| Thanksgiving Potluck for my Office coming up.....need some major help!!!!! Posted: 10/24/2007 5:02:04 PM | Somewhere around here I posted a bean salad with salsa, I know that every time I've brought it, it's been gone poof within about 5 minutes.
But anyway.. to save myself having to go find it rofl..
This is easy to double or triple or whathave you..
1 can of garbonzo beans 1 can of wax beans 1 can of cut green beans 1 can of kidney beans 1 can of black beans All Drained..
1 jar of mild salsa at least 16 oz
Dump the beans in a container, dump the salsa on top. stir, fridge over night. serve.
IF you make more than the above, double triple. watch how much salsa you need, it doesn't always double quite as easy. I usually do it by sight.
If you aren't sure what it looks like do the one can each first, to give yourself the idea then go up from there.
Also, you can add other stuff to it if you want, sweet onions that are chopped, mushrooms, etc.. though the mushrooms can get slimy black olives, etc.. | |

Posted: 10/24/2007 6:13:02 PM | This is something different - I dont know what you are looking for- like a side dish, maybe sweet potato casserole or something- this is more fun and will probably get peoples attention- you can just warm them up if you have a microwave at work. I omit the almond - only because of nut allergies. Makes 20- so double if you want.
Thanksgiving Won Tons
Wontons with a turkey, cranberry, and almond filling. INGREDIENTS: 1 1/2 cups cooked turkey breast meat, shredded 2/3 cup dried cranberries 1/3 cup slivered almonds 1/2 cup cranberry sauce 1 (14 ounce) package wonton wrappers 1 quart vegetable oil for frying
DIRECTIONS: 1. Mix the turkey, cranberries, almonds, and cranberry sauce in a bowl. Place about 1 teaspoon of the mixture in the center of each wonton wrapper. Fold wrappers over filling, moisten edges, and press with a fork to seal. 2. Heat the oil in large skillet or deep fryer. 3. Fry the wontons in the hot oil until golden brown. Drain on paper towels.
** You can add some boxed stuffing to it too and have cranberry relish to dip it in.

Posted: 10/24/2007 6:43:17 PM | BEST MEATBALLS: 1 pge (extra lean) ground beef 1 small pkg ground pork 1/2 medium onion, finely diced 1 clove garlic, crushed 1 egg 1/4 cup fine bread crumbs (add approx. 1/2 cup water to wet down the crumbs) 1 teaspoon dried parsley (can be omitted if you don't have on hand) Mix together gently and form into small balls. Fry in pan coated with Pam, until browned. Transfer meatballs into baking dish, add one can whole mushroom, or fresh small mushrooms. Into the pan that you fried the meatballs, add 3/4 cup water, being sure to stir up the brown bits (this is where the flavor is) Add: One can mushroom soup to the water and stir well. Dump this over the meatballs in the baking dish and bake for about 30 minutes | |

I came up with this for a buffet related to a funeral. I needed to do my part and had little time. I keep a good brand of canned Asparagus on hand. Open cans and drain really well....for several minutes to be sure all water is gone. Place in a shallow baking dish to fit the size/amount you are serving. Brush the asparagus with olive oil......or top with butter...I prefer the olive oil. Sprinkle crumbled bleu cheese over the asparagus. Put in microwave just long enough to melt the cheese. Cream Cheese Wraps 1pkg of Budwigs beef deli meat. You can find it near the regular lunch meat case 1 8 oz pkg of cream cheese 1 small jar of sweet pickle relish
Mix soften cream cheese and pickle relish together. Spread on one piece of deli meat and roll. I then cut that roll in half. That's it! One pkg has 10 pieces of meat so it'll make 20 when cut in half but I suggest buying at least 2 pkgs because this is great finger good and won't last long.
Taco Roll-Ups
1 pkg 8 inch flour tortillas 1 8oz pkg of cream cheese 1 pkg of taco seasoning
Mix taco seasoning and soften cream cheese together. Spread on a tortilla and roll. Cut each roll into 6-8 bite size pieces. One pkg has 10 tortillas so you'll get at least 60 out of one pkg. I'd make these a few hrs to a day before you need them so the taco seasoning softens into the cream cheese. | |

Make it the night before and refrigerate. It is lovely served in a nice glass bowl. Can get plastic cut glass look alikes at Smart and Final that are gorgeous if you like. I would double this recipe for your larger group. 1 large box of lime jello 1 large container cool whip 1 small container cottage cheese 1 small container sour cream, preferably daisy it's delicious 1 small pkg. chopped pecans or to taste 1 large can diced pineapple, drained well add the box of lime jello powder to other ingredients, mix well, put in to nice serving bowl, cover with plastic wrap over night. Will be gorgeous and the jello will have set up in the cream over night to a really fluffy consistency. Enjoy, I'm sure it will be a huge hit. When I took this to my family reunion I didn't have any to bring home as everyone packed a little for themselves to take home. Yummy! | |

They can be a little labor intensive if you use fresh fruit, since you have to peel and cut the fruit, but it's pretty inexpensive right now given that apples are in season. Or, if you just buy berries, all you need do with them is dump 'em in. Scratch crust is always the best, if you know how to make it, but you can buy pre-made crusts as well. You may have to re-design them, pinching some together or trimming, etc, to fit roasting pans, but hey. Not impossible! | |

It is very simple and inexpensive to make. It can be made in about five minutes
You can double the recipe too
Five Cup Salad 1 cup sour cream 1 cup coconut 1 cup small marshmallows 1 cup canned mandarin oranges, drained 1 cup diced pineapple, drained
Put everything into a bowl and gently stir together. I always sprinkle coconut and marshmallows on top for decoration. Make sure to make it just before you need it as the marshmallows will melt. | |

Posted: 10/26/2007 4:52:02 AM | Something extraordinarily inexpensive and always seems to get gobble-gobbled up at my house (before the meal...I actually make doubles and hide one tray!!) LOL...deviled eggs! You can make several dozen for under $10...and can flourish them with different things for variety...bacon bits, paprika, sunflower seeds, pimento, a small wedge of cheese, etc...to make the tray more presentable!
Everyone pretty much knows how to make these...yet so often they are bland as all heck! LOL I use Miracle Whip (not mayo!), mustard powder, salt, pepper, and garlic. | |

Posted: 10/26/2007 5:08:55 AM | Hi Miss Berry, I have a sure fire casserole that will be eaten up so quickly you will be the star of the office potluck !!! My family always has this dish on Thanksgiving as well as all throughout the year. It's called Enchilada Casserole. But, it doesn't taste or look like any kind of enchilada. You will need........ 4 cans of Campbells cream of chicken soup 2 pounds of ground beef 4-5 cups of mild or sharp chedder cheese grated 2 fresh tomatos .... cut into pieces 1 dozen of corn tortillias 1 small can of diced jalepeno peppers { mild }
Fry hambuger until cooked add tomatos, peppers and soup heat until it starts to boil.....remove from heat You will need a casserole dish, or what I always use , a cake pan. The long ones LOL I don't know what size the pan is.: )) But I think you'll figure out what size ya need when you get all of the ingredients ready........ Put a layer of the corn tortillias on the bottom of the pan. Usually 6 tortillias per layer. It's o.k. if they overlap. I always try to put some of the tortillias on the sides of the pan. cover tortillias with the mixture generously top with cheese Add another layer of tortillias and top with mixture Generously top with cheese heat oven to 325 cover with tin foil and cook for about 30 miutes or until cheese is melted.
If you need more just add more ingredients. If you have a pan that is deeper than a cake pan, you will be able to make more than just 2 layers. I have been making this since I was 14 years old. And it has always been a huge hit. So, be prepared to be telling everyone how to make this dish. Guaranteed to satisfy. I hope ya like it. DeeAnne  | |

5 to 6 cooking apples - Rome Apples a good choice 3/4 cup sugar 3 tablespoons corn starch 2 tablespoons lemon juice or 1 tablespoon vinegar 3 tablespoons cinnamon 1/4 teaspoon nutmeg 3 tablespoons butter dash of salt 2 pie crust (top and bottom) -just buy em, near the ready made cookie dough in the refridge section of the grocery. I make my pie crusts but they can come out badly if you dont have practice.
Peel and slice apples. Add lemon juice and toss. Sprinkle some of sugar and cinnamon in bottom of crust. Add 1 tablespoon of corn starch. Put half of apple slices in crust. Add half of sugar, cinnamon, nutmeg and 1 tablespoon corn starch. Repeat layering of apples, sugar, cinnamon, nutmeg and cornstarch. Apples will pile high in pie crust. Dot with butter. Top apples with second crust. Seal crust. Cut vents in top. Bake 50 to 60 minutes or until done. Yield: 8 servings.
If you want the crust shiny, paint the top in the last 20 minutes with a mixture of one room temp beaten egg and a teaspoon of milk. | |

Posted: 10/26/2007 6:48:31 AM | Bowtie Chicken Ranch Salad Ingredients: 1 box of bowtie pasta 6 cups cubed, cooked chicken breast 1 cup chopped celery 1 cup chopped onion 1 cup diced green pepper 4-5 roma tomatoes, chopped 2 cup salad ranch dressing 1/2 tsp pepper1/2 tsp garlic salt to taste
Make pasta as directed, rinse and drain. Mix all ingredients together and chill for a least 2 hours best overnight.
Can Add more ranch dressing if needed before serving. Also omit or replace an item or two, if desired. Like add green olives instead of onions and tomatoes for color and taste. serves : 10 or more ...just double for 20 | |

Posted: 10/26/2007 8:34:01 AM | This is reciept I always take to church potlucks, 1 lb of ground beef cooked and drained 1 pk of taco seasoning 1 can of rotel tomatoe 2cans of black bean 1can of pinto beans 1can of corn 1 pk of ranch dressing mix aftert the ground beef id cooed and drained mix everything together and simmer for 1 hr. serve withsour cream and tortillia chips, it's low fat (4 pts) without the chips and sour cream and my grand kids tear it up. U have recieved some wonderful reciepts and I'm sure you withh have wonderful success. | |

1 jar of pickled asparagus, (full spears) drained beef, or chicken or whatever sandwich meat works like ham. cream cheese or yogurt cheese or herbed cheses spreadable types.
Take a slice of meat, put a layer of cream cheese on it. thin, roll it around the stalk of asparagus, pin it with toothpicks in three sometimes four spots. I usually do 3. Cut. Arrange on a plate. | |
