Garlic Pickle recipies anyone?

Hi all! On the prowl for a great pickle recipe. Tried a blue ribbon one last season..not too good afterall. Love strong dill but open to whatever...Would like to get a few so I can try different ones next season.

Garlic Pickle recipies anyone?

PICKLED GARLIC
1 lb garlic heads, separated into cloves, but not peeled
1/4 cup thinly sliced fresh ginger
1/2 cup pickling salt
3 dried chili peppers
1 cup vinegar
1 cup dry white wine
1 Tablespoons mustard seeds

In a large saucepan, combine garlic with enough water to cover; bring
to a boil over medium heat. Let boil 2 minutes; drain thoroughly.
When cool enough to handle, drain and peel each clove without crushing.
Transfer to a non-reactive bowl such as glass or plastic; add ginger and
salt with enough water to cover. Refrigerate mixture for 2 days.
Drain again. Pack into jars, leaving 1/2 inch head space. Add 1 chili to
top of each jar.

Combine vinegar, wine and mustard seed in medium saucepan and bring
to a rapid boil over high heat. Ladle enough hot brine into each jar to just
cover garlic mixture. Remove air bubbles with a spatula. Wipe jar rims
thoroughly. Seal and process in a boiling water bath for 10 minutes.
Yields 3 to 4 half pints, depending on size of garlic cloves.

bykota, one time I picked a small jar of garlic just for fun using my usual
recipe for dill pickles. I placed fresh dill at the bottom and top of the jar
and added a bay leaf. It was simple and yummy. Give me a shout on my
email and I'll explain my dill pickle recipe.

my mother use to make garlic pickles and pepper pickles. (dills) And combinations. I'll see if i can find the recipes it may take me a while. The pepper ones were HOT.. laugh.. glass of water in one hand, dill in the other. whoohoo..

Teriyaki Flavored Pickled Garlic...try this recipe..My Family and Friends love it..

Teriyaki Flavored Picked Garlic

6 head of garlic (peeled)
1/2 cup of Soy Sauce
1/2 cup of Sweet Sherry (cream)
1/2 cup of Cider Vinegar
1/4 cup liquid honey

In a sauce pan add all of the above and bring to a boil over medium heat..stir occasionally....simmer vigorously for 1 minute then pour into sterilized jars...cool uncovered ...after cooled top with your canning lids and let stand at room temperature for 2 days ... refrigerate for 20 days prior to using....must be kept in the fridge...enjoy

Garlic Pickle recipies anyone?

i pickled all my home-grown garlic this year, about 6 liters, unfortunately, i always improvise, add or remove some ingredients.this year was my best ever,if only i'd written my recipe down......but, heres the basics...
i throw the cloves in boiling water to loosen the skins,not very long, then remove to cold water and peel the skins, i pack mason jars with the cloves, add a jalapeno or 6, then
i used a basic dill pickle recipe[in the right proportions to the number of jars,,except, since i wanted a sweeter pickle i increased the sugar] about half what a sweet pickle recipe would call for. i heated liquid until boiling, then poured over the garlic, filling each jar. put mason lids on , and they all sealed while cooling on the table.since i refrigerated all of it, i didnt use a hot water bath to preserve it, i've done this before and it always results in soft garlic.this year, by keeping it cool in the fridge with the least amount of cooking possible, ive ended up with the crispest, most delicious, addictive pickled garlic i or anyone i've allowed to sample it, has ever had. now if i'd only been smart enuf to write down the exact recipe i used,,so i could duplicate it exactly from now on.lol.
