High protein bars or muffins?

Anyone have a good recipe for a high protein bar or muffin that I could eat for breaky? I had a bar from starbucks today that was 15g of protein! And it was filling and delish! Somehow I doubt low fat but ...you can't have it all....

Muffins are a great quick breakfast. I make lots of high protien/high fiber variations, but here's my fav:
In a blender Grind up 4 cups of whole/old fashioned oats
mix this in a large bowl with:
2 cups whole wheat flour
heaping tablesspoon aluminum free baking powder
1.5 cups splenda or sugar depending on your preference
1/2 cup ground flax meal (fiber, baby!)
1 cup (or more)Walnuts or pecans or sunfrower seed

Now put in blender
6 eggs (remove a couple of yolks if you wish)
the zest of a large lemon
water (enough to make batter mixable and smooth

Mix these ingredients then add 2 cups frozen raspberries (or blueberries)

bake until golden at 425. Makes 24 muffins

I am guessing at the measurements of the ingredients as I made this recipe up and never measure my ingredients. One muffin has enough high quality fat, protein, whole grain carbs and fiber to last me all morning!!!!

you can vary this recipe by adding using dried cranberries and orange rind. Let me know what you think...

Forgot to mention--this recipe is high in omega 3s. Don't worry about the fat as this fat is very good for the body and will keep you from being hungry--so you'll end up eating less in the end.

would not bother with the slenda as it is not bioidentical to our bodies .. it is toxic ... and affects insulin resistance ....you are better off with sugar , apple juice or honey or raw sugars... anything organic ... stevia is the only sweetner bioidentical to us...
the recipe sounds fantastic ... I am gonnah try it too.... thanks

Thanks for info on Splenda....I use it thinking that it doesn't have as many calories...even though I know it can't be good for you. I don't think baking with stevia would work well (at least for me). So far, the only thing I like stevia in is grapefruit juice. At any rate, try the muffins--I hope they turn out nicely--keep tweaking until they are just right for you.
