MAPLE BUTTER SAUCE
3/8 cup maple syrup
1/4 cup butter
3/8 cup brown sugar
1 pkg.(8 oz) cream cheese - softened
1/4 tsp maple extract or flavoring - (to 1/2)
Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Remove from heat and beat in cream cheese and maple extract until smooth. Heat again either over low heat or in the microwave at short intervals to reach desired sauce consistency. Serve over blondies topped with vanilla ice cream. Choclate Spritz Cookies
Posted:
12/28/2007 6:42:19 AM
Here's what I could find..... hope it helps
1 lrg Egg yolk
1/8 tsp Instant coffee powder, preferably fine granules, not crystals
1 cup (2 sticks) unsalted butter, slightly softened
2/3 cup Powdered sugar
1 1/2 tbl Unsweetened cocoa powder
1 3/4 cup All-purpose or unbleached white flour
1 1/2 oz Bittersweet or semisweet chocolate, very finely grated
DECORATION
1 tbl Powdered sugar (optional)
Method :
Preheat the oven to 350 F. Grease several baking sheets and set aside. In a small bowl, stir together the egg yolk and coffee powder. Let stand for about 5 minutes, or until the coffe dissolves. In a large mixing bowl, beat the butter with an electric mixer on medium speed until very light.
Add sugar, cocoa powder, and egg yolk-coffee mixture and beat until very fluffy and smooth. Gradually beat in flour until thoroughly incorporated but not overmixed. Stir in grated chocolate until evenly distributed throughout. Fit a large pastry bag with a large (3/8-inch diameter) star tip. Stand the bag, tip down, in a tall glass and fold down the top of the bag about 3 1/2 inches. Spoon in enough dough to fill it two-thirds full.
Unfold the cuff and tightly twist the top to close it. Pipe 1 1/4-inch diameter rosettes onto a baking sheet, spacing about 1 1/2 inches apart.
(You can also use a cookie press fitted with a star-shaped disk to make these cookies.) Place baking sheets in center of the oven and bake the cookies for 8 to 10 minutes, or until slightly firm on top. Remove baking sheets from the oven and let the cookies stand for 2 to 3 minutes. Then transfer them to wire racks and let stand until cooled completely. Lightly dust the cookies with powdered sugar just before serving, if desired. Store in an airtight container for up to a week. Freeze for longer storage.

You don't need flour to thicken your alfredo, the cream should thicken up with the cheese by itself. I think I know why your daughters didn't, you said you went over and removed the lid !!!! Having a lid on kept all the moisture in and was making it watery....I um..uh..think?

Home-made vanilla ice cream recipe anyone???
Posted:
9/19/2007 9:57:44 AM
I agree with using Vanilla Beans, they are so much more flavorful than extract !!! I use them when I make Kahlua and its such a big difference. They can be expensive but we have a couple of stores around here that have these "Extract Starter Kits" which have a few Vanilla beans in a little bottle....... usually about $4 . The stores are TJ MAX and Marshall's !!!

I like to put a dry rub on mine and in doubled aluminum foil I put some apple and grape juice.... 225 degrees.......meat side down.... for about 5 or 6 hours....then take them out and add some more dry rub with some brown sugar and back in the oven for another hour or so....then put your favorite sauce and grill them for 5 minutes....
I have boiled them but you have to have a slow rolling boil.......not too hot or the meat tenses up...... 4 hours and then dry rub and sauce and finish on the grill

Meatballs
Posted:
9/4/2007 3:21:57 PM
I have to say that the original recipe doesn't sound too appealing to me but in her defense, she never said " ITALIAN MEATBALLS" she said meatballs and if she made them out of meat and rolled them into balls then that could be called a meatball. I don't see how anyone can be offended. Cooking is about trying different things and if she likes them.....then good for her......and if she wants to share her recipe then thats her business....... HAPPY COOKING
