ingredients 2 large potatoes salt/pepper cheddar cheese (grated) bread crumbs sliced mushrooms white onion (chopped) fried bacon ranch dressing butter
-Boil and mash potatos (add butter, salt and pepper) -sautee mushrooms and onions - add ranch dressing to taste to potatos - add crumbled cooked bacon to potatos - drain mushrooms and onions then add to potatos - mix - put mashed potato mixture in a baking dish and cover with cheddar and bread crumbs - baked at 350 degrees F till cheese is melted | |

Could also scoop them back in the potato shells for twice baked.
Ranch anything count me in!

| Baked ranch mashed potatos Posted: 3/6/2008 6:43:44 PM | Good gawd that sounds yummy, yum, yum. One of my simple potato dish is >>> 1 large potato,cut down the middle. Then, I'll get my favorite Chili ,and put the Chili in the middle of the potato and then i will slice up an Onion,put the Onion over the potato and then i will put it in the oven for about 10 minutes at 375 degrees or until i feel like i wanna to take it out of the oven, no set time ( as long as i don't burn the potato) and then i will slice some cheese and put it over the potato with a sprinkle of crushed red pepper over the potato,hey would do you except from a single guy,eh?? | |

LOL Dang these are right up there with the original sin I think. Oh yes, scoop them out and put back in a shell as a twice baked. I have 2 funerals coming up, one Saturday and one Monday. (You know, where you make your absolutely best recipes for the family after) and I think these are going to both. Thanks a bunch for posting.  | |

One of my favorite college hangouts was a place just off campus at San Diego State called the Baked Potato. Oh maaaan, they put all sorts of stuff into baked potatoes. One was called the Fat Albert and had, I believe meatloaf, mushrooms and brown gravy. There was another one called the Alice B Toklas, but I only remenber the name, not the ingredients. I think your dish sounds good and would not identify you as a single guy! LOL  | |
