| Simple & Delicious TOMATO Soup Cake Posted: 11/12/2007 5:14:17 PM | Alright everyone, this is my first post so I am 'hoping' that someone...somewhere can help me? My mother has been past now for over 20 years and truly wish I had of paid attention to some of those old-fashioned and truly delicious recipes which nowadays, seem to be obscure. I grew up with fond memories of an extremely simple, yet delicious recipe my mother frequently used: Tomato Soup Cake. She made it with raisins; 1 can of Heinz Tomato soup...and the REST of the ingredients are what I really need. Can anyone help me? I know it sounds a little on the gross side, perhaps...but it was simple, fast and delicious. Hopefully, it is not lost in time. Thanks for any help or suggestions you can make.  | |

| Simple & Delicious TOMATO Soup Cake Posted: 11/12/2007 5:23:15 PM | No way will I ever eat a cake made with tomato soup but I was curious and just had to look it up. Here is a recipe I found.....hope it's what you are looking for.
INGREDIENTS 1 (10.75 ounce) can condensed tomato soup 1 teaspoon baking soda 1 cup white sugar 1 egg 1/3 cup butter 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1 1/2 cups self-rising flour 1 cup raisins
DIRECTIONS Combine the tomato soup and the soda in a bowl, and let it stand. Cream sugar, egg, butter, salt, cinnamon, and cloves. Mix in tomato soup and soda mixture, and then flour. Stir in the raisins, and pour the batter in a greased baking dish. Bake at 325 degrees F (165 degrees C) for 1 hour, or until done. Cool the cake, and top with cream cheese icing. | |

| Simple & Delicious TOMATO Soup Cake Posted: 11/12/2007 6:16:33 PM | Recipe handed down from my Grandmother and my mother ... tastes like spice cake...or a light molasses cake but has no molasses...for those who have never tried it .. it is tasty. Traditional at Holiday time.
Tomato Soup Cake(Loaf)
1 tin condensed tomato soup, undiluted 1 tsp. baking soda 1/2 cup butter flavoured Crisco 1 cup white sugar 2 cups flour 2 tsps. baking powder 1 tsp each..ground gloves cinnamon nutmeg 1 cup golden raisins 1 cup broken pecans ~~~~~~~~~~~~~~~~~~~~~~~` Dissolve soda in soup, let stand. Cream shortening and sugar until creamy. Mix dry ingredients together. Add soup mixture to creamed shortening and sugar then fold in dry ingredients. Add nuts and raisins and pour into greased and floured loaf pan. Bake at 325-350 for about 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Slower over for longer time is better for this loaf. | |

My kids have never been big on tomato soup so naturally, we always have cans of it lying around. Thought this would be a good way to use those up and spread a little tradition down the line? It may not be the same as when I was a kid growing up, but certainly worth a try! lol...who knows, they may even 'like' it! Thanks again!  | |

| Simple & Delicious TOMATO Soup Cake Posted: 11/12/2007 10:37:06 PM | Naughti, as a kid, I said the same thing, then I tasted it. It taste just like a spice cake and is one of my families favorites. I've never made one but my mom and sister make them all of the time. They are very tasty. I think I may have even posted a picture of one on "you know where" my sister made in September when my family had my dad's birthday party. They make it with walnuts or pecans, unless they're making it for my brother, who can't handle nuts.

| Simple & Delicious TOMATO Soup Cake Posted: 11/13/2007 12:09:48 AM | I'm not sure about the Heinz Tomato soup recipe but I can give you the Cambells recipe. This is right out of the old "A Cambell Cookbook, Cooking with Soup" cookbook.
2 cups sifted cake flour or 13/4 cups sifted all pourpose flour 1 cup sugar 3 tsp baking powder 1/2 tsp cinnamon 1/2 tsp ground cloves 1/2 tsp nutmeg 1/2 cup shortning 1 can (10 1/2 oz) condensed Tomato soup 2 eggs
Preheat oven to 350 degrees
Grease and flour 2 round 8 nch cake pans, Stir dry ingredients into large bowl Add shortening and half can of soup Beat on medium speed with electric mixer for 2 minutes (150 srokes per minute by hand) Add remaining soup and eggs Beat 2 minutes more, scraping bowl frenquently Pour into pans Bake 30-35 minutes. Let stand in pans 10 minutes; remove and cool on rack
Frost with Cream Chease Frosting or your favorite white frosting
Cream Cheese Frosting
Blend 3 oz of cream cheese with 1 TBS milk Gradually add 2 1/2 cups sifted powdered sugar; Blend well Mix 1/2 tsp vanilla extract If desired, sprinkle top with maple sugar Makes enough frosting for tops of 2 8 inch layers. | |
