| Celery root (celeriac) salad with Dandelion leaves Posted: 11/24/2007 10:09:38 AM | I decided to share this recipe which has been in my family for at least 100 years (I am from Europe - Luxembourg) and is my favorite.
Choose a firm, size of a baked potato, celeriac also called celery root. I understand it is hard to find in some parts of the country. It is a winter vegetable.
Dressing: (this is for half of the celeriac - it does absorb a lot of liquid) 3 tbsp of white wine vinaigre 6 tbsp of extra virgin olive oil 2-3 tbsp half & half 1 tbsp or more of white wine (blush is OK also) salt/pepper FRESH chopped parsley Dandelion leaves (optional)
Peel and grate the RAW celeriac (like you would grate carrots - I use a salad shooter) Process quickly since it gets discolored. Mix and enjoy. Also good the next day, after that not so.
Now, the secret ingredient was adding Dandelion leaves which we gathered when we were kids in the meadows. If you are an organic gardener and have these "pests" in your grass, now you know what to do with them. | |

There was another recipe for celeriac salad on (I think) Jamie Oliver's show on BBC-America recently... I'll have to try it with the wine vinegar and dandelion leaves.
1 celeriac root 5-6 stalks celery 4-5 carrots 1 medium onion Olive oil Lemon juice White Vineger
Peel the celeriac and using a potato peeler, shave it into a bowl with lemon juice. Break the clery and remove the tough stringy threads, then shave the stalks into the bowl with celeriac. Shave the carrots into the bowl. Fine slice the onion and into the bowl they go also. Toss well
In a separate jar, add 1/4 cup lemon juice, 1/4 cup olive oil, vinegar to taste and mix. Pour over shaved veggies, salt & pepper to taste. | |

| Celery root (celeriac) salad with Dandelion leaves Posted: 11/24/2007 5:52:27 PM | It sounds delicious and Ill try it if I can find celeriac for sale - I am not allergic to celeriac. The precise reason celeriac is not not mass cropped and mass marketed and hard to find in this country is on account of celery being one of the two dozen most high allergen foods combined with the fact that celeriac is * even higher in allergens*. Basically no point in growing it for mass market. I only see it occasionally in specialty or high end ( price) markets.

| Celery root (celeriac) salad Posted: 10/8/2009 8:51:47 PM | My grandmother (who is now 104) is from Germany and taught me about this ugly, but delicious vegetable. My favorite way to prepare it is SO simple. Just wash it, put it in a big covered pot of water, enough to cover it. Bring to a boil and then simmer until fork tender. When it is cool enough, peel it, dice it up and toss with a sprinkle of salt and any brand of Italian salad dressing (I like Kraft Zesty Italian). If you want to be fancy, add some chopped onion and parsley. Let it sit a bit and serve at room temp or cold. Delicious the next day. YUM!  | |
