Questions for a chef, cook or kitchen manager in bc

Most good companies have a handbook to go by, this leaves the subjectiveness of when and why to do things out.
If you work for a small company, your responsiblity is to your community. If you knowingly let bad practices go unchallanged your no better that the jokers allowing it.
The problem in your case is that you may know and your boss may know that it is better to wash a trash can on a regular basis...but what is regular?
Is regular...everytime you dump it, after the daily shift, once a week. If it isnt written down, then its up to your boss to decide...If you disagree, ask the owner if new standads(in writing) could be established...for all your concerns.

H.R. 3400: GOP Sponsored Health Care Bill
Posted:
11/25/2009 5:24:56 AM
I have a simple question for all of you who dont want to pay higher health care insurance premiums...or higher taxes.
Health Insurers have it set up that as customers join a pool, as members become ill or have major medical problems they are dropped from the group, this keeps the members rates manageble. Insurers now have the right not to accept a member if pre-existing conditions exist.
Now, what happens to all those unable to join a new group...are they not forced to seek public health assistance? Taxes are being paid now to the Government by the members of the group to cover the ill member.
How is it different wether the ill member stays in the group and the group picks up the extra cost, or the group members pay higher taxes to pay for the ill member to join a Public assistance option?
Even the Republican Health reform bill has the provision that insurance companies can not exclude persons with pre-existing conditions. That alone with increase your premiums.

Like my values would be better served in Victorian England, where women were in waiting, sitting around having afternoon tea, and men were having deep intellectual conversions, upholding their and the ladies honour, etc.
Yeah there was nothing better than some azzhole with a title sitting around twittling his crumpet while real men and women toiled to serve him and his ho's..."Ladys"

Why is violence for self defence acceptable by law since you can just run away instead?

"Whoever appeals to the law against his fellow man is either a fool or a coward.
Whoever cannot take care of himself without that law is both.
For a wounded man shall say to his assailant, 'If I Live, I will kill you. If I Die, You are forgiven.'
Such is the Rule of Honor."
I wonder if Randy had a lawyer when he signed the contracts for his music carrer?
Does he keep his money in a Bank and expect them to adhere to laws or can they deal with Randy any way they choose.?
Randy is a Fool is he thinks he doesnt use and expect the help of the law every moment of his day.

Karol'z No Bake Pecan Pie
A very old recipe makes for a taste delight! You will love this great way of making Pecan Pie. Quick and easy, This will soon be a favorite. Cook time is cool time.
SERVES 8 (change servings and units)
Ingredients
1 cup brown sugar
1/4 cup cornstarch
1 1/4 cups water
2 egg yolks
1 pinch salt
1 1/2 tablespoons butter (recipe states "butter the size of a hickory nut")
1 teaspoon vanilla
1 1/2 cups pecans, 1 cup in halves, 1/2 cup chopped
1 (9 inch) pie crusts, not deep dish, pre-baked
Directions
1Mix cornstarch and brown sugar together in medium saucepan.
2Beat together egg yolks, water, and pinch of salt. Add to cornstarch and sugar. Add chopped pecans.
3Simmer on medium stirring constantly until mixture thickens.
4Boil 1 minute, constantly stirring.
5Remove from heat, add butter and vanilla.
6Pour into baked pie shell, decorate top with remaining pecans.
7Let cool 1/2 hour before serving.
I want to try this one...Im going to try to fill pie with as much pecans as I can...I dont like that sweet custard. I'd rather fill the space with more nuts.

Public Law #103-322A, a 1994 federal law, defines a hate crime as:
"a crime in which the defendant intentionally selects a victim, or in the case of a property crime, the property that is the object of the crime, because of the actual or perceived
race, color, religion, national origin, ethnicity, gender, disability, or sexual orientation of any person." 3
where does it say...except for white people

simmer the chicken till the meat is almost fall off the bone tender and has absorbed lots of the mole falvor, the chicken will render juice, fat and collegen that thickens and flavors the mole even more...You can always skim the fat off the top later.
most restaurants serve chicken with mole sauce on top...most home cooks stew the chicken in the mole.
If your doing the jar mole method, bring a pot of water to the boil chicken about 30m min- add any veggies and spices you like...chicken is so tender now, doesnt take long. Reduce heat to a simmer add jar and simmer for at least 20 min...I like adding a tblspn each of cocoa powder and peanut butter.
Mole goes so well with spanish rice, but
if you have turkey left overs...make the jar mole in a pan per directions(about a cup), then throw your left overs in ...any mashed potatos, gravy and diced up pieces of turkey...sever over warmed dressing, or eat mole in a flour tortilla burrito or soft flour tacos. mmm
Turkey mole Enchiladas...make plenty of mole gravy add sliced/diced turkey. Roll turkey and mole in a warmed corn tortilla, roll and place in a oven dish, once assembled add more sauce with what ever turkey left in pot on top and top with jack cheese. heat in oven to all heated thru.

TB,
chicken mole is like chicken stew...the bone, fat and colegen make a rich, thick sauce.
think of mole as supped-up enchilada sauce, and like enchilada sauce, mole is make from dried chilies and from chilie powder gravy.
Ive seen mole made both ways and Ive made it the gravy way.
1 chicken cut up
sauce-
4- dried chilie pasilla(or your fav)
3 med tomatos chopped
1 small onion chopped
2 galic cloves
1/2 small bell pepper chopped
1/2 cup raisins
1/2 cup prunes(opt)
1 cinanmon stick
place in a stock pot and add with 1 qt of water...no need for stock, this will cook chicken.
thickner-
4-6 slices french bread or tortillas toasted and chopped
spices and seeds-
in a dry skilet pan roast
1 tblspn whole cumin seed
1 tblspn corriander seed
1/4 cup seseme seed
1/4 cup slivered almonds
1/4 cup peanuts
1/4 cup pumpkin seeds
1/4 cup sunflower seeds(opt)
let cool and place in blender, add water to cover and blend add more water and toasted bread, a little at a time, till mix is smooth.
..................................................................................
Everbody has their way of putting it together,
some start boiling the chicken first and add spices, sauce and thickner as they go.
others, like me, like to brown the chicken with spices and add the veggies and saute till the chicken is browned and veggies are soft and incorporated.
then add water to cover and bring to a boil and then lower temp to simmer. as it simmers add ground seed and spice mix.

This is the perfect time of year to try Mole, that dark rich sauce that has a slightly sweet, nutty, chocolaty, and spicy flavor that is made with foul.
In mexico, Turkey mole is made for celebrations like Baptisms and Weddings. Its the perfect back of the stove dish, slow simmer.
Its ok to use the mole in a jar. Moles are sold in paste form in Mexico, so if yours is in a jar for convience...save time.
tip...if you use the jar mole, add 1 tblspn full of peanut butter, and 1 tblspn of cocoa powder.

baking powder and or baking soda...they are used with an acid...buttermilk or vinigar to produce gas for lift.
most prepared baking mixes have one or the other.
I think you beat in air to create volume on cream and egg based products.
When Im makin pancakes from a mix or cornbread, I use very warm water, seems to activate the levening agents quickly and to a max. I mix quickly and right to the pan for fluffy, high pancakes, biscuits, or cornbread.

season and fry up some chops...move to a warm oven to wait.
in the fry pan, add some flour and mix with pan drippings, add salt and pepper to taste...I like little minced garlic
pour in a can of greenbeans with can liquor...stir till gravy forms.
add chops back in pan, add any juices on plate and warm all thru well for about 7-10 mins.
I like adding can sliced new potatos and more pepper.
can substitute can peas and pearl onions.

Just be consitant...dont jump on folks that lable this crazy woman as a hater, then say all crime is just crime, but want to lable crime that you judge to be special cuz it offends you.
Im not defending Hasan, the Hijakers, or the crazy head puller...Im saying How is Hasans crimes any different than just regular murder, why do you lable his murders as anything more than murder...if crime is just crime,
You cant have it both ways...
Remember Hasan shot everyone...Non miltary cops, civilian med techs, and soldiers of all colors...I guess he hated amenricans...
that woman in the store chose her victim on race or religion alone.

now how does mom honor the courts ruling?
If the son not responsible, if his mother cant make him to go to stay with his father, Then who is...the Mom? Do we jail the mom...she is his primary parent. If the son didnt want to go to school, who would they come after...the mom?
So its either up to the Mom or the kid...somebody choose, but that kid IS going to stay with his father.

Beef tenderloin for x-mas
Posted:
11/21/2009 1:38:40 AM
Of all the cuts of beef tenderlion would not be my choice.
on a trip out to the river I stopped at a small meat mkt and got a med size(4 lb.) sirlion tip roast. I cooked it off direct heat for about 2 hours on a small square grill, when we sliced it, it was awesome.
I didnt know how well this cut of meat cook-up. We only had flour tortillas and guacomole, but those were some of the best tacos ive had.
the meat was tasty, tender and med rare. I would roast a 5 lb roast at high temp(350-375f) for first hour, then lower and roast at 275-325f for abour a hour more.
my second choice would be a beef shoulder roast, bone-in...low slow roast till the meat is fall off the bone...good mix of meat and fat makes it juicy and very tasty, just add your favorite steak rub to the outside.

Not sure how they going to pull this off, especially since it
appears these guys are supposed to be treated like American citizens in the trail.
Since these guys were not given their Miranda Rights, a good majority of the evidence will have to be trashed.
No Court or Judge has ruled on this...so where do you get your information that this is going to happen...let me guess.

if this were a easy deal, George would have done it. the fact is that GW was scared of the Spremes comming it and shutting down his MCM trials. and forcing GW to make the choices Obama is dealing with now.
I cant see anyone in the New York area, not wanting these guys in their area so that they can prosecute them.
Im sure if they tried to move Hasan's trial out of Texas or the Ft Hood area...I know there would be a lot of pissed off Texasans.

I think the Judge had the information he needed to make the ruling, I dont believe the child was abused or the enviroment at the father's was hostile. the kid just didnt want to go for what ever reason.
Maybe the father made him brush his teeth, or only let him watch tv or video game s for 2 hours a night. the kid could of had a million reasons...so what.
sounded like dad didnt want him there and mommy was there with the he a good boy, well now he knows he doesnt make the rules...

its 350$ per american, if someone chooses to have 3 kids and a wife, whats
business is that of mine, or why should I pay more.
the only adult non- worker that may need help are students, but I would like to see the $350 added to tuition.
Even incarcerated persons should have a bill of $350 a year added on to there probation or parole bill...and they can either opt to doing 2 months community service road cleaning while in carcerated to pay the $350 a year health insurance bill.

Just use the freshest ingredients you can get locally. Thats what makes Mexican food so different. Tamales in Colombia vary from those in Costa Rica or Cuernavaca or South Texas
try not to use pouch mixes, jar or bottle sauces
I use Hass avocados because those are offered at my local stores, I dont see the bright green Florida avacados in my stores.
We lived in So Cal for a couple of years and had a mature Lemon tree out back, we didnt buy limes and now use lemons where limes might be used.
enjoy what you like.

What spices go good with what?
Posted:

dont try to re invent the wheel.
choose 4 or 5 of your favorite dishes
and 4 or 5 of your favorite ethinc dishes...Chinese, Italian, Mexican, Indian, or Thai
Steaks, pork chops, spaghetti sauce, fried chicken coating, beef stew, chicken soup.
Read different recipes of the same dish...note the spices cooks use on that dish
every cook adds his touch, each recipe has a recurring theme of ingredients, spices, and methods.
try a recipe that seems to include all the re occuring ingedients and methods
you may note that Curry powder isnt used in Mexican food dishes and Terryaki sauce isnt in spaghetti sauce.
Expensive and exotic spices dont make for a better dish...You got to learn to walk before you run a marathon.

Please Help with a Math Problem...$350.00 a year?
Posted:

The Senate Health Care Reform bill is ready for debate. Estimates have the total cost over 10 years to be at the 850 Billion dollar figure. Some say the cost will be closer to 1 trillion dollars.
as I do the math, that comes out to about $350.oo per person in the US.
$1,000,000,000,000 divided by
10 years =
-----------------------------------------
$100,000,000,000 per year divided by
350,000,000 Americans =
----------------------------------------
$350.00 per American
is the $350.00 my new tax above my premium or is it my new premium?
$350.00 is a ball park...not knowing the true amount.

Italian seasoning.
Seems to me going to all that authentic trouble to use italian seasoning...that would be like me makeing my famous crispy tacos and use taco seasoning in the taco meat.
oh, on the OPs defense, he never said Italian meatballs...

The red marinara fsm god is not the true fsm god...scripture states it was the carbonara fsm god that battled the garlic loaf devil in the first century dinner hour...

Where is your personality from? tv land?

I guess what I am driving at is that as I get older and wiser and deal with relationships I often wonder how did I become the me that I am today and where did I get it from. Why do I care? I guess career/ goal stagnation and a desire for self improvement has brought me to this point of self reflection as well.
How did TV get mixed into this idea?
Mine would be Lawrence Welk...PoP..Sheeezzzzzzzzzzzzz

Why is violence for self defence acceptable by law since you can just run away instead?

Is violence for self defense acceptable by law.
Well that depends where you live.
you show me a law in any NorthAmerican jurisdiction that does not allow to protect your life by any means nessesary.
The running away has no bearing. this is not about street fighting, its about protecting your life.
Right. and the best way of protecting your life is generally (where possible) to run.
that is ridiculous to say "the BEST way to protect your life is to run"...where does that come from. Where in the world is that the LAW or even the regular custom?
