my granmother used to make this bread whenever we came on holiday to wales to see her,it was one of the nicest things ive ever tasted i have an extensive library of cook and baking books but cannot find this bread in any of them so im asking if anyone out thier can help me out with this problem it would be very much appreciated

OP: I think they call it lardy cake, so it might help get more results doing searches. Here is a recipe I found:

Lardy Cake

12 ozs. Risen white bread dough
2 ozs. lard
2 ozs. caster sugar
2 ozs. currant
a little honey
Roll out to an oblong about 5 ins. x 12 ins.. Spread on lard and sprinkle with sugar and currants. Roll up like a swiss roll and then roll into a square and place in a greaed shallow 7 ins. square baking tin. Make light diagonal cuts in top to give a diamond attern. Cover and leave to rise to top of tin.

Brush lightly wth honey and bake in a mod. hot oven Gas 5 0 375f. 190c. for about 35 mts. Serve hot with butter.


Thats a basic one I found. Seems like there would be something you could substitute for the lard though...
