Need a good vegetable dish

I got the short straw for the annual family Christmas dinner and have to bring a vegetable dish. I refuse to do the same old green bean casserole! Anyone have any ideas for a quick simple dish that will please almost everyone and make it seem like I spent hours in the kitchen? Something portable, please! I'm not much of a cook and really need your help!

Lemon-Buttered Baby Vegetables

1 (16-ounce) package frozen baby vegetable blend
3 tablespoons butter or margarine
1 tablespoon prepared horseradish
1 teaspoon lemon juice
Salt
Pepper

1. Cook vegetables in 2-quart saucepan according to package directions. Drain. Add butter, horseradish and lemon juice.
2. Cook over low heat until heated through (1 to 2 minutes). Season to taste with salt and pepper.

Makes 6 (1/2-cup) servings.

or

Cheesy Broccoli Bake

1 (10-ounce) package frozen chopped broccoli, thawed and drained
1 (10 3/4-ounce) can condensed cream of mushroom soup
1 (8-ounce) jar processed cheese spread
3/4 cup uncooked instant rice
3 tablespoons seasoned bread crumbs
2 teaspoons melted butter

1. In a bowl combine the broccoli, soup, cheese and rice.
2. Transfer to a greased 1 1/2-quart baking dish.
3. Toss the bread crumbs with the butter and sprinkle over the top.
4. Bake covered at 350*F (175*C) for 30 minutes, uncover, and bake another 15 minutes.

Serves 6.

Hello,you might want to try preparing a shredded potatoecrust ,cauliflower,oninon,with cheese pie .....some eggs ,like a quiche holds the whole thing together,and you can use your imagination for the right seasoning combination,if your not sure how to proceed with this pie ask a friend about how to do a potato crust , and get any quiche resp, and substitute.......you'll stunn them all .....see ya.

Boil baby red potatoes with a bulb of garlic maybe 2o-25 mins. when done turn off the burner and add a bag of fresh or frozen green beans ( I like the trader joes frozen) and add fresh mushrooms (approx 8 oz) sliced let it heat through a few mins 2-3 . Crisp tender. Take the garlic bulb and sqweeze out the soft clove and mash and add to the following;
Drain and toss with 1/4 cup of grated ramono cheese,
a couple tblspoons of butter
1 teas Chicken boullion (I like Better than Boullion brand)
fresh cracked pepper to taste
Toss all ingredients in bowl and add a spig of parley.
This is a hit everywhere I take this...Enjoy!

Baby carrots....simple but sweet

1 bag of baby carrots.....
3-4 teaspoons of brown sugar

mix the above when cooked....then drizzle honey on top of carrots and spinkle with seasame seeds....

How about a good corn casserole? Easy peasy to make and would transport well.

If it sounds like something you'd like to try just google Paula Deans corn casserole recipe. It is quite yummy.

My favorites:

Stuffed Artichoke Caserole

2 cans french style green beans, drained and rinsed
2 cans artichokes, drained, reserve liquid
1 cup Italian style bread crumbs
1/2 cup olive oil (plus a little more if needed)
as many fresh garlic cloves as you like (I use 8 to 10, but some people like less) chopped

Use a large caserole dish to mix beans, artichokes and Italian styhle bread crumbs. In a small skillet, warm about 1/4 cup of olive oil and saute chopped garlic. Do not burn. Pour garlic and oil over bean mixture along with the rest of the olive oil. If mixture seems a bit dry, add either more oil or some of the reserved liquid. Mixture should be slightly moist. Bake at 350 degrees for 30 minutes. This tastes just like the wonderful stuffed artichokes my mother use to make.


Italian Style Spinach

10 oz to 1 lb fresh spinach
3 to 6 cloves thinly sliced garlic
3 tablespoons olive oil
1/2 teaspoon salt or to taste

Lightly saute sliced garlic in olive oil - about 30 seconds over medium heat. Start adding spinach, sprinkle with a pich of salt, use tongs to turn spinach after a few seconds when it begins to wilt. Keep adding spinach and salt until used up, turning spinach almost continuously.


Meal in one skillet

1 or two bunches kale, washed, stem removed and torn into bite sized pieces
3 to 6 cloves thinly sliced garlic
1 can canolini beans (white kidney beans)
1 lb cooked Italian sausage
3 Tablespoons olive oil


Cook sausage by putting in a frying pan with about 1 inch of water - cover and cook about 15 minutes on medium heat. Take the cover off -- sausage should be puffed up with fat, prick casing to release fat. Discard fat and water. Add a little more water to the pan and continue to cook another 10 minutes, covered. Remove cover and let suasage brown while water evaporates. Remove sausage to cool.

Discard any fat in pan. Pour in olive oil and saute garlic about 30 seconds. Add kale and a few drops of water. Kale takes longer than most greens to cook so be patient. Cover and cook at least 10 minutes. If the kale is still a bit tough, cover and cook another 5 to 10 minutes.

Slice sausage into discs and return to pan with kale. If it doesn't appear to be cooked all the way through, cover and cook 10 minutes. Add canolini beans and warm through.

i dont eat body parts/am a 'vegetarian'...and?
well-Some of these just dont sound appetizing-To Even moi
(oh-im shuure they're quite tasty...in their 'own right')

WHY...dont you just make a ~Simple~ dish , that ALL are Sure to enjoy?
Brown Rice and Broccoli - be sure to use REAL, Fresh ingredients (except for The broccoli)
*Broccoli (frozen/Chopped - some folks dont like the big hurkin spears/tops)
*Brown rice (Or, some 'exotic wild brown rice' - they have Many 'box' ones)
*If yer feelin 'gitchy'...you Could add some crushed Nuts
-Almond slivers
-Crush Macadamias (very 'oily/buttery-sooo?)
-Walnuts (*again, be Sure to Crush-but...not to smithereens)
Just cook the Broccoli and the Rice, Mix (maybe add nuts)
*Also-you Could add some very Finely chopped Peppers
-Red,Green,Yellow,Orange - for flavor And Color (i Looove 'Anaheim peppers-some doNT)
You could just put all in a casserole dish, bring along some shredded cheese-to add At function (hey, EveryBody likes cheese-no? If 'no'...OPTIONal

Be Sure to Not cook/boil Broccoli Too Long ('setting' will only make soggy)
And, Be sure to add all the ~FRESH~ stuff (peppers/nuts) AFTER cooking
YUP

*Fresh Lemon is a nice touch*
-just cut/squeeze some (not Too much...ONE lemon Enough) Onto Dish...
Right before leaving house

i NEVER use MEAT/body parts (beef/poultry/pork-None) In My cooking
AND? i ALWAYS get ~compliments~ on My Food/Cooking

just pick your favourite vegetable and steam it and make some gravy and pour it over and say to anyone that asks, "less is more", for instance brocolli and cauliflower go well together and that is two vegetables in one dish, simple, cheap and so delicious...

8 medium potatoes
½ cup melted butter
2 cups sour cream
1 teaspoons turmeric
2 teaspoons salt
¼ teaspoon hing
½ teaspoon ground rosemary
1 teaspoon black pepper
t teaspoon paprika
In large saucepan parboil potatoes. Drain and refrigerate. When potatoes are cooled, peel and cut in ½-inch slices.

Preheat oven to 400°.

In bowl combine sour cream, butter, and spices. Add potatoes to sour-cream mixture. Stir gently and place in casserole dish. Cover and bake 25 minutes. Serve hot.
Serves 4.
A really lovely dish to relish.

Just bring a bag of apples since suckafish does not eat any "meat". Something tells me that fish is not considered meat for this lost soul.

Who cares what is or is not a veggie. You know what this particular family eats, bring that, even if it's green been casserole.

Hard to go wrong with Au Gratin potatoes, either homemade but I still crave those big gallon sized cardboard cartons found in the food service isle. Super easy, if you can boil water you can make these. If you want to crank it up a notch mix in a carton of sour cream or premade onion dip. Ham cubes.

You can dress it up the top in any number of ways. Some sliced red bell peppers for color. Last twenty minutes you could add bread crumbs and butter. Bacon crumbles and/or cheddar cheese.

I discovered this dish recently when I was out of olive oil.

2 cans (large) Italian cut green beans
1/4 cup Italian dressing
1/2 cup sun dried tomatoes

Put Italian dressing in heated skillet, add green beans (drained) and tomatoes.
Put lid on and simmer for 10-15 minutes.
The flavor of the Italian dressing gives a real zest to the beans...and the tomatoes add
color and flavor.

Cauliflower/Broccoli Gratin

1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs


Preheat the oven to 375 degrees F.
Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.

Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.

Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

Baked Sweet Potatoes with Apricots and Bourbon


Ingredients
1/3 cup bourbon
1/2 cup chopped dried apricots
5 pounds red garnet or jewel sweet potatoes (sometimes sold as yams)
1/2 cup firmly packed brown sugar
1/3 cup butter
1 teaspoon vanilla


Preparation
1. In a small bowl, pour bourbon over dried apricots.
2. Scrub sweet potatoes and pierce each in several places with a fork. Place potatoes on oven rack or in a single layer on a baking sheet. Bake in a 350° oven until potatoes are soft when pierced, about 1 1/2 hours. Let stand until cool enough to handle, about 20 minutes.

3. Peel the sweet potatoes and place in a large bowl. Add brown sugar, butter, and vanilla to the bowl and mash with a potato masher or a fork until mixture is only slightly chunky. Stir in apricots and bourbon. Spoon into a shallow 2 1/2-quart baking dish and spread level.

4. Bake, uncovered, until hot in the center, about 30 minutes. Serve warm.

If you like, you can prepare the dish through step 3 up to 2 days ahead; cover airtight and chill. Unwrap and bake as directed in step 4.

tequila christmas veggies serves 15 ppl

3 red peppers or italian roasted red peppers works great too.
3 green peppers cut into strips
1 bunch of green onions
3 zuccinis cut into slices
3 yellow squash cut into slices
3 plum tomatos diced
1 small package fresh mushrooms sliced
2 cloves chopped garlic
2 oz of tequila
sea salt and pepper


in a saute pan add olive oil and cook over a med heat cook zuccini and squash first then add sea salt and pepper,, garlic onions, peppers and cook until tender add tomatos add tequila mix together and remove and serve merry christmas

Summer Squash Casserole (oven 300-350)
Slice yellow squash and Vidalia (any sweet) onions. Saute in butter til slightly tender.
Sprinkle with gran garlic, cracked pepper, little salt (or not...butter is salted).

Have toasted bread (3-4 slices wheat bread) crumbs at the ready.....( toast in toaster or oven, dice and toss in bowl with salt & pepper/garlic and... about cup of fresh grated SHARP cheddar AND reggiano Parm -mixed)

Mix in 3/4 of Cheese-crumbs with sauteed squash in a baking dish...sprinkle rest of crumbs on top and bake 20-30 min. (uncovered) til top is crispy & browned.

Always a hit!

As a general approach to vegetables you con do the following: Place about 1 Tablespoon oil in a hot pan and add 4-8 servings of the vegetable. Fry with occasional movement enough to get a little browning of the vegetable. Not browned like meat, but just little brown touches. Then add about a half ladle of chicken stock (you make your own stock, right?) or a half chicken bullion cube in 1/2 cup water and cover. That steams the vegetables in place. Afterwards, 1-2 tablespoons of butter and spices as you please. Salt, pepper, tarragon, basil, parsley in any amount or combination you like. This entire process is what the chefs mean when they say braised vegetables.

This will work with carrots, asparagus, brussels sprouts, green beans, and other vegetables. Carrots need to be julienned for this. You are looking for long skinny veggies here. brussels sprouts need to be quartered for this to be good. Optionally add some sauteed onions, or cook onions with the veggies initially. A little garlic added just before the stock is also nice.

If you add chicken bullion as the stock source remember it is salty, so wait for taste testing before adding salt.

The magazine Fine Cooking is great because it teaches techniques with the presentation of recipes.

Mom makes one similar to this one..

Broccoli Cauliflower Salad
1 head cauliflower separated into small flowerets
1 bunch broccoli separated into flowerets
1/2 cup chopped red onion
1 cup raisins
1/2 to 1 cup sunflower seeds or chopped pecans
Dressing
1 cup mayonnaise
1/2 cup vegetable oil
1/3 cup vinegar
1/2 cup sugar

Mix first five ingredients together; pour dressing over and mix to blend. Prepare at least 2 hours in advance. Broccoli salad serves 10 to 12.
