| Ideas for breakfast for a single dad to cook.... Posted: 4/22/2008 8:46:41 PM | I have teenagers and I try to cook breakfast every morning. Does anyone have any ideas on some healthy breakfast foods, easy to prepare for finicky eaters?
Lately I have made, a morning sandwich that they both love.. double fiber bread, 1 slice mozzarella and pepper jack cheese, turkey breast toasted in my George Forman grill.
French toast with Double fiber bread, eggs, cinnamon, vanilla and a little powdered sugar.
Oatmeal with frozen, strawberries or blue berries.
Or a protein shake with berries, a little honey and a dab of Kashi cereal in it...
Well I am trying to keep it healthy and things they might like.. Any more ideas for me so I can have more variety?

In the morning I like having a bowl of yogurt with mixed nuts thrown in. There's lots of other things you could put in too since yogurt does such a good job of hiding other tastes.
Take a pita pocket and fill it with scrambled eggs and maybe some red and green peppers.
Yeah that's all I got, I don't eat breakfast very often =P | |

If theres 3 of you, 9 eggs beaten (more if it's just the whites) then put that into a baking pan, add your veggies, (tomatoes, mushrooms, ham, broccoli, green peppers etc) and cook it all in the oven, Then right at the end throw some cheese on top so it melts, and you can cut it up and serve.
Protien shakes, I usually throw in a banana, 1/2 cup milk, 1/2 cup no fat yogurt, and sometimes some frozen bluberries and 20 grams protien. They say adding a spoon of peanut butter makes you digest it slower, and you feel full longer. | |

Plain yogurt with fresh fruit and sprinkled with cinnamon and nuts or granola
Scrambled egg topped with salsa wrapped in a whole wheat tortilla
For kids who don't hate vegetables: omelets with chopped tomato, onion, green or red bell pepper, mushrooms, asparagus or any combination of favorite veggies and a little cheese. If you keep some chopped vegetables in the fridge, these omelets don't take much time at all to prepare in the morning. | |

French toast is a big one but I put baked apple and granola ontop.
Toasted bagel with turkey and Gouda.
Western sandwiches.
We eat a lot of whole wheat crepes, pancakes and waffles with fruit, even just for a snack. | |

Oatmeal pancakes.... just mix oatmeal with either eggwhites or whole eggs to pancake batter consistancy. You can add dried fruit, cinnamon... whatever you want. Grill on a lightly oiled pan....voila. Pancakes. They are a little denser, but my kids love them. Protein, fiber.... how healthy is that. | |

Does anyone have any ideas on some healthy breakfast foods, easy to prepare for finicky eaters? One of the best things to do is get them involved. The more involved they are in preparing the meals, the more likely they are to eat it. You may even find they'll eat things they wouldn't in the past. I'm divorced and have 3 teen boys of my own. Almost 2 years ago I had hip resurfacing surgery and was down and out for about 2 months. Considering I was divorced I was pondering the idea of not having them stay with me on weekends or during the week in the summer during that period. Then I changed my mind and thought you know it's time for these boys to take care of their old man. So I sat outside with them while they barbecued the steaks, burgers, kabobs, whatever. I just offered suggestions when they needed it and they pretty much did all the cooking for 2 months. Oh and because I often would have a beer or orange cream swirler while I barbecued I allowed them a drink the odd time when they became comfortable with the cooking. It was the best thing I could have done for them.
Additionally, my mother has a house on Lake Erie and we usually go there every summer for a couple of weeks. When we are at their place it's such a social environment that everyone pitches in when dinner is being prepared. They always enjoyed eating the meals they were involved in preparing.
Get them started now.
You might want to try the fruit shakes with natural yogurt, frozen fruits, variety of juices, bananas, oats, nuts, honey or real maple syrup for sweetener, etc, etc. Make them up the night before and they are a healthy, quick and convenient breakfast.

He is a wicked chef and even wanted to have a restaurant at one time. My younger guy is just starting with cooking and he often surprises me with breakfast.
Tortillas are great. They come in whole grain and can be filled with turkey bacon, scrambled eggs and sauteed peppers. You can cook the peppers and bacon and then just crack the eggs in and scramble around. Some shredded cheddar and salsa are nice additions.
Other kinds of nut butters are good. I can't eat peanut butter...kind of sticks in my chest like a rock. But I've discovered almond butter, cashew butter and they even have soy butter. With some fruit preserves or sliced banana and honey...yummy.
My kids love leftovers for breakfast. So if they like it for dinner, they might like it for breakfast. And my boys serve and microwave their own, too easy for crazy mornings. | |

Take a tall ice cream glass (or any glass) and layer chopped mixed fruit like strawberries and bananas with vanilla yogurt and some crunchy kind of cereal. Make it tall. Then sprinkle on chopped nuts and a drizzle of maple syrup.
He thinks he invented this the little toad, but is sure is a festive way to start the day. | |

On the weekends I always fix a nice breakfast with either pancakes or waffles. Love to have maybe strawberries and blackberries mixed or bananas, pineapple, and orange. You can always serve grits but they have to be cooked just right. You have to wash grits. You know they have bug parts in them. So you get them in a pot and stir them around in water. Once they start to settle you drain the water out and the stuff that needs to go will go out of the pot. This also gets rid of lots of the starch. Then you cook then slow and you stir grits with the lid closed. YOu don't want them lumpy and you want them to be cooked for at least 30 minutes so they will be mellow and melt in your mouth. With just a touch of butter they are just right. I love to fix a small portion of maple bacon or maple flavored sausage with that. Just enough to have a small portion. Then fruit to go with that. Juice to drink. Apple, grape or orange juice. My kids have always loved all types of fruit. In the summer give them canalope or any fruit for a snack and they are so happy. I try to let them eat with in limits but make sure they don't over eat. I enjoy what foods I want but I exercise and take care of my body. You can have small portions just know not to over kill on anything. Hope this helps, Y | |

I digress. Pancakes are an AWESOME breakfast. Make the batter the day before. We had pancakes this morning and I'd brought the whole wheat buttermilk batter made from work yesterday and they just needed a bit of extra milk to thin them.
Fruit is great to pop into pancake batter, but you can do some wicked savory versions too. My dad put canned corn into pancakes when we were kids and my fave now is to put some frozen corn, grated cheddar and bacon crumbled up in them. With pre-grated cheese and packaged bacon crumbles it would be easy to do. Yo u can make them up and serve with a bit of ketchup or salsa.
I always cut up some kind of fruit or veggies before a meal and kind of leave them on the table (usually something I'm cutting for salad anyway). The kids always drift in with "when is it going to be ready" and will have eaten at least a serving of fruit or veggies in the waiting time. Mine are lazy, so if it is right on the table they'll snap it up right away. I don't care if they eat the stir fry veggies raw off the table or cooked on rice after...a little Machevellian that way. | |

My boys loved BBQ and after I separated there was no way I could get a grill and manage the propane thing. Stupid me, I forgot about charcoal till I saw a grill on at Crappy Tire. So my guys have been setting a charcoal fire for years now. I used to feel a little nervous about the neighbours seeing the kids doing the grilling but they learned how to do it right and they are great cooks.
My 12 yr old is doing a lot more cooking lately and got the idea to do kabobs on the BBQ yesterday. I had some cooked, leftover new potatoes in the fridge and he took green pepper and onion squares and alternated them and popped them on the grill. Very yummy...and gee I thought chicken and salad was good enough.
I think people can be a little hesitant getting kids in the kitchen and it seems a shame. Such a great skill to learn when you are young. | |

Peanut Butter and Banana Wrap take a whole wheat tortilla, smear some PB on it, put a banana in the middle and wrap it up.
Scramble egg Burrito scramble 1 egg and 1 or 2 egg whites, mix in some chopped onions, tomatoes, green peppers, zuchini, or whatever veggies you want, put all that in a whole wheat tortilla and wrap. I dip mine in salsa and sour cream some mornings, its really good.
Peanut butter and banana smoothie in blender blend 1 frozen banana, 1 cup skim milk, 1 tsp peanut butter, throw in a couple ice cubes, blend (sometimes I add a 1/2 cup of fatfree yogurt too) | |

He is usally starving so I always try to make him a big breakfast to try to tide him over til lunch time. His favorite he's calls Mom's breakfast of Goodness. Cook up a little ground sausage with some frozen hash browns in a pan mixed together, stir in an egg and usually a quarter cup of eggs whites and once that is cooked sprinkle a little cheddar cheese on top. He loves it, puts some La Tapitia on it, and he's good to go! | |

Honestly, anything healthy you can get your kids to eat in the morning is a good thing. A good breakfast, especially at such a young age, is the most important thing you can do on a daily basis.
My mother wouldn't let my brother an I leave in the morning until we had breakfast. A few times, that made us late to school, but the teachers never minded when I'd tell them why I wasn't in my seat when the bell rang.
My favorite was always oatmeal with brown sugar and fresh apples! | |
