If you're putting a meal together and need something quick to go with it, a simple pea salad recipe may be the answer.

It's very simple, just drain the water from a can of peas and put peas into a bowl. Add a little chopped vegetable and a tablespoon or so of mayonnaise and mix.

That's the basic recipe, here's a few suggestions to spice it up a little:

1-Add a slice of finely chopped onion. You don't need much and it really adds flavour.

2-Mince a small garlic clove and add to salad. Do this only if you like garlic.

3-Add other vegetables. Cucumber, cherry tomatoes, bell pepper, celery and more. Chop them up very fine and add sparingly. (If using cherry tomatoes cut in half and squeeze out seeds before chopping more) Like the onion you don't need much.

4-Cheese it up. Shred or cube some cheese and throw it in. Any kind will do. You could also use some 3 cheese ranch dressing rather than mayonnaise for the dressing.

5-Add a hard boiled egg, peeled and chopped of course. This mixes very well with the mayonnaise.

6-Chopped sweet pickle or relish will sweeten it up and add a little crunch.

7-Enhance the mayonnaise dressing with a little shot of mustard.

8-Add a pinch of spice. Oregano, dill, cilantro, any others you may like.

9-A pinch of salt will bring the flavours together.

When you have your ingredients all together, gently mix and refrigerate. If you are in a hurry to get it on the table just chill it in the freezer for 5 minutes or so.

I love Pea Salads...my gramma makes one that is fabulous. It has all different kinds of layers to it
she uses the frozen peas too b/c they retain their shape better.
take a layer of lettuce, top it with some mayo or ranch whichever you prefer
layer of peas
chopped very finely some onion and green pepper
shredded cheese
bacon bits
REPEAT
yummmmmm!

take a layer of lettuce, top it with some mayo ...

I've had this one too--delicious, only all of them I've had end with a creamy layer on top and spread all the way to the edges to seal in all of the flavors. Nothing gets wet and it keeps forever. This method especially seems to sweeten up the onion and infuse the whole salad with that flavor.
Does anyone have the version that is made with raw cauliflower in place of the peas, and parmesan cheese mixed in the dressing and no cheddar (I think no cheddar--it's been --no way-- yes, it's been 28 years since I've had it ??!!!!
On the pea salads, both frozen and canned are good. It's just a different sald depending on which you use.

Sounds good, I would go one step farther and use 3-cheese ranch dressing either on its own or mixed with the mayo or a little yogurt. I'm getting hungry now...

My grandmother passed down a great pea salad recipe to my family!

This is the original recipe from back in the 1930's, unadulterated by anything modern. OP YUM thanks for a reminder!! Some of these old-fashioned things are so tasty and soooo forgotten.
Sjiggy--send me an email if you will, please . I'm blocked because of age and I would like to talk about your carreer. I love how you put it in your profile - Yaaaay you.

I agree completely./..there is nothing better than a cold pea salad, especially on a hot day...we make ours almost alike...a lot of the same seasonings and herbs..

2 cups frozen tiny peas
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons dried dill weed
2 tablespoons finely chopped onion
4 tablespoons finely chopped celery
3 slices bacon, fried until crispy

microwave peas until cooked..drain and let cool completely.
fry up the bacon while the peas are cooling, then crumble it up. After the peas are cool, mix everything together, and top with crumbled bacon...this is even better the NEXT day...mmmmmm
