Posted: 6/13/2007 4:30:11 PM Heart Attack on a Plate! Twice baked potatoes Wash off two large baking potatoes (if feeding 2 people, just use 1 potato). While potatoes are still a little damp, rub them with salt and wrap them in aluminum foil, bake at 400 degrees for 1 hour. Remove and let cool. After cooling, split the potatoes in half and scoop out the middle reserving in a mixing bowl. Leave some potato in the skin. Mix scooped potato with salt, pepper, garlic powder (all to taste), 2 tbls sour cream, 2 tbls butter, 2 tbls dried or fresh chopped chives, 1/2 cup shreaded cheese and 1/2 bag of bacon bits (use the real ones). Mix all ingredients well and divide evenly filling potato skins heapingly. Bake at 350 degrees for about 20 minutes.
