Just picked up a litre of goats milk today, wow, very tasty. It seems more creamy. When I took a swig from the bottle, the flavour stood right out and did a little okie cokie dance on my tongue!!
Ok it was in the bargains section, about to expire that day, so maybe thats why it tasted so prominent? lol
Whats your opinions on goats milk.. and most importantly, is it actually any different from cows milk? I mean like, milk, is just milk, isn't it?
I'm sure some clever helpful person will enlighten me.

I have only tasted goats milk once, and to me it was very likely the most foul tasting thing I have ever had in my mouth.
It was like drinking liquid goat's cheese, and although goat's cheese is my favorite cheese, I sure as heck don't want to drink it.
Granted, I did buy the canned version, and there is a possibility that it might have been concentrated or something, and I didn't realize it, because nothing could possibly taste so nasty that is meant for human consumption. | |

Seriously though, I've always been a bit too squeamish to try it. Up a little north of where I'm at, the Amish make "goat milk fudge", and I've heard that it actually is VERY good. | |

It's different from cows milk, it's better for you and more digestible. Google can explain why - I don't remember offhand.
Todays newspaper had a culinary "what's not what's not" and goats milk yogurt is supposed to be all the rage this year.

And fresh, pasteurized goats milk doesn't taste like cheese It tastes a little bit like cream. So it was probably concentrated, and perhaps bacteria got in it? :) | |

It didn't taste "spoiled" but it had a very strong flavor.... I mean, VERY STRONG flavor, which to me tasted like goats cheese.
I might have to give it another shot though. If many people like it, I would hate to miss out on a gourment experience, because of one unpleasant episode. | |

| Goats Milk, any different to cows milk? Posted: 1/2/2008 6:44:38 PM | Cows milk in itself can vary in flavour, depending on whether it is whole milk, two percent, one percent or the fat free (ugh). It also has a slight variance whether it has been pasturized, homogenized or in its raw state--plus how old it is--even if it is all still "in date". Goats milk can also vary depending upon the breed of goat and if it has been processed and I am told--what it has had as a steady diet can also effect the taste. Different breeds of goats can have higher/lower amount of fat which does account for taste. I don't think FRESH cold goats milk taste any stronger just a bit different than store bought cows milk. I had my own goats and enjoyed having healthy fresh milk. Since I fed and took care of them I had no fear of raw milk. That is how most goats milk is drank. Of course, I was raised on raw cows milk too. What I do miss more was making my own fresh cheese--you can make just about any variety of cheese. Many cheeses we enjoy are made with goat (or sheep) milk. It is an acquired taste though--just like going from whole to low fat milk. | |

Goat milk has far higher fat content, and just about everything else is superior to cow milk. The only problem is, canning goat milk changes the structure of the sugar in the milk, that will change the overall flavor. The milk itself changes in flavor during the milking phase. In otherwords, the first teat squeezins after baby comes out is different in taste then the last squeeze before she dries up.
As to use in a recipe, use the same way. Although it will be a richer product in the end. | |

Children who are taken off cow's milk and given goat's milk instead, don't continually have ear infections. I know people who swear this to be true. | |

Any way, MILK is not a healthy food for people old enough to have teeth and chew food. There is a reason goats and cows and the rest of animals don't drink milk into their 50's. Google is your friend. | |

I'm into goat's milk b/c I'm allergic to cow's milk -- I used to drink one brand years ago and it tasted VERY goaty, so I went to other types of "milk". But now, I get various brands, even the one I used to drink, and they all taste great. The reason for the goaty taste has to do in part to do with its production: if the goats are penned together with the ram (who smells nasty), the smell transfers to the milk and you get that goaty taste...honestly! Also, you should buy it when it's fresh b/c it will get a nasty flavour closer to expiry.
It is also different b/c the proteins are more easily digestible than cow's milk. Also the fat is more naturally dispersed throughout the milk, so it isn't homogenized and tastes creamy. Thirdly, it has less lactose than cow's milk, so can be easier to digest, but not as "cow's milk" sweet. It has been said to be better for people with cow's milk allergies, but this would have to be tested by the individual, provided they don't have serious milk allergies.
I live in Southern Ontario and 2 brands I enjoy are Liberte (by Mornington's) and Hewitt's. They both taste good and come in whole and 2% milk. You can cook and bake with them, but make sure they are very fresh. Also, if you try to make instant Jello pudding with it, it doesn't set as well b/c of the lower amount of milk protein -- but it will set if you refrigerate it for a few hours.
Anyway, that's my goat milk knowledge -- hope it's helpful and sort of informative.

It is almost like making yogert except you add some junket tablets to it and add a little yogert or buttermilk to get it started. Then I pour it into cheese cloth or a big mans white handkerchief to drain. in a large sieve like container better then the store bought kind, down here since I live in a small town and that soet of stuff dont move fast here. | |

I would hardly consider milk to be a natural product anymore unless you are getting it farm fresh from real cows who live like real cows are supposed to. The same goes for goats and any other livestock. I'm not a milk drinker but it does sound better than the usual supermarket stuff. | |

It's healthier, lower in fat and the cheese you can buy fresh is really good for you. I was raised on goat's milk and buy the fresh cheese from a Portuguese bakery here in Cambridge; it tastes a lot like creamy cottage cheese but is denser. Spread some hot sauce on it and have it on toast...yummy! | |

My grandfather bought a goat and gave it to my family so we would have the fresh milk. I was born 3 months prematurely so this seems to be common for preemies. I love goat's milk hand lotion, shampoo, etc...maybe I have a lifelong goat connection lol. | |

Posted: 4/2/2008 3:45:22 AM | The taste of goats milk is really dependent on what they feed the goats on so avoid goats milk from goats fed on bruseels sprouts if you can't stand em! Providing the goats are fed well it's lovely. Iced in the summer goats milk is sublime.
I'm a sucker for grilled red peppers with soft goats cheese on a soft bap. So simple to do - just slice pepper and cheese and bung under grill. It's gorg! Wales is famous for producing nice goats cheeses so you should be able to get hold of some good quality produce if you keep an eye out when you pass the farm shops.
The proteins in goats milk are VERY similar to cows, so don't assume you'll automatically be OK with it you can't have cows milk. A lot of people that can't take cows milk can't have goat or sheep's either because of the similarity of the proteins - my son sadly falls into this category. It depends on the severity of the intolerance. | |

But, in our area there are some very diversified farmers that are from Switzerland, and they have been producing Sheeps milk for a few years now. Very different from goats milk, but it seems, it is supposed to have all the same qualities. It is lighter, a bit 'sweeter' tasting, but not as sweet tasting as cows milk. They make cheezes with this as well. If you ever have the chance to try this - you should. As for the price - a little more expensive than regular milk, only because it is not mass produced, I guess. | |

| Goats Milk, any different to cows milk? Posted: 4/2/2008 7:16:08 AM | As a Welsh lass who raises goats, I can't add a lot to previous correct posts regarding the health aspects of goats milk, but as for taste, I can tell you that I refused to house a ram period!
The stench permiates the whole barn, and the milk is infused with the odor unless the goats are milked outside. The taste can also be affected if it's at the end of the goat's birthing cycle and she's neeeding to be "freshened" (bred again to induce milk flow... although not milkable again for months til the kid is weaned.)
For that reason alone, I have paid good $$ to find "virgin milkers" who produce milk while never haven given birth. These goats reliably produce 4-8 litres a day each for 12 mo/yr with no slowing or stopping of milk flow. (I donate my excess milk to wildlife rehab centers for their orphaned deer fawns and other animals.)
My advice is to make friends with a local farmer to get the freshest goat milk possible ... the difference is like night and day...it's worth the drive even for city folks.

To the OP, here is a little different bit of info no one touched on. The reason cows milk is not so very good for humans is because it is very hard on the kidneys. Giving cows milk to a baby, or toddler is the reason they end up with bladder and kidney problems. Most of us that were raised on it will have bladder and kidney issues starting in our 30's and beyond. The protein molecule of cows milk is too large for the human kidney to filter properly and being that it is designed to make a newborn calf gain 600 to 800 pounds in less than a year, it isn't too good for us in many other ways, cholesterol, digestion and so on. This is where goats milk is best, it does not interfere with filtration and digestion in humans. It is not designed to put massive weight on any animal and the protein molecule is much smaller. Besides all of that, no one is giving those goats growth hormones which get into our system, too. And Ohhhhhhhhh, have you ever tasted goats milk butter??? YUM I want this ewes milk and butter that BlueEyedMinnow is talking about.

I have lactose intolerance so I can't drink cow's milk but goat's milk didn't particularly bother my digestive system. Unfotunately it's horrible. It has shorter protein chains and much less lactose than cow milk but it also has a bitter musky taste to it. Wouldn't touch the stuff with a ten foot pole, give my soy milk any day.
Now, I do love goat's milk cheese though! | |

I do totally agree that the goats milk has to be fresh or it has that tart taste that's fine in cheese. I like fresh goat milk, but not once it takes on the tang.
Some folks may be too young to remember when fresh whole cow's milk was delivered to the doorstep in glass bottles. Back then cow's milk was worth drinking, but when they started messing with it & homogenizing it etc... I stopped drinking the cr*p they call milk now. eeeuuuh. If you know the real deal, what is passed off as milk is just white water & they can keep it. The only white water I'm interested in is in a creek from a canoe. LOL | |

The same goes for cows milk. Paturized cows milk tastes sweet (I'm talking about homogonized thats the only kind I drink) but fresh whole milk is creamier and oh so good! Fresh goats milk is so good to, provided they are fed properly as what they eat affects how the milk tastes, and that they are not kept with the male goats as they pee on themselves and its nasty and smells bad lol. Goats milk is easier for people to digest and has smaller fat molecules. I only drank goats till I was about 5 years old and it was fresh from the goat lol I was also allergic to cows milk and still kinda am but goats milk is fine with me. Also saying that goats milk has higher fat content isn't necessarilly true as it varies quite a bit between breads. Alot of people have it in their head that goats milk is nasty but if you tried fresh milk I think your eyes would greatly be opened. I have quite a bit of experience with goats and have about 30 back in BC on my farm, not a know it all but I do know a few things lol.
Also I have to add this as it really annoyed me.. A male goat is a buck, a male sheep is a ram. A female goat is a doe, and a female sheep is a ewe. Theres a big difference between sheep and goats lol. | |
