^^ Usually about half a cup, that I've left out for about 30 minutes. I will usually add a bit of water, perhaps more sherry, into the mix later, if I am low on the whole sauce thing.

I should prolly state that I never learned this kind of sauce during my years of food prep, and its about the only one that continues to give me trouble.

^^ Yep, I sure do. Most the sherry is by then burned off, and there usually isn't much liqued left. Might that be my problem?

I've been trying to finalize a sauce recipe that just can't seem to work on a consistant basis.

The idea here is a sherry/mushroom/shallot/creme recipe that I've been working on for a while.

The problem I have is that either it comes out too thin (I really hate to manually thicken a sauce), or that, even at room tempeture, the creme doesn't mix well.

I usually pan sear the meat part of the dish, then set the meat aside. In the same pan I saute the shrooms and shallots, then add the sherry. I let that cook for a bit, then right before I re-introduce the meat to fully cook, I add the creme.

Any advice?

I always READ their profile first. I've already seen thier picture through the mail client (if they have one). I get a lot of mail from people who turn out to be vastly outside of what I'm looking for, I like to know this before I read their email. If I'm not interested, but they have written a good email, I'll reply and state why I am not interested. Emails that say "your cute" do not get replies. I also look at someones profile before I talk to someone via IM. Lately, the people who are IM'ing me have either not read my profile, or didn't care about what it said.

I havn't gotten a lot of emails yet. Generally, if the email I've gotten is well written and from someone who I would at least corraspond with, I'll reply. However, if the email is from someone who is: married, 1,000 miles away, under 28, obviously just looking for sex..I will not respond to those. I think my profile clearly states what I'm looking for.

I NEVER email anyone who makes it obvious in their that I'm not their type, or who are too far away to meet them.

And if someone emails me, and I reply, and I don't hear back from them, I don't push things.

Anyone in the Pioneer Valley? I know everyone is busy with the holidays and also buttoning down for the winter, but I figured I'd start a new thread here and see what happens. I'm in Springfield, but please don't hold that against me. I've got way more inate culture then what the city has to offer, heh.

Firefox, all the way. Sure I used Netscape back in the day, because it was the only thing to use. Then IE, Netscape really floundered, and IE would load everything. However, I was waiting for Firefox to become stable, and once it was, I was on it like a cheap suite.

I live the tabs function. I don't use very many extensions, and lately I've been using my Google homepage for many of the functions that so many Firefox extensions would give me. And I love that it's more secure. I don't load IE anymore unless I am unable to load a website properly. This happens about once every 2-3 months.

Wow. Lot's of great comments in this thread! And I just love that many of you who are Gemini tell it like it is.

I ignored the whole astrology thing for years and years. I finally got curious, and bought a few books, and read up on the topic. I'm certainly not going to live BY astrology, but it seems to explain a few things in ways nothing else can.

I certainly like to communicate. I get bored easy. Small talk is the last thing I want. My last partner, who I also still speak to often, is also a Gemini. My gawd, the conversations we would get into. But I think, in the end, that putting two Gemini in a room is two people too many! LOL.

Yes, I'd say we are intense people. Is this a bad thing? Passion is a very important aspect of our lives, and the world is greater because of that. Take a chance! Date a gemini today! LOL.

Commodore Vic 20. What a scream. This email will use up more bytes then the amount of ram on the damn box, lol. Then I got a Commodore 64..and a 300 baud modem. Ah, those were the days.

Assuming that you live in a place that get's dry in winter, yes, a humidifier will do the trick. It will also keep some of those nasty winter colds away. I'm prone to little colds and whatnot. I moved to a state that gets very cold and dry in winter. My doctor told me to get a humidifer because it would prevent my body from drying out. That worked..and no more shocks either. Winter is now easier to deal with. Yeah! :)

Oh yum! Great post, Az! Sauces are the one thing I never really learned in school, and sometimes they really kick my butt.

I've finally managed to make Hollandaise and Béarnaise sauces sucessfully several times, and that makes me one VERY satisfied eater. Except for that fact, that now that I've had the real thing, all the resturants that make it out of a package don't get my business anymore. The fake stuff just is horrible.

I've got several recipes, and some Hollandaise recipes ask for lemon juice, and some don't. I prefer Hollandaise with lemon juice, and I think that's still a Hollandaise sauce?

Little or no Sexual interest

I think that a low sex drive is one of the most misunderstood conditions a man or women can have. And for us women, it's a tougher problem, because not much science has been done to help female problems of that type.

I've done a fair amount of reading on this, and agree with the theory that if you ENJOY sex, a low sex drive may not be that big of a deal. It takes a little more work to get into a sexual activity, but the sex can still be wonderful.

Personally, I'd be less concerned about how often a person want's sex, and more concerned on if they actually still ENJOY it. If they still enjoy it, you have far less to worry about.

If, on the other hand, you have clinical problems and are taking medication, or have found sex to be uncomfortable or distasteful, then other measures may need to be taken.

I'm a very liberal person about sex, but I also know there are people in the world who are heavily sexually repressed. Thankfully, there is quite a lot of support for people like that, and I'm glad for that.

Google! Man I love Google. I'm a gmail user, and this allows me to use one of their new functions. Once I am logged into my gmail, I can load up the main Google page, and get email notifications, rss feeds, weather, etc. You can actually drag individual sections of the layout, if you wish to move things around. I leave a browser up with this all day at work. It allows me to keep an eye on my email, slashdot, top news, and gives me search.

How did you learn to cook?

My mother taught me about cooking and preparing freshies (fruits and vegies). Then later, my father taught me how to cook meat. By that time I was old enough to start cooking anything, and I was taking cooking in middle school. I took 7 years of food prep in high school and college. Though my health prevented me from being a full time chef, I still love to cook. Lately I've been concentrating on sauces...and getting my butt kicked. I'd love to take a few advanced cooking classes on sauces and meats.

I've not had the experiance many of you had with Match or Yahoo, but I've been on both systems. I canceled my Match account today (deleted my photo first), and I'm currently not a paid sub to Yahoo.

But I was on Match a week, had a decent picture up, a very friendly profile, and not a single wink, email..nothing. I find this very very suspicious. I usually get inundated the first couple of weeks.

I've had luck with Yahoo in the past, but the system seems to have gone downhill in the last year or 2.

As for True, I've never been tempted to use them. I'm a member of Myspace, which, along with LJ, I use to keep in touch with friends. Myspace is a free system that is like a blog, a photo station and a personals site all rolled into one. I was using it just to store photos and email a couple of friends before I realized it had some personals functionality. Around this time, I also noticed the top banner ads for True. They were all highly sexual, very suggestive, and the pictures of the women were so damn fake it was scary. It will be interesting to see if MySpace keeps up their ads with True. MySpace started as a place for bands to advertise, and the admin is a down to earth guy with a heart. They also advertise a personal site geared towards teens...now THAT is really scary.
