Emeril's Essence

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

put all in blender and turn on high for 30 seconds.

EMERIL'S SOUTHWEST DRY RUB

2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon cayenne
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon kosher salt
1 tablespoon cracked black pepper

This was heavy (to me) on the chili/cayenne taste , so I cut both by 1/2 to 1 chili 1/2 cayenne

Emeril's Rustic Rub:

6 tablespoons paprika
1 tablespoons cayenne
2 tablespoons freshly ground black pepper
1 teaspoon garlic powder
2 teaspoons onion powder
4 tablespoons salt
2 teaspoons dried oregano
2 teaspoons dried thyme

lose the oregano and sub lemon pepper and this is great on ribs

I didn't notice that one, cinnamon chipotle does sound good. I don't think it is that complex...brown sugar, chipotle, cinnamon and whatever else you want to add.

Thanks for posting the New Orleans recipes, both from the newspaper article and Emeril's. While all of these are just commonplace, ordinary, daily use herbs and blends in the culture of New Orleans, they are more exotic in other parts of this huge United States, and certainly in other parts of the world where lot's of the Forum users live. That's what makes these forums so good--we are able to share things that may seem ordinary to us but aren't ordinary to everyone. So again thanks to both Mandeville and Blues for sharing.
I make up all sorts of spice blends and rubs and package them for Christmas gifts. They are always a big hit. The Emeril's Essence has been a major hit and requested for repeat . Why wouldn't it be?? BAM!!!!!

Many thanks, Mandeville!! I recently used the last of my Zatarain's Fish-Fry and wanted to mix my own--now I have a recipe to try.
