of bacon is good for one large acorn) cook in the oven for about an hour and twenty minutes at 350..When its done..you need to use a knife to score the edge and a spoon to get the skin off...drain grease of couse slowly to save the sugar...turn upside down..cut up and lightly mash...cover with butter salt and pepper//didnt say it was healthy..but its sooo goood and rich,, may not even get to the rest of the meal....I'm hungry now... | |

When it's done.....eat it right out of the skin with spray butter, or put it on a plate and add low fat spaghetti sauce, and it is unbelievably good and good for you. | |

| The ONLY squash I'll eat Posted: 9/17/2007 12:48:11 PM | The acorn squash recipe sounds great! Here's one I make with zucchini - the bacon and maple syrup cancel out any healthy benefits of the vegetable, but it's soooo delicious:
4-5 zucchini's (yellow squash would probably work), peeled and cut into thick strips (like thick french fries) 1 lb. bacon maple syrup for glaze
take 2-3 zucchini strips and wrap 1 piece of bacon around it. Lay flat on cookie sheet. Repeat until all zucchini and bacon are gone. Brush bundles with maple syrup and put in 350 degree oven until bacon is desired crispness.
Try to let them cool a little before eating!  | |

How about cutting in half, adding little bit of butter,little bit of brown sugar and microwave about 5-10 minutes until tender. That way you get to taste the squash. Zucchini's nice. Sauteed in olive oil with onion and garlic. And...Healthy! | |

| The ONLY squash I'll eat Posted: 9/19/2007 10:46:05 AM | I have a sister that doesnt eat meat, so we all have created meat-less recipes one sister makes a lasagna with spinich and squashes. that is better than any meat lasagna ive eaten.
sister sheards zuccihni, yellow, and calabasa squashes, then adds them to the sauce, once cooked in the lasagna you cant tell they are there...her kids eat it up. | |
