I have had this recipe for so long I do not remember where I found it. Been making it for about 30 years! It is the best relish I have ever tasted. It can be used in place of any other relish. Once you try it other relishes just do not taste as good.

Use water bath canner to make it. It will take a pot that big.

5 tbsp salt
2 cups vinegar, cider
4 cups sugar
1 tbsp mustard seed
1 tsp dry mustard
2 tsp celery seed
2 tsp turmeric
1 tsp nutmeg
1 1/2 tbsp corn starch

5 large ground bell peppers
10 cups ground zucchini
4 cups ground onions
1 ground red pepper

Mix squash, onions and peppers together. Sprinkle with salt. Let sit for five hours or overnite. Rinse and drain three times.

Add all other ingredients.

Bring to a boil. Turn down heat and simmer for 30 minutes.

Pour into hot sterilized one pint jars. Place in hot water bath for five minutes. Makes seven pints.

I usually make about 28 pints so I do not run out in the winter.

I've never had a relish of any type to eat and I've never made one either.
I grew up with basics and thats about it ..
I do love the peach and mango salsas and pickled vegtables.
I really want to try this one .

It can be served with anything that is usually served with a relish. This relish will top any you have ever had. It is good to eat right from the jar.

Once you get the rythmn down it is easy to make.

I think her point is, she doesn't know what relish is usually served with.
I'm not much help because I don't eat anything that relish would go on.

Some people put relish on hot dogs or sausage. Other than that....maybe others will suggest!

It can be used in salad dressings besides hot dogs. Trying to think of all that we use it on. Great on sandwiches. Potatoes were good with it.

I know we could go through a jar in less than a week.

I made some last year but not this year due to lack of space.

My memory is not what it used to be.
