| Horseradish stuffed eggs Posted: 3/19/2008 8:11:14 PM | I thought I was being creative when making this variety of stuffed eggs. Dang, they were so delicious. However, I then found others ahve done it before me. Oh well! Anyway, if you like stuffed eggs, you've got to try this!
I am providing the measure of garlic and ginger for those varieties as well.
. Garlic OR Ginger OR Horseradish stuff eggs, using 8 eggs:
1/2 C mayonnaise 2 tsp prepared mustard 1/4 tsp salt 2 tsp finely minced garlic OR 4 tsp finely minced ginger OR 2 tsp prepared horseradish (hot variety) sprinkled with paprika
Simmer eggs in shell for about 15 minutes. Decant hot water then immerse in cold water. Peel away and discard shell. Cut eggs lengthwise, removing yolk. Mash yolk with remaining ingredients (less paprika). The use of a hand mixer may help facilitate. Transfer mixture into halved egg whites then sprinkle with paprika.
Prep time = 1hour, 15 mins cooking

To all of this; 1/2 C mayonnaise (I prefer Miracle Whip) 2 tsp prepared mustard (spicy brown gives it a better zing) 1/4 tsp salt 2 tsp finely minced garlic OR 4 tsp finely minced ginger OR 2 tsp prepared horseradish (hot variety) sprinkled with paprika
add 2-3 reg. cans of tuna or 1 lb+ diced/chopped/shredded chicken for a really interesting tuna or chicken salad. Some minced celery can also be added.
