| lemon sponge pie Posted: 3/29/2008 6:09:18 AM | Lemon Sponge Pie I 2 eggs, separated 3/4 cup sugar 1/4 cup melted butter 1/4 cup all-purpose flour 2 tsp. grated lemon zest 1/4 cup fresh lemon juice 1 cup milk 1/8 tsp. salt 1 9” pie crust, unbaked
Beat egg whites until stiff peaks form; set aside. In a mixing bowl, combine flour, lemon zest, lemon juice, milk, and egg yolks. Gently fold egg whites into mixture. Pour mixture into pastry-lined pie pan. Bake at 350°F for about 40 minutes.
Lemon Sponge Pie II 2 tbsp. butter 1 cup sugar 3 eggs, separated 3 tbsp. flour 1/2 tsp salt juice & rind of 1 lemon 1-1/2 cups hot milk 1 9” pie crust, unbaked
Cream butter; add sugar and egg yolks. Beat until light and fluffy. Stir in flour, salt, lemon juice, rind and hot milk. Fold in stiffly beaten egg whites. Pour mixture into pastry-lined pie pan. Bake at 400°F for approximately 40 minutes. | |

After reading through both posted recipes (it sank in slowly), I realized it's what my mother used to called lemon chiffon pie; sometimes she called it mile high pie. Gads, haven't had in ages, your post has prompted me to resurrect this yummy recipe. Thanks for the post.
