I once had a recipe for duck in a slow cooker, but I can't find it anywhere, and it's been years since I tried it. I believe it involved cooking the duck in orange juice, but there were also spices involved, and I just can't remember what they were.
Does anyone have a recipe, or do you have any ideas for cooking duck in a slow cooker? Any advice would be greatly appreciated. | |

Crockpot Duck
~ 2 ducks, cut into serving pieces ~ 1 medium onion, chopped ~ 2 cloves garlic, chopped ~ 1 cup white wine ~ 1 green pepper ~ 1 ripe tomato, seeded and chopped ~ salt ~ pepper
Salt and pepper the duck to taste.
Place the duck in the crockpot.
Add remaining ingredients.
Cook on low for 6 - 8 hours or until duck is tender. | |

Cornish hens would be lovely. I'd brown them first under a broiler to get all those luscious carmelized flavors, then deglaze the pan with sherry and plop them and the pan drippings into the crock with onions, carrots, celery (big chunks), new potatoes, and a bundle of fresh herbs: sage, rosemary, thyme, and bay. For spices, I'd use black pepper, orange zest, nutmeg, a tiny bit of allspice, and a pinch or two of kelp powder.
I know that kelp powder probably sounds wierd. However, it will give the broth a subtle richness--the Japanese call it "imami" and some Asian chefs use MSG to mimic it. However, the natural source is kelp, which is rich in trace minerals.
For the poaching liquid, I'd probably use either homemade turkey, chicken, or veggie stock, or get store-bought if I didn't have one of those. (But if you didn't boil the bones of your Thanksgiving turkey for stock, you missed out on a golden opportunity. Be sure to save these bones and scraps and make stock out of them so you'll have some to work with come Easter!) | |

Kelp and other algae products (agar agar, spirulina, other blue-green algaes) are high in it. MSG is monosodium glutamate, and the thinking in Asian circles is that it's to richness what sugar is to sweetness. I recently read that we have taste receptors for glutamate on our tongues, which reward us for eating high-protein foods.
The concern with MSG is that it isn't balanced as it would be from a natural source--kind-of like sugar come to think of it. | |

| seeking duck in slow cooker recipe Posted: 12/21/2007 2:09:05 PM | | Duck is so so so greasy good but greasy...make sure you use a rack so grease goes under the bird and stuff with bread that can soak up grease and feed that to the birds don't eat it....also stuff with oranges cut them and stuff and toss out. Put a nice rub on it...use spices salt pepper and paprika etc...then I would crisp it up in as hot oven for 30 minutes or so. | |

But I think I'll pick up a dead one in the grocery store, rather than follow Fur's suggestion...........
