| Looking for a home made or semi home made Potato Soup Recipe. Posted: 1/23/2008 11:30:13 PM | I LOVE potatoe soup, and since it's the cold season here in Michigan, and most of our household has a cold I wanted to make some home made soup. We are all chicken noodle souped out due to me having surgery 2 weeks ago and having tons of that made up for us.
I am looking for a great home made or semi home made Potato Soup Recipe. I made one last year, where it started out with Cream of potato soup mix, and you kind of added to it and it was outstanding... problem is, don't remember what I put in there, and for real it's not from scratch if I start with cream of potato, but it was good and wouldn't mind that recipe again.
So if you have one, and wouldn't mind sharing, please let me know!

The brown butter technique makes the best potato soup I have ever had. Sometimes replace it with bacon and keep the grease in. Or 50-50 bacon/butter. Remove the bacon THEN add and brown the flour. The do the rest as per the recipe. Re add the bacon at the end.
Use paste chicken broth concentrate (or better yet homemade if you have chicken carcass lying around) and for truly superb use some cream in it.
You could add a bit of madeira wine or marsala to it. I like to use seasoning salt in place of regular salt in it.
Some recipes you totally do away with the flour and you take maybe 1 cup of potatoes and broth and puree it in the blender/food processor then add it back and that makes it thick. MUCH easier if you're not found of the butter/flour roux method.
Some people like thyme in it. A pinch is OK but I personally don't care for a lot.
Another nice finishing touch is french bread croutons on top with mozarella cheese and broiled until its lightly brown. A lot of restaurants do that for various soups. | |

Potato Cheddar Soup
2tbsp butter 1 onion(chopped) 2 cloves garlic minced 5 med sized potatoes, peeled and diced(approx 1 1/2 lbs) 2 cups stock 1/4 tsp dried thyme 1/2 tsp pepper
Melt butter in large saucepan, saute onion and garlic until soft but not brown. Add potatoes, stock, thyme and pepper. Bring to a boil, reduce heat and cook covered 20 mins or until potatoes are very tender. Puree half of the soup mixture, return to pot.(if freezing a portion, cool and freeze at this stage, continuing with recipe after you have defrosted)
2 c milk 1c grated cheddar cheese(change the cheese, change the flavour!) 2 tbsp fresh parsley
Add the milk, heat through, season with salt and pepper to taste. Add the cheese and heat gently just until it melts, sprinkle with parsley. | |

Vichyssoise, the cold potato leek soup (pronounced: "vee shee swahzz")
CREME VICHYSSOISE GLACEE
4 leeks, the dark green tops discarded and the leeks split lengthwise, washed well, and chopped coarse (about 2 1/2 cups)
1 onion, chopped 1 Tablespoon unsalted butter
2 russet (baking) potatoes, peeled, diced (about 3 cups) and reserved in 4 cups water
2 teaspoons salt 2 cups milk 2 cups half-and-half or light cream 1 cup heavy cream white pepper to taste thinly sliced fresh chives for garnish
In a kettle cook the leeks and the onion in the butter, covered, over low heat, stirring occasionally, until they are softened. Add the potatotes with the water and the salt and simmer the mixture, covered, for 30 to 40 minutes, or until the potatoes are soft. Add the milk and the half-and-half and bring the mixture just to a boil, stirring. In a blender, puree the mixture in batches and strain it through a very fine sieve into a bowl. Stir the cream and the white pepper into the soup and chill the soup.
This recipe makes about 11 cups, serving 8 to 10.
This is the best potato soup I have ever tasted. Served at the best restaraunt in South Carolina at the time.
You can serve it while still warm, also. | |

Master Recipe: * 2 Tbl butter * 3 cups sliced leeks (white and tender green parts)[ it doesn't hurt to add more leeks ..and i added a small chopped onion) * 4 cups peeled and roughly chopped "baking" potatoes) * 8 cups water ( 2 quarts, but here i used one quart store bought chicken stock and one quart water) * 2 teaspoons salt( to taste...I also added fresh black pepper) OPTIONALS * 1/2 cup sour cream or creme fraiche, ( didn't add this) * 1/2 cup cream or 2-3 Tbl butter ( used both *L*) * 2-3 Tbl parsley or chopped chives ( i used the parsley ) Saute the leeks and onion until translucent in butter with the salt . Add potatoes and stock/ water simmer 20 to 30 minutes, until vegetables are tender9 this depends on how small the potatoes are diced. Correct seasoning. Serve as is, or puree,( I used a stick blender to puree ) and/or top each portion with a dollop of the cream.Add optionals or not. Not only is this a great soup but it is a marvelous "soup base"
Variations:
Watercress Soup: Add a bunch of washed watercress leaves and stems to the base soup for the last 5 minutes of cooking. Puree. Garnish with a scattering of fresh watercress leaves.
Cold Soups, such as Vichyssoise: Puree any of the above, stir in ½ cup cream, and chill. Correct seasoning just before serving, stir in chilled cream if you wish. Top each bowl with minced fresh chives or parsley (or fresh watercress leaves).
Soupe Du Jour: Meaning add anything else you have on hand, such as cauliflower, broccoli, green peas, spinach, cooked or raw. This is how you may come up with some of your own marvelous ideas and secret "house recipes."
How to Prepare Leeks: Trim off the root ends, keeping the leaves attached. Cut off tops so the leeks are 6 to 7 inches long. Starting ½ inch from the root and keeping leaves attached, slit each leek lengthwise in half and then in quarters. Wash under cold running water, spreading the leaves apart to rinse off all dirt. Leeks can be braised whole or sliced crosswise into pieces for soup. To julienne, cut leeks crosswise into 2-inch pieces, press leaves flat, and slice lengthwise into matchsticks. ( I chopped the leeks and put them in a pot of cold salted water and stirred them, the leeks floated and the sand settled on the bottom, then i scooped out the cleaned leeks with a slotted spoon)
To Puree a Soup: To use an immersion blender, set the machine upright in the center bottom of your soup pan, turn it on and move it around, but do not bring it to the surface. To use the food processor, strain the soup and turn the solids into the processor, adding to them a little of the liquid, then process, adding a little more liquid as needed. To use the vegetable mill, strain the soup and add the solids gradually to the mill, passing them through with small additions of the liquid.

5 cup base 10 Tablespoons butter, melted 5 to 7 Tablespoons flour salt & pepper to taste
5 cups of liquid 2 1/2 cups potato water 2 1/2 cups milk
Cheese: 10 oz each (use any two of the following) Medium Sharp Cheddar Montery Jack Colby mix Piconning Cheese Frankenmoth (sp?)
Boil potatoes till done; save water. Fry in butter 1 small onion and bacon or ham. Remove onion and meat. Make base with flour, salt and pepper. Add liquid to base. Add cheese. When cheese is melted, add onion and meat. Add chopped potatoes.
Everyone I give this recipe to loves it and makes it part of their winter menu. I froze some one time for my Gram and it froze well and she liked it too. :) | |

boiled potatoes sauted leeks (cut up) sauted garlic in generous amounts of butter
puree it in a blender with milk and transfer back to the pot you boiled your potatoes in add more milk to your desired taste season with salt/pepper and top with chopped chives and fresh bacon bits before serving

1/2 c. chopped celery 1 c. chopped onion 1/2 c. sliced carrots 3/4 tsp. pepper 2 qt. chicken stock or water with bullion flavor 2 c. cubed potatoes 1 c. milk 1/2 c. flour blended with 2 tbsp. melted butter 3 or 4 strips of cooked bacon if you like
Put vegetables, pepper, and stock in a pot. Boil until vegetables are tender,good way to tell,is the onions will get clear colored. Add potatoes and milk. Simmer 15-20 minutes. Add flour and butter mixture, and simmer to cook flour. While still hot,cube up some cheese and add and stir around some.I like to crumble up some well done bacon in it too..Yummy Yummy...You can always alter ingredients..Get Well Soon..

8 medium potatoes, cut up 3-4 T. cornstarch 1/2 c. diced celery 3 chicken buillon cubes 1/2 c. diced onion 1 qt. water 1/4 c. butter 1 qt. milk 3 T. parsley flakes Add salt and pepper to taste
In large pot, boil water and cook cut-up potatoes, celery and onion. Add butter, parsley flakes and bouillon cubes. When the potatoes are done, add *cornstarch and milk. Cook until soup is thickened. Do NOT boil. *Shake cornstarch in a jar with a little water. Optional: Add fresh carrots (I grate 1-2 carrots and add to mine) or green beans along with the potatoes. ENJOY!!!! | |

While potatoes are boiling chop the celery and onion. Boil celery and onion in 3 cups of water until tender then drain through a seive . Take skins off of the potatoes and dice. Put cooked diced potatoes, celery, onion,salt and butter into a pan and pour the quart of whipping cream over them heat until the butter is melted and remove from heat. Serve | |

Posted: 3/27/2008 11:38:38 PM | Ok, Ok, Ok, this thread has come up several times over the last few weeks and I keep saying, "No, I won't post our secret family chowder recipe." Well, I am gonna do it, but I have to give credit where credit is due. My daughter and son-in-law created this recipe together right after they were married. They were pretty sure they had a winner on their hands, so they brought it to me, knowing I dislike potato soup and clam chowder. This soup is so incredibly delicious that I swooned! I still can't believe how much I like it. And, it is one of those recipes that no one used any measurements for, sorry.
*Peel and chunk 3 pounds of blue potatoes. They must be blue to get the right flavor. Add 2 pounds to a porcelain covered cast iron Dutch oven and just barely cover with milk and simmer until the potatoes begin to fall apart, then add the last pound of potatoes and the other ingredients. *Fry some bacon pieces until just getting crisp. Remove the pieces to the Dutch oven, leaving the fat. *Saute some sliced leek in the bacon fat. Remove to Dutch oven. *Caremelize some chopped onion. Remove to Dutch oven. *Slice some baby carrots that have green tops still on, not packaged ones. ADD *Cut some candy sweet corn from the cob and ADD *Open a few cans of "smoked" clams and ADD. Simmer, covered, until the last pound of potatoes are done. *Add some chopped fresh dill, chives and 1 cup heavy cream. Summer Potato Soup
1 lrg garden onion (not the green ones the bulb ones you planted early with the sweet peas)
6 large garden potatos cut bite size 2 cups garden carrot coins 2 cups garden green beans tipped and cut 1/4 stick real butter 1 can evaporated milk 1/2 gallon skim milk salt and pepper to taste.
dice up the onion and saute till clear in the butter in the bottom of the stock pot.
Par-boil the potato pieces and carrots till half done in salted water, drain and transfer them to the stock pot. Add green beans and the milks and bring to a very slow simmer then turn heat down and keep hot but not bubbling for 30-40 minutes. Check salt and pepper and serve with fresh baked bread sticks preferably rye with caraway. | |

OP: This is how my Mother taught me to make potato soup. She was raised during the depression and this is not as rich as some of the other recipies, but it's easy and good. Sorry no exact measurements. This is a one pot meal, not a lot of dishes to wash.
Peel and thinly slice potatoes (makes them cook quicker) put in a pan that has a cover along with 1 large onion, chopped, more or less as to your taste, celery, cleaned and chopped, to your taste. Cover with lightly salted water. Place on medium heat and cover, cook until the potatoes are soft and falling apart. It should look like soupy, lumpy mashed potatoes. Add butter or margarine, about 1 Tablespoon, more or less to taste. Bring to a boil, stirring constantly until it's somewhat thicker. About the consistancy of cream of wheat or grits, but not stiff. Add milk or cream and simmer for awhile, stirring frequently. Taste and add salt if needed. You can also add garlic or garlic powder if you like the taste. If you want a creamier soup you can cook the potatoes, onion and celery and either blend or use a hand mixer to make smoother. If you have too much water, pour some of it off, or simmer uncovered until reduced. Be careful not to put in too much salt to start. If it's too salty, peel another potato or two and cook in unsalted water, and add to soup when they are done. Good with oyster crackers and shredded cheddar cheese. I would probably use 3 or 4 medium potatoes with 1 large onion, but that's just my taste. Enjoy! | |

The next day is it even better...
Clean and roll up leaves of about a lb. of Kale or Collard greens...shredding them very fine and set aside. Mince one onion and a couple cloves garlic Saute in olive oil until transparent Peel and thinly slice about 5-6 potatoes and saute with onions and garlic for a few minutes. Add a couple quarts of cold water and boil gently until potatoes are mushy. Fry thinly sliced dry spicy sausage...(chorizo, linquica or pepperoni) until most of fat has been cooked out...and drain. Mash the potatoes, leaving them slightly lumpy...add sausage, (setting aside a few for garnish) salt and freshly ground peppper to taste. Simmer for about 5 minutes.
When ready to serve add the greens and simmer for about 5 minutes, until they are tender Add a small amount of olive oil, to taste. Serve in a shallow soup bowl, garnished with a couple of slices of the sausage. | |

Nothing is too specific) Peel and quarter potatoes place in deep pot. Cover with canned veggie stock. (I usually use 2 to 3 14.5 oz cans) One bunch green onions. Slice green part and reserve. Put white parts in with potatoes and stock.
Cook until potatoes are very tender. (Fall apart when pierced with fork) Blend with immersion blender thinning as need with heavy cream or milk.
Serve with reserved onion tops and coarse sea salt.
A very smooth and comforting soup. I always make cheese toast to go along with it. | |
