I made Paula Deens coconut cake this past weekend....just plain sinful it was.....but, in buying what I needed for the recipe, I mistakenly bought cream of coconut (2 cans) instead of coconut mik....I rushed back to the store to get the coconut milk...and now I have two cans of cream of coconut....anyone have any recipes that use it?

If you mean that sweet syrup stuff made to pour on pancakes you have one option.

As a matter of fact, I do... depending on if you like grilled fish or not, but this is very tasty. I got it out of a newspaper once, saved it and have made it often. I have to give credit where it is due so here goes:

JANE'S COCONUT FISH

INGREDIENTS:
1/2 pound fresh fish filets per person (mangrove or hog snapper, mahi mahi or yellowtail preferred)
1 fresh lime per person
1 can cream of coconut

DIRECTIONS:
Squeeze fresh lime juice over fish. Liberally brush filets with cream of coconut. Allow to marinate for at least two hours in refrigerator. Cook on hot charcoal grill about 5 minutes a side or until fish begins to flake. Garnish with lime slices and serve.

OH yes,,,you can make a sheet cake and while it is warm poke some holes in the cake and pour the cream of coconut over it and let it cool...Then put a mix up a large box of instant pudding pour that on top of the cake and then spread some fresh coconut over that or the frozen is good tooo....It is so rich...I haven't made it in yrs,,,but it is so good. If you make it let me know how it turns out......My ex use to love it and now I don't make it anymore....

I was talking to someone and they reminded me that you are suppose to put cool whip on top of the pudding and then put the coconut on top of that.....

wow, so many recipes...thanks guys! and Beth...omg, I have some mahi mahi in the freezer as we speak...I will be home alone tonight with NO kids for a change, and guess what Im cooking myself for dinner!!??...It makes my mouth water just to think about it...LOL

Just obtaining this product where I live is a challenge. Been lusting to make that coconut cake where you poke holes, etc. etc. Can NOT find a can of CREAM of COCONUT at any of our foodstores in Yellowknife. Am working on it though. Am not going to give up. Am going to have my piece of coconut cake YET, by GOLLY!!

I sure enjoy this aspect of the POF forums. Keep those recipes coming and comments re: food, etc.

I use it in curry: home-made, or good bottled curry sauce with savoy cabbage/bok choi, rice noodles, and shrimp. I was surprised at how it adds depth of flavour when one day I didn't add it; always do now.

Hey I always add it into Rice pudding. It gives it an extra creamy texture to it. Also add a cinnamon stick (or powder) while cooking it, it's great. Here's the recipe I used to use. I don't follow it too strictly though.
