| What are good fish appetizers? Posted: 12/31/2007 4:01:54 PM | I have to cut down on red meat, I like fish but don't know much about them as appetizers and snacks.
Don't say sushi because it's a pain in the ass to make. I want something I can easily cook, cut up and eat either hot or cold.
Also shrimp is high in cholesterol, so that's kind of out as well. | |

INGREDIENTS 2 pounds cod fillets 3 tablespoons margarine 6 tablespoons all-purpose flour 2 cups milk salt and ground black pepper to taste 1 1/2 cups shredded Cheddar cheese
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Grease an 8x 12 inch baking dish. Bring a large pot of lightly salted water to a boil. Add cod fillets and cook for 4 to 6 minutes; drain. Melt margarine in a medium saucepan. Remove from heat and mix in the flour and milk. Return to stove over medium heat, and stir until thickened. Season with salt and pepper. Flake fish into baking dish, alternating layers with sauce. Sprinkle top with shredded cheese. Bake in preheated oven for 20 to 25 minutes, or until cheese is browned.

| What are good fish appetizers? Posted: 12/31/2007 4:28:25 PM | Here's a Hungarian one that the mother of a friend of mine used to make:
Take a can of skinless and boneless sardines (my preference is the "Millionaire" brand in the green box) and drain the oil off.
Get some mayonnaise, and add a few tablespoons to the sardines in a mixing bowl. Mash them all together into a fine paste, adding as much mayonnaise as suits your taste. Throw in some paprika, again according to your tastes. You can even throw in some VERY finely chopped onions.
Spread the result on some melba toast, crackers, or (best) fresh French bread that's been toasted.
Here's another one:
Get some Romain lettuce, clean it , and place some leaves on a plate. Add fresh smoked salmon, thinly sliced, in a few layers Add some Spanish onion, finely diced (or rings) Add some capers Drizzle with fresh olive oil, and sprinkle with some citrus spices
That's an awesome start to a summer meal.

Amaze your friends!
Take any firm, whitefleshed fish (scallops are ideal), and chop or slice thin. Cover in fresh squeezed lime juice overnight in the fridge. Strain, discard the marinade, toss with chunky salsa, and serve with tortillas or chips. Tell 'em it's Mexican sushi.
Of course, the citrus "cooks" the fish. You'll see that it is firmed up and no longer translucent when you strain it. Yum!

1 pkg imitation crab (which is just fish) 1/2 cup cream cheese (get neufechetal or whatever it is called if you're worried about fat) 1/4 cup ranch dressing green peppers, mushrooms, tomato...whatever veggie you like. flour tortilla wraps.
Blend the cc and ranch, spread on tortillas, add crab and veggies, cut into inch long sections and skewer with a toothpick. | |

Fillet the fish, and cut it into chunks - a little less than an inch works well . Add a cup and a quarter of white wine vinegar to a quart Mason jar , a half-cup of sugar , a good dose of salt and a dozen shakes of Frank's hot sauce . Mix to dissolve sugar & salt . Slice an onion as thin as you can, and put it into jar with the fish along with a tablespoon of pickling spice . Be sure the marinade covers the fish . Put it in the refrigerator for a week , and be sure to shake it well at least once daily . Then it's done . | |

| What are good fish appetizers? Posted: 12/31/2007 6:17:55 PM | Fresh sole, fried in butter (I've tried this with olive oil and it just ain't the same).
A package of sole can go a long ways, it has a very tender and fragile flesh.
Melt 1 or 2 tablespoons of butter in a saute pan. Pat a fillet dry with paper towel. Put 1/4 c or so of flour in anothe paper towel, and gently toss one (or more) fillet until evenly coated.
When butter is sizzling (best kept at medium heat), lay a couple of fillet in bottom of pan and brown (approx 2 minutes per side). You don't want the butter to brown, so watch the temperature, and keep refreshing the supply of butter.
Remove cooked fillets to warming platter. Serve lightly salted with fresh lemon slices.
YUM!
If you like tartar sauce, I grate a dill pickle and add it to a 1/2 c. mayo. | |

| What are good fish appetizers? Posted: 12/31/2007 6:34:53 PM | Not all shrimp are high in cholesterol, only the cold water shrimp. Fresh water farmed shrimp are great.
Imitation crab is good flaked/chopped, then heat it up in some butter or margarine and toss in some bread crumbs to coat it a bit. Good in sandwiches or as a main dish w/ some veggies and potato's.

My other favorite is to use c ocktail sauce in place of the ranch dressing and make them the same, roll them up. Even easier if you get the imitation crab in the sticks. Cut for appetizer size or just leave large and it's an easy instant meal. Couldn't be any easier. | |

Posted: 1/1/2008 7:30:06 AM | I noticed some of the recipes have cheese in them not sure if you had to cut that out too, here is a Greek dish called Sartheles Lathoriganes( baked lemon and tomatoe sardines) Ingredients: 8 large fresh sardines(about 12 oz.),3 medium tomatoes sliced,2 tbsp. lemon grated rind,2 1/2 tbsp. lemon juice,2 gloves of garlic crushed,2 tblsp.chopped fresh parsley,1 tblsp, oregano, 1/3 cup olive oil you can use white wine instead or a mixture of the two. Preheat oven to 350,cut head off sardines and clean, cut underside of sardine to backbone , rinse in cold water,cut backbone through tail without piercing skin,pull backbone out towards head and remove, remove small bones and press sardines flat. place a single layer of tomatoes in a pan and place sardines skin side up on top of tomatoes,pour over combined oil,rind,juice,garlic and sprinkle with herbs. Bake ,uncovered for about 7 minutes or until cooked through | |

I always gut and de-boned the sardines (didn't know that the "Millionaire" brand is skinless/boneless...thanks Montreal_Guy). Put several thin slices of cheese over the sardines and broil. Add sea salt (not table salt) and fresh pepper and enjoy! The sardines have tons of EFA's so it is a healthy snack too since EFA's help to bring the cholesterol levels under control.
I just want to mention something about the cholesterol issue. Cholesterol is produced in the liver. It is essential to life. The problem occurs when the liver produces too much cholesterol or produces too much LDL in relationship to the HDL. The ratio of LDL to HDL is the key. If you have hypercholesterolemia (high cholesterol), it is a liver problem not a diet problem. The amount of cholesterol you ingest has a very small overall effect on your total cholesterol levels. In fact, I don't even consider the cholesterol I eat. It makes very little difference overall. What counts is the health of your liver. If you are concerned about cholesterol then eat lots of fiber, exercise, supplement with milk thistle and do a liver flush/cleanse to clean out the biliary ducts in your liver of those solid balls of cholesterol that build up over time. Another common cause of high cholesterol is hypothyroidism. Low thyroid or borderline low thyroid can cause cholesterol to skyrocket.
Eat the shrimp all you want...the benefits of such a healthy food EASILY outweigh any miniscule, very temporary increase in cholesterol that eating them may cause. | |

Line ramekins with cling wrap.
Line cling wrapped ramekins with thin sliced smoked salmon, letting it drape over sides.
Mix 'hot' smoked trout, poached salmon, low fat cream cheese, fine chopped chives, squeeze of lemon or lime juice and seasoning - you can even add a drop of whiskey to loosen the mixture if you like. In fact any fish/seafood can be used, just add what you like to the cream cheese, chives and seasoning - you can also add finely chopped peppers and/or onion to add more texture.
Fill smoked salmon lined ramekins with mixture, fold excess smoked salmon over the top then twist cling wrap to form 'parcels'.
Refrigerate for at least an hour (two or three is preferable), then serve with a green salad with balsamic dressing, and maybe some melba toast or french bread.
These will keep for about 3 days in the fridge, but apparently they freeze ok too (just thaw and serve)
You can also make a large one in a loaf tin, as a terrine - make as directed but in one large tin, refrigerate for longer though, then slice and serve :) | |

Place salmon fillet in a microwavable dish spread a coating of melted butter on top lots of black pepper cover and cook on full power for a few minutes
take out for a minute
Put a potato in to bake then some brocalli
put salmon back for another minute until cooked to your liking
All together dinner ready to eat in about 5minutes

Avocado and Salmon Bruschetta
I like seeded multigrain bread for these appetizers; assemble them up to 1 hour ahead; drizzle avocado with lemon juice to retain color. Ingredients
4 slices whole-wheat bread 1 tablespoon prepared pesto 1 avocado (about 10 oz) 1/2 cup shredded lettuce or sprouts (optional) 1 to 2 oz. smoked salmon or trout, flaked salt fresh-ground pepper
Preparation Toast bread. Spread pesto on one side of each slice. Pit, peel, and thinly slice avocado. Arrange avocado on bread slices, then cut each slice into quarters. Top with shredded lettuce or sprouts (optional), and smoked salmon or trout. Sprinkle with salt and pepper.
Yield Makes 16 appetizers (serving size: 1 bruschetta) | |

| What are good fish appetizers? Posted: 1/2/2008 10:09:38 PM | ok first the warped mind saw "fish appetizers?"... well, my fish like bits of shrimp before a feeding of multi flakes. When they get too fat I'll give them lettuce bits for a nice appy. I tried scallop bits but the rainbows just spit those back out... Uh, what?! Not that kind of fish appetizers? oh I get it, ok how's this:
One large portabella mushroom, brushed with olive oil top and bottom, baked in a hot oven (350 degrees) for about 5 minutes.
Place a nice slice of salmon, ahi (or other thick sliced fish) on top of the portabella.
Mix cream cheese, pinch of lime, tarragon and spread over the salmon.
Cover with foil and bake for about 20-25 mins.
Actually this can be a meal or cut into small pieces for snacking.

Oyster Patties
Ingredients: *2 dozen fresh Oysters (reserve the liquor) *24 Pastry Shells (the frozen ones work good, Fresh from your bakery is gooder!) *1/2 cup Crabmeat *1/2 stick of Butter *1/2 cup Chicken Broth *one can of Cream of Mushroom Soup *1/4 cup finely chopped Yellow Onion, Green Onion and Celery (each) *1/2 tbsp minced Garlic *one tbsp Flour *2 tbsp Olive Oil *sliced Pimento *grated Parmesan *seasonings: Salt, Black Pepper, White Pepper, Hot Sauce
In a skillet, melt the butter and add the olive oil. Add the onion, celery and garlic to sauté. Stir-in the flour. Stir-in the mushroom soup, broth, liquor, crab, and a dash of each seasoning. Simmer for a about 30 minutes. Add a little more liquid if needed, but the sauce has to be thick. Cut heat off and let settle and cool for a bit. Lay-out your shells on a cooking pan. Place one fat ole oyster in each pastry shell. Dash-on the hot sauce. Spoon the sauce on-top to fill the shell. Top-off each patty with a little cheese and pimento. Bake 350 degrees for about 20-25 minutes. Remove pan and let the patties settle and cool for a bit. You may have a little leftover sauce. Perfect with some Ritz crackers or toasted slices of French bread.
The ones I grew up with were more French, than Louisiana style. I don't believe they contained crab meat, but they were made with smoked oysters.
Even smoked oysters alone, served on a good cracker , make a good appetizer. I have those on a regular basis as a snack, and they are not that expensive. | |
