| Vegan Side Dish for Thanksgiving? Posted: 11/8/2007 9:42:59 AM | OK - so my nephew is vegan, and we'll be going to my sister's for Thanksgiving. She puts all the "stuff" aside for him (makes stuffing separate, uses non-dairy spread for vegetables, makes his potatoes without milk, etc.), but all that is just compensating for the fact that he's vegan - sort of like setting some pasta aside because your young one doesn't like sauce.
I'd like to make something special just for him - I can handle vegetarian, but I am constantly finding out about things vegans can't eat - and I don't want to screw up. For instance, I was thinking of a Waldorf salad, but I'm told mayonnaise is considered dairy and therefore not allowed.
Anyone have any ideas? I'd like it to be something that the whole family might enjoy eating. | |

Posted: 11/8/2007 10:00:47 AM | | get some sun-dried tomatoes, some pine nuts, olive oil, garlic and fresh basil. throw them in a food processor along with chopped mushroom stems. go ahead and push the button. they'll spin around for a bit (d'uh) and once they get all mixed up, empty them into a bowl with some cooked brown rice. mix that together until it looks all colorful and festive. now, go get those mushrooms that you stole the stems off of and stuff your stuff into the caps. set them all in an oiled pan and cover with foil. bake at about 350 until it smells really wonderful. then take them out and see what your nephew thinks of them. unless he's really weird, he'll love them. | |

Here is one that everyone seems to love and I have a lot of them, though, I am not vegan. I can give you several more if you want.
2 unbaked pie crust, make or just buy the refrigerated folded ones by Pilsbury 1 large sweet potato, roasted 1.5 cups green beans, cooked and seasoned (do not use french cut) 1t nutmeg fresh grated, or ground mace 1T fresh ginger, minced, or finely grated 2T extra virgin olive oil (Romeo brand is best for this if you can get it) a little salt and white pepper to taste
Mix all the ingredients together in a bowl and divide by half and fill each crust with half and fold over, brushing the inside of the crust edge with water, then pressing together with fingers in a fluted fashion, or fork. Stand the crusts on folded edge, so that the pressed together edge is standing in the air straight up. Poke a couple of small slits on each side and bake. Sooooooooo Good, you really can't believe it.
