| Pumpkin Chocolate Chip Muffins Posted: 10/1/2007 4:07:29 PM | Something fun for fall. And low fat too! I got this recipe when I was on weight watchers. Two muffins for 1 point. I love this recipe!!!!
- 1 box of butter pecan cake mix, but keep the box for instructions (you can use spice cake mix if you want them extra pumpkiny)
-15 oz can of pumpkin filling
- i bag of chocolate chips
Directions: Mix the cake mix and pumpkin until fairly lump free. You can use an electric mixer, but I just use a spatula or spoon. After the mix is fairly lump free, add your chocolate chips.
Plop them into a muffin tin. Follow baking instructions on the back of the cake mix box, but keep an eye on them. The back of the box says 17-22 minutes. I start off with 17 minutes and if they aren't done when I check them with a toothpick then, I cook them for 5 more minutes and they are usually done by then.
Makes 12-24 muffins.
Serve warm with milk or coffee.

I just mixed this up and if smell is any indication there will not be any leftovers! I used the spice cake mix and substituted the pumpkin for the oil. I also cut back to only two eggs.
