Your favorite cornbread recipe....( I prefer sweet) after cornbread mix is ready add 1 can cream corn 1 bag of frozen mixed peppers ( red, yellow, green) 1 cup salsa 1 diced tomoato
Brown 1 lb hamburger drain add taco seasoning powder per package instructions Add to the cornbread mixture.
Bake per cornbread instructions. 5 minutes before done baking top with shredded cheddar cheese..
Serve hot with salsa and sour cream. | |

| mexican cornbread Posted: 10/17/2007 6:41:10 PM | Here is a recipe my mother found many years ago. It is a whole meal in an iron skillet/dutch oven
Mexican Cornbread This is enough for 6 people
Brown 1/4 lb ground meat with 1 large chopped onion. Drain and set aside
Grate 1/2 lb mild cheddar type cheese mince up to 4 jalpeno peppers
Grease a large iron pan (deeper is better). If you don't own a large iron skillet/dutch oven, use a 3 or 4 qut casserole
Sprinkle a thin layer of meat over bottom (can use corn meal).
Mix together: 1 cup yellow corn meal 2 eggs 1 cup milk 1/2 teaspoon baking soda 3/4 teaspoon salt 1 303 size can of cream corn 1/4 cup bacon dripping (or Canola oil)
Layer: Half of the cornmeal mixture into prepared pan/casserole grated cheese meat, onions and jalapenos Other half of cornmeal mixture
Bake 45 to 50 minutes at 350 degrees | |
