| Fish Whats the best way to eat them Posted: 5/14/2008 7:10:18 AM | One time, I was cooking up some haddock fillets for me and my kids. Just a little salt, pepper and medium-high heat in the fry pan. For the last bit, I threw in some lemon juice. Yum.
Also a huge fan of sushi. Strange, but I used to look down on it as a "yuppy" affectation. Now, I eat it practically every week. | |

I love it with panko bread crumbs and sauteed until golden brown in olive oil in a pan, grilled, fried, steamed in brown parchment paper....you NAME it...I just prefer it to be sashimi ...very fresh...i.e., tuna and salmon being my favorite and ix-nay the rice.

Deep pan and fill it at least 2" deep in oil. Get the oil as hot as you can without burning down your house. Have with some steamed veggies and home maid bread or corn bread. yummy | |

I usually trout and or salmon fish atleast once a week. I fillet all my fish. The skinning is key. i like to leave approx 1/4 inch of meat on the skin. This will keep the finished fillet free of all the dark fat that is connected to the skin. This will give the fish a very "fishy strong taste" Even walleye and panfish. Trust me its the prolly the most simple yet effect trick to make your fish taste better. Salmon I love to wrap in foil with a spoonful or two of chuky salsa and throw on the grill. Trout I cut into small nuggets. dry batter and fry in canola oil....Fresh coleslaw, tops its off. | |

Seriously thou, We in Australia are blessed with many,many Fresh fish outlets. Most of our cities are situated on the shoreline and nearly all Piers,Jetties and the like are associated with the fishing industry,From commercial enterprises to charter boats. Should one be in the mood, it is a simple thing to join a charter boat for only a few dollars, and catch your own fish! (Rods and bait are supplied!) You now might understand why we are called the lucky country!
Its not uncommon to be driving up a main road and have a outlet selling a trawlers morning catch from a caravan on the side of the road! Such is the scale (NO pun intended) of our fishing industry
Naturarally fresh is best and its only rarely we see frozen (As in a day or more) fish, UNLESS its been imported from Thailand or Vietnam. At least we only see that in the larger supermarket chains
The frozen fish does have a distinctly blande taste!
Our Freshwater fishing industry is equally efficient with Fresh (Not Frozen) Trout, Cod and other varieties available every day of the week!

A Recipe: Naturally clean your fish And leave the head and skin on...Dont skin it!!! Ingriediants One good sized fish Jucie of one orange jucie of one lemon sprig of lemongrass slight sprinkle of balsamic vinigar A wet NEWSPAPER A Roaring Fire A few potatoes and several thirst quenching ales!
METHOD: Enjoy an ale! Throw Potatoes into fire coals Lay out thick.wet newspaper and lay fish in it! Paper should be full edition..Not pages of Have another ale pour on juice of lemon , orange and balsamic and lemon grass! Wrap up fish in newspaper and throw into coals Enjoy another ale (About 12 Minutes) Paper should be starting to burn properly on out side Carefully dig out potatoes and fish Peel burnt potatoes of skin......Should have beautifully cooked spuds by now! Unwrap fish...BE CAREFUL NEWS PAPER WILL BE HOT AND FULL OF STEAM!!! Enjoy beautifully Steamed fish with baked potatoe Finish with another ale

Place cleaned fish or fillets in heavy duty foil with a nice pat of butter on a bed of thin sliced julienned carrots, celery, sweet onion and potatoes.
Add a splash of wine, season with salt and pepper and a crushed clove of garlic, then place a layer of very thin sliced lemon over the fish.
Seal tightly in foil, then bake in hot coals of campfire 20 - 30 minutes. Serve on paper plate in foil.
Works well with shrimp or chicken breast fillets as well. | |

I'm heading to my fav place in a couple of weeks and all the above will be present, the place is that good, also Tailor 3-4kg fish, anyways my preferred cooking technique is this...
Clean and Fillet but do not scale or skin. Skin down on foil, add butter, salt, pepper and herbs (Rocket/mixed baby asian leaves etc) Your choice, i do like some rocket. Wrap in silver foil and cook Option1 BBQ Option 2 Oven Option 3 yep Microwave (no foil obviously) For microwave, skin down on plate, same preparation, cover with Kitchen roll 2-3 mins depending on size of fillet. Be careful not to overcook, you ruin it if over cooked in a microwave........... but excellent for quick fresh fish. Believe me i've filled my freezer with fresh fish and spent the next couple of weeks enjoying the great taste as described above. The secret in eating it is to take the flesh off the skin and bones, leaving the skin untouched on the plate/foil. That way you can eat right up to under the skin and with practice the scales/skin stay on the foil/plate.... Bones are no problem when the flesh just flakes off..........Fantastic!!!

| Fish Whats the best way to eat them Posted: 6/3/2008 5:32:55 AM | Ok I am a saltwater guy...Preperation when catching first is key..If you have a live well keep them alive till you get to the dock...if you don't and have to ice them make sure they stay cold....and bleed them...slit from below gill plate to other side below gill plate...then let them bleed out...use a mix of salt water and ice creating a brine to keep the fish fresh in your cooler...Fillet them and do not rinse in fresh water..rinse in salt once to get dirt off...fresh water make fillets soft...do not rinse with fresh water till you are preparing them for cooking..... pat dry...If you have to freeze them...Vacuum seal them...Flounder I like fried in italian bread crumbs.....Striper baked in the oven or on the grill...tuna on the grill or cut on the boat for Sushi....Any fish you can use a hi quality glass dish with a lid and micro wave....When u use the mic the fish is done in seconds compared to minuted...Fish must be of the same thickness to insure equlal cooking time..if you have any questions drop ma an emailll...Ed  | |

You will love all that there, but get there early, they run out of fish really fast.  | |
