I am just wondering if there are any diabetics like me out there. I am always looking to expand/enhance my collection of sugar free recipes. If anybody has any to share I would be very appreciative. Thank you in advance.

| sugar free recipes Posted: 5/11/2008 7:09:32 AM | Hi ridster! I'm a new diabetic-just found out a couple weeks ago but i have a strawberry pie recipe i made once for my mom and it's pretty good-can't even tell it's sugar free.
sugar free strawberry pie strawberries-as many as you want in the pie 2 cups water 1 small package sugar free vanilla pudding (not instant) 3 ounce package sugar free strawberry jello
cook the water and pudding to full boil then remove from heat. add one 3 ounce package sugar free strawberry jello-stir to dissolve then cool a little. pour over strawberries-gently stirring put this mixture in a 8 or 9 ince baked pie shell or you can use a graham cracker crust. refrigerate to set. serve alone or with lite cool whip
you can also use peaches and peach jello too or what ever you like but still use the vanilla pudding.
here's one for a beef stew if you have a crock pot. i got a really nice fix it and forget it diabetic cookbook for crock pot stuff-even desserts. so if you think of something you'd like to have and want to see if there is a diabetic recipe for it let me know and i'll take a look.
hearty beef stew
2 pounds stewing beef, cubed and trimmed of fat 5 medium carrots, sliced 1 large onion, cut in chunks 3 ribs of celery, sliced 22 ounce can stewed tomatoes 1/2 teaspoon ground cloves 2 bay leaves 1/4 teaspoon salt 1/4 to 1/2 teaspoon pepper
combine all ingredients in slow cooker. cover and cook on high 5 to 6 hours.

| sugar free recipes Posted: 5/11/2008 7:10:33 AM | the problem is with sugar free (especially in the USA) is that it can still cause issues with blood sugar control as even Polyols mess with blood sugar
what type are you Type 1 or 2?
What are you limited to eating, are strawberries ok?
1 small package sugar free vanilla pudding (not instant) 3 ounce package sugar free strawberry jello
These are not sugar free, they are made with Maltodextrin which is (you guessed it) a sugar

| sugar free recipes Posted: 5/11/2008 9:54:45 AM | Are you allowed to eat bananas? (my granny had diabetes and bananas were one of her standbys).
Freeze the banana and blend with ice and a little milk (dairy, soya, oat.. whatever). You can also add other fruit. It makes a great ice cream, or smoothie if you overdo the milk or let it melt.
If you are allowed the very dark chocolate and can get hold of some suitable cereal, you could try making chocolate cornflakes/rice crispies with just chocolate and cereal.
You can also spread melted dark chocolate onto rice cakes. Could sprinkle the top with dessicated coconut as a variation.
I once made a kind of jelly from black coffee -- this kind of thing might be worth experimenting with -- it wasn't bad, as I recall (I was trying to discover foods that had nearly zero calories at the time but it really would be better with cream). The vegetarian alternative to gelatine will likely give the best results.
If you are allowed dried fruit then I have a cake recipe you might like, but as far as I understand, things like dates and raisins are just as bad for diabetics.

| sugar free recipes Posted: 5/11/2008 12:34:22 PM | I carefully followed a recipe in a diabetic cookbook once as a kid, making a special diabetic birthday cake for my Granny. Very polite and old-fashioned, she made sure to thank me for the trouble I'd gone to. She also made sure to ask me not to go to the trouble again because eating it made her feel that she was doing penance for something.
I only remember that the "icing" was made mainly from coconut cream and strongly resembled sawdust. *shudder* I'd not recommend recipes from a special diets book unless you know someone has tried and tested them...

| sugar free recipes Posted: 5/11/2008 1:32:23 PM | | I am actually pre-diabetic but can easily graduate to Type 1 if not carefule. We in Canada have to be careful as there are so many ingredients that are sugars but under a different e.g sugar alcohol. I can eat just about anything provided I do it in moderation. It's a tough balance with fruits between fibre and sugar e.g bananas. They are an excellent source of fibre but high sugar content so can only eat in small doses. thanks for the recipe. Where do you find sugar free pudding and jellos? | |

| sugar free recipes Posted: 5/11/2008 4:50:45 PM | to rune3-- i have tried some of these recipes and they are very good. it is supported by the American Diabetes Association and all the recipes include complete nutritional analysis and exchange values for each recipe. i showed it to my diabetes counselor and she said it was a wonderful book and was planning to get one for herself.
I'm not sure where you get the sugar free jello and pudding in canada but in the states they are available most everywhere they sell the regular ones. my counselor says they and the strawberries are fine for me to have.

| sugar free recipes Posted: 5/11/2008 7:53:15 PM | Although I am not a dibetic, thank God. I do watch my sugar intake. I use DaVinci Syrups in most all of my cooking to replace sugar. It comes in near 60 some flavors (Hot Buttered Popcorn-very versatile as it add's that butter and sweet flavor at once, mocha, all the berry flavors you can think of, vanilla, coconut, hazlenut, on and on and on)and can be used in almost anything. I have about 30 flavors!! I use it sauces for Thai, in pancakes and crepes, whipped cream (strawberry is awesome for that) . I even use it to fully replace the full amount of sugar when I make cheesecake and brownies.....no one knows the difference. Not sure what regimen you have to follow but the exchange for DaVinice is 1 TBS= 1 free food exchange. | |

| sugar free recipes Posted: 5/11/2008 9:44:01 PM | Sugar alcohol doesn't seem to affect MY blood sugar .... thank god for "Splenda" You can substitute it for sugar in most regular recipes ...... but be careful of the other carbs, especially white flour ....... a diabetic friendly substitute might be used here too!
Actually you can do anything in moderation .... I have found that the key is control .... smaller portions & many smaller meals spaced throughout the day. Lesser blood sugar spikes are a good thing ....
Stay away from anything HIGH in sugar AND that includes bananas!!!

| sugar free recipes Posted: 5/11/2008 10:43:44 PM | Netrition.com sells some astonishingly good low carb foods. Carbquik makes nearly perfect waffles, Dreamfields makes amazing pasta with five net carbs per serving, Dixie Dinners makes very GOOD banana nut bread, corn bread, cranberry orange cake, etc. They also have some good soy wraps, and really fine pita bread. I haven't yet tried these on my diabetic, but they're wonderful just on taste alone. Hit the website, experiment, some things are better than others.
Good luck.

| sugar free recipes Posted: 5/12/2008 5:21:38 AM | I have friends who don't do sugar for candida reasons. We use stevia instead of sugar. It does take a trick to cook with though and heat can make it bitter.
So for apple sauce or rice pudding I can cook it till it is done and add a drop of stevia to sweeten at the end. It works for any sauce needing sweetening.
|
| sugar free recipes Posted: 5/12/2008 5:23:39 AM | | Also, to avoid the artificial sugars in flavoured waters I make my own using either some juice or citrus in the water and a drop of stevia to sweeten. No aspartame, and just as refreshing. Ditto for herbal teas. You can also make strong fruit teas like orange spice or raspberry and then ice them and use stevia to sweeten. | |

Dreamfields makes amazing pasta with five net carbs per serving I love them as well... however keep in mind that many people have reported that if they cooked the pasta in tomato sauces (not tomato sauce aded on top) or anything acidic they still suffered from insulin spikes.

| sugar free recipes Posted: 5/17/2008 4:31:59 PM | I've been diabetic for over 10 years....from waaaay back in the days when everything, to me, tasted like cardboard!
Nowadays there are many, many delicious items in the stores that make diabetics feel much more like a regular human being when looking for good food to eat.
I have several recipes, but, before I post them, may I suggest that each of you take only the word of YOUR doctor and/or your NUTRITIONIST....THEY KNOW YOUR NEEDS BETTER THAN ANY ONE OF US DO.
I stay away from aspartame...I use Splenda, and Stevia......Fresh fruit is on my good list...except I've been told to take it easy on bananas. Label reading is a major part of my time spent in the supermarket....I sometimes make puddings out of the ingredients that are listed for pies....why waste the carbos and calories??
I'll dig out a recipe or two and post them soon.
Sincerely,
Knittin Kitten | |

| sugar free recipes Posted: 5/21/2008 12:54:19 AM | | I have a great zero carb, zero lactose, zero cholesterol, low fat chocolate mousse recipe on my cooking blog (along with some other low carb recipes). markiscooking dot com | |

| sugar free recipes Posted: 5/21/2008 9:04:19 AM | I still haven't dug out my recipes, but, most of the time I simply check out the ingredients on anything, and if the rest of the numbers are o.k., I simply use splenda instead of sugar . It's really just fine.
In addition, I use low fat cream cheese; no transfat, low salt, reduced fat margerines; low fat milk (or dry milk); and use regular recipes....If I find anything very different in my recipe collection, I'll surely post it.
However, unless it's a special occasion, I try to stick to the easy, fast method of healthy food preparation....that way I'm more likely to keep on keeping on.
Now, ask me if I think, in spite of it all, that I should lose a few pounds..... Of course, Vanity, thy name is WOMAN!. Right?
Marc: Thanks...I'm gonna check out your cooking blog....
Fondly, KK | |

| sugar free recipes Posted: 5/21/2008 9:23:10 AM | | I use Splenda all the time. They have both while and brown sugar replacements. The taste is great. Not fake as in Sugar Twin or Equal. If you visit the Splenda website, there are many recipes listed there. They also have a little blurb on Splenda and the diabetic which I think you will find useful! Good luck and happy cooking! | |
