This is really simple, I've been making it for years.

You will need either a large mixing bowl or do it in half batches.
you will also need storage containers, about 2 times the total amount. I usually save the round ice cream containers or such.
1 lb unsalted butter Semi soft.
1 lb dark brown sugar
1 gallon vanilla ice cream (good grade french vanilla is best) Softened.
Apple pie spice blend or Pumpkin pie spice blend.

You will need either a large mixing bowl or do it in half batches.

Put the ice cream into the mixing bowl and add the butter in chunks, and blend then gradually beat in the brown sugar. At this point you can blend in the spices, when they are incorporated through the mixture, pour it into the containers and freeze.

Now having said that.. I know some people love lots of spice in their hot buttered rums, others don't like any and some very little. So over the years, I've gotten to where I just put out sugar shakers or such with the spice blend for people to use, per drink.

It also works fine with rum extract if someone does not want to drink alcohol.

Put a tablespoon or so in a mug, toss a shot of rum into it, pour boiling water over it and stir.

Yeah I will sometimes make it in smaller batches. (It takes me WAY too long to go through almost 2 gallon containers of it for myself) and toss it in other drinks, you kinda gotta play with it a bit to see what you like or don't like it in.

A friend sent me this one:

Hot Buttered Rum

1 cup sugar
1 cup brown sugar
1 cup butter
2 cups ice cream (she just uses Wal-Mart vanilla in the tub, nothing fancy)

Melt together sugars and butter. Fold in ice cream and freeze. Put about three teaspoons of mix and a shot of rum into a mug of hot water and enjoy!
