| Breadmaker Bread from Scratch Posted: 5/13/2008 4:51:19 AM | I absolutely love my breadmaker, so when I split from my wife, I brought it with me. Unfortunately, I didn't stop to find the documentation that came with it. The problem is that I no longer have the recipe to make the bread from scratch, and bread mixes are getting expensive.
I tried searching for a recipe, but couldn't find one. Can anybody help me? I just want a nice, basic white bread recipe. (I figure I'll start experimenting from there.)
Recipes for wheat bread or any others are also welcome, but it is primarily a simple white bread recipe I'm after. | |

| Breadmaker Bread from Scratch Posted: 5/13/2008 5:45:06 AM | I too bought a breadmaker after my divorce! They're great. I usually have it make the dough, then I bake it in the oven. That way I can make it into pizza, foccacia, a braided loaf, or perhaps a normal loaf. Each batch of flour can be a little different than the next. Which is why you'll see some recipes tell you the Weight of flour to use. Whatever. I just look at it and if it looks right, it is! All purpose flour will work ok. but bread flour will work better. Its got a higher gluten content. I don't follow a recipe too closely.
2 cups water (warm is best, but the machine will adjust the temp, so cold is ok too) (but never use hot) 4 cups flour. Use bread four for best results, but half bread/half whole wheat is nice too. 1 teaspoon salt 1 Tablespoon or 1 packet active dry yeast.
Turn on the machine, let it go through the first 'mixing' cycle (where it starts and stops) and begins the 'kneading' cycle (runs constantly) then look at it. It should form a nice uniform ball dancing around in there. If it looks too gooey, add flour. If it looks dry, stiff, or crumbly add more water. Do these additions a little at a time, and keep checking it. Once it looks right, leave it alone. If the motor sounds like it is straining to do it's job, it probably needs a bit more water.
Once you have the basics down, you can add a bit of oil to the recipe, an egg, more or less salt, different kinds of flours, nuts, herbs, sugars, fruits, etc. | |

3 cups bread flour 1 cup warm water 3 tablespoons oil 1 tablespoon sugar 1 teaspoon salt
Mix and bake on regular white bread cycle. Better start out with 3/4 cup of the water and add the rest if the dough texture looks too dry. It has been awhile since I used a bread maker. I literally wore mine out. | |

Small Loaf (1 lb/2 cup machine) 1 cup water 1-1/2 tbsp. butter or margarine 2 cups white flour 1 tbsp. sugar 1 tsp. salt 1 tsp. bread machine yeast
Large Loaf (1-1/2 lb/3 cup or 2 lb/4 cup machine) 1-1/4 cup water 2 tbsp. butter or margarine 3 cups white flour 2 tbsp. sugar 1-1/2 tsp. salt 1-1/2 tsp. bread machine yeast
Select loaf size. Add ingredients to machine according to manufacturer's directions. Select white cycle.
Note: I make the large loaf and find that reducing the amount of salt makes the bread raise higher. Also if the dough looks too moist while the machine is kneading I add more flour; usually a heaping tablespoon.
Whole Wheat Honey Bread 1-1/8 cups water 3 cups whole wheat flour 1-1/2 tsp. salt 1/3 cup honey 1 tbsp. dry milk powder 1-1/2 tbsp. shortening 1-1/2 tsp. active dry yeast
Place ingredients in bread machine pan in the order suggested by the manufacturer. Select whole wheat setting, and then press start. Note: Can substitute butter or margarine for shortening.
Rosemary Bread 1 cup water 3 tbsp. olive oil 1-1/2 tsp. white sugar 1-1/2 tsp. salt 1/4 tsp. Italian seasoning 1/4 tsp. ground black pepper 1 tbsp. dried rosemary 2-1/2 cups bread flour 1-1/2 tsp. active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select white bread cycle; press start.
Note: I use the dough setting then shape the dough into braids, buns, or loaves using bread pans. Let dough rise until double, then bake at 400°F until done ; 30-40 minutes depending on size. | |

| Breadmaker Bread from Scratch Posted: 5/13/2008 7:00:48 AM | Email the company who made the breadmaker. Most can either email or snailmail you the original instruction manual with recipes as each machine may be a bit different. Here are a couple to get you started that I use:
White bread 1 1/2 tsp dry yeast (I just use 1 packet, but not fast acting/rapid rise yeast) 2 C plus 2 T bread flour (important to use bread flour) 1 tsp salt 1 T sugar 1 T dry skim milk 1 T shortening or sweet butter (use less salt if using regular salted butter) 1 C less 1 T warm water
Just put ingrdients into pan in order above and bake as you currently do. Yeast should be put into pan near edge of pan.
To make Wheat Bread just substitute 1/2 C whole wheat flour & 1 1/2 C bread flour for the 2 C bread flour from above.
To make Raisin Bread, add 1 1/2 tp cinnamon (or a bit more), then add 1/2 C raisins at very end of mixing. You might also add another T of sugar to this.
You can also vary by adding an egg and then reducing the water by a couple of T.
