Green Tomato Relish

5 pounds of green tomatoes
2 pounds of apples (I like macs)
2 large onions
2 green peppers
2 red (or purple) peppers
1 whole garlic
Cut all this up (I use a food processor)
Put it all in a large pot on the stove.

Add 1 cup apple cider vinegar
and 2 cups sugar
2 tsp oil
1 tsp cummin
1 tsp celery seed
1 tsp mustard seed
2 bay leaves

heat slowly over medium heat. About 20 minutes.

I put this up in jars.

It goes great on sandwiches, in sauces (spagetti sauce etc.)
Great with a sharp cheese and crackers and a crisp white wine (like a zinfendel)

I have a much more multi generational 'Ozarks' tried and true recipe if you like. The only thing that scares me is your usage of such a delicacy.

You made no mention of Catfish. So, I know that you have not had the real thing. Thats too bad.
