Buffalo Breakfast Sandwiches

I created this little treat over the weekend. I really enjoyed it, thought I should share.

Ingredients

1/4 pound of ground buffalo meat
1/2 cup fresh sliced mushrooms
1/2 fresh diced red bell pepper
1/3 cup grated pepperjack
2 cloves of pressed garlic
2 english muffins
2 tablespoons low fat sour cream
3 eggs
Olive Oil
Garlic Salt
Pepper
Onion Powder
Chipotle Tabasco

Directions

First, you turn the burner on to medium high, and you pour a little bit of olive oil into the pan, let it get hot.

While thats heating…..crack the eggs, and leave em in the bowl, dont scramble them yet, you dont have time, the oil is hot.

Put the mushrooms in the hot oil, enjoy the tiny little burns on your arm, its good for ya. Put a little garlic salt and pepper in here.

Pepper the eggs, and put a few nice blobs of chipotle tabasco up in there. Still dont scramble them though. Gotta set the stove to broil dawg.

Ok, now that the stove is heating on, turn the fan above your oven on, cause the mushrooms are gonna start to wanna set the smoke detector off.

Ok, now add a couple more drops of olive oil, and put the red peppers in with them. Mushrooms need longer to cook, this is a proven fact, and you really dont want the peppers to get too cooked, cause they get kinda nasty when they are overcooked, gotta keep that crunch in there thats key.

Separate the english muffins. Put em on a plate…and WALK AWAY.

Break the buffalo up and put it in with the mushrooms and peppers, add more pepper and onion powder.

Ok, brush the english muffins with olive oil, and evenly distribute pressed garlic to the muffins.

Move them from the other counter to the one by the stove.

Ok, stir the eggs. I prefer a fork to a whisk, because Im a man. (thats a joke people)

Add the chipotle infused eggs in with the meat and veggies, only when the meat is fully brown.

Right before you add the meat put the muffins in the stove, they will need to be cooked to a deep golden brown.

You know when you are looking into a pan of scrambled eggs, and you have that “just a little bit longer and they will be done” realization ? Ok, at that VERY MOMENT, you pull the pan off the stove, and add the greated pepper jack cheese, and start stirring it up, which will get the cheese nice and melty and they eggs will finish cooking on the residual heat of the pan. Trust me, I know.

Put on a plate, and add the sour cream, mix it up for a second, add a couple more squirts of chipotle and let it sit there. After a moment or two, scoop it up, and put it on the toasted english muffin, and enjoy.
