Baby Carrots & Bleach - do we really need to ask what they've soaked our produce in?
Posted: 8/25/2009 9:08:57 PM
Bleach is in most public drinking water.

Bleach bottles tell you how much to add to make "contaminated water" safe to drink.

Chlorine Bleach (and most other forms) dissipate into a harmless form in 24-36 hrs. of air contact.

The man who first made Baby carrots from lg. unsaleable carrots was laughed at and called crazy. He laughed all the way to the bank!

Anyone else a phyllo/filo/fillo pastry fan???
Posted: 8/20/2009 11:43:33 PM
I take the boxed ready made sheets and cut rectangles (it usually comes folded in 3 layers) out of ea. fold. I get 6 pieces, then take 3 and cut the middles out about 3/4" from the edge and put 1 cutout (save middles and bake these also for covers when it's done) onto 1 solid flat sheet w/ a bit of butter to make a big boat/shell and bake until done. After it's baked I fill it w/ a seafood Alfredo (simple Alfredo sauce w/ lots of shrimp, scallops and crab added about 5 mins. before it's fully reduced ) and put the covers on top then cover w/ more alfredo.

That recipe is a tad high in Cholesterol....

I've also made the little pastry shells and poured home made truffle mixture (while still warm and liquid) into them.

Why Are Over 45 Men In Love With Motorcycles?
Posted: 8/20/2009 12:54:41 PM
I ride all year long and have had many bikes through the years. It's a lifestyle of freedom and the open road!

At least men ride Harley's to impress women

A Harley was always the worst bike ever made (only quasi reliable in the last 12 yrs.) , they don't even place on any "best bike" list's since they die easily. Apparently, it doesn't take much to impress?? for those "Hardly women"! lol

I'll keep my antique "1978 Kawasaki" that even my die hard Harley friends admire.

Chocolate Mousse

Gelatin is made from boiling animal bones, might as well add cream... unless you're Vegan ;)

Coconut cream would be better than Coconut milk.

Tapioca pearls are plant based and could also work for texture.

Canning requires a set process, freezing in plastic containers vs. canning jars might be better if you don't know how to can properly. Mix 20%+ raisins in with it to help the flavors or even make a Chutney (add nuts, raisins, cranberries, coconut etc.).

If all else fails, put them in a smoker on the coals as a flavoring vs. apple wood chips.

living on a boat
Posted: 6/2/2009 11:31:51 AM
Sail is the way to go, almost no gas/diesel to run them and more storage space w/ the smaller engines. They usually cut through the waves better when the swells are up.

I can go out on the motor at <1 gallon per hr. @ 5-7 mph and put the sails up for a free ride. Power boats are rated @ gallons per hr. and anything 0ver 25-30' will burn 8-20+ GPH. Even the wealthy don't take them out too often.

Buy a fix-er-upper or decent boat outright if your handy w/ fixing things (especially inside/interiors) BUT never skimp on a repair, it can mean your life. Do it right the first time or it could be your last time... Older boats (before 1990) are more ruggedly built compared to the paper thin new ones. I could ride out a hurricane in mine but a newer one in the same class, really couldn't.

Living space is important since a lot of boats are cramped, mine has 6'1" headroom, a 7'x7.5' main cabin and a 6.5'+ V-Berth (bedroom) which is big for a 27' boat.

Many boats are for sale now and the power boats are a lot cheaper at first, but kill you w/ gas/diesel.

www.sailnet.com forums are great, they even have a girls only area since many single women live aboard.

FWIW;
Guests can't be asked for gas money etc. on a boat over 25', that's illegal unless you have a charter license.

Also, any boat rated at sleeping (not carrying) more than 7 people requires a Captains/Charter license.

Another problem w/ online is most think the grass is greener at the next profile and keep looking at others (trade up?) and all you do is lose in the long run.

living on a boat
Posted: 6/1/2009 9:40:00 AM
I've been living on the water for almost 2 years now and love it. This boat was a test to see if I could adjust to the live-aboard lifestyle with a smaller boat since it costs a bit less initially and is much easier to sell than a lg. boat when you upgrade later. I'm already planning to get a larger one in the 34-45' range in 1-2 years since I really love the lifestyle.

My boat is a 27' Coastal cruiser Yacht, it sleeps 4-6 people and is capable of sailing to almost anyplace in the world. It's heated, insulated and is warmer than most houses in the winter. It has the usual cruising equipment like a gas grill mounted aft (back), ice box, sink, microwave, coffee maker's, good sound system, TV, VHF radios (marine 2 way), full head (bathroom) w/ shower, a 45 gal. fresh water holding tank, 110 volt shore power for the standard elec. plugs and a 12 volt to 110 volt converter for any of the creature comforts that are needed while out on the water.

I'm retired so I'm probably going to sail down to Fla. (play tourist all the way down) and Carib. islands over the next winter and enjoy the cruising life :)

The local dance clubs here in RI have Puerto Rica/Cuban/Colombian etc. dancers w/ really funky street styles of Salsa/Bachata dancing that's different from the formal dance styles.

Bachata looks soo sensual when they do it.

Along the same lines to live in as a RV, but nicely different, I live on a sm. Yacht.

For the geography impaired, a quick reminder that 75%+ of the earth is water. :)

If you're near the coast or a lg. lake, it's usually a bit cheaper than having an apartment.

Sailing also gets unlimited FREE miles from the wind...

Sea Scallops and/or Shrimp on a stick,
Posted: 5/31/2009 7:10:09 PM
Sea Scallops and/or lg. Shrimp on a stick,

Put a spaced row (1/4-3/8" or so apart) of lg. sea scallops or shrimp on a stick/skewer and dip in or brush w/ melted butter, then douse w/ some Ginger powder and lots of Old Bay seasoning or whatever your favorite dry seasoning is. Cook over "sides" (over the top of the fire burns outsides) of fire and cook until done.

Shrimp cooks faster than the chunkier scallops so don't mix them on the same stick.

Roasted Corn, peel back leaves but don't remove, pull the silks out, brush w/ butter and fold the leaves back to cover the corn. Use a metal skewer through the stalk end and wrap w/ foil, takes about 10-15 mins and it's done.

Yeast 4 bread
Posted: 5/31/2009 6:09:33 PM
Whoa, Sourdough is a whole different animal / process etc.. lol Potatoes create the mash and yeast that is used for it.

I love it and did try to make it a few times but found it was easier to buy it already baked at the better markets. Stop & Shop (a New England chain) has a really good Boulle (sp?) round style .

Interesting tidbit I found, makes me want it all the time now.

Sourdough turns Carbohydrates into Proteins?
by Chef Cookie Soles

"I would like to share a bit of research I came across recently concerning "Sourdough". What originally caught my eye was an analysis of laboratory tests. They say that Sourdough contains the greatest amount of protein for it's weight and size of any comparable food. "Hmm" I thought "just how does that come about when it's ingredients are all carbohydrates?" Apparently a wild yeast forms in the fermentation process of the starter. At that stage, a starch food is turned into a protein dynamo food."

Yeast 4 bread
Posted: 5/30/2009 10:31:46 PM
Google "How does sugar effect the growth of yeast" or "does yeast need sugar"
answers;
-yeast is a fungus, it needs energy for growth. sugar supplies the energy yeast needs to grow, so when they mix, the yeast is able to rise.

- yeast uses oxygen to release its energy (respiration). so the more sugar there is, the more active the yeast will be.

The difference in yeast strains is just the actual cutoff/kill point for the percentage of alcohol produced by the strain and when the yeast is killed off because it produced too much alcohol. Bread yeast will only produce about 6% alcohol but it still works the same way.

Although flour is a complex form (carbs.) of sugar, it doesn't work as well or as fast.

Yeast 4 bread
Posted: 5/29/2009 10:51:27 PM
Yeast really needs sugar to feed on and then it multiplies like crazy.

Make sure you start with luke warm water, take 1/2 of the water and microwave it until it's warmed to 105-110F or so max., stir in 1/2 tsp. sugar minimum per tbls. or cake of yeast. Then stir in the rest of the water to cool it a bit (too hot and it kills the yeast), then add the yeast and stir it again. go do something else and let it sit for 10-15 mins. or so, it will be foamy on top when multiplying and now it's ready to use. It takes about 1 hr. to rise this way, if it sits too long it will have 5-10+x's the yeast and smell like alcohol.

If it's a dry mix, use the warm water, mix, then in a low/warm (proofing) oven let it sit and rise 1 hr. or so .

The "Ghirardelli Chocolate Company" makes a 1lb. can of ground chocolate powder, nothing but pure chocolate :) and a sweetened version is the same price, but sugar is cheap.
It's better for recipes than the usual brand everyone uses...

I do it this way

1 lb bagged/shredded slaw
3-4 really heaping tbls. Miracle Whip type dressing.
1-2 tbl. sugar
few shakes of salt and pepper
1 tbl. poppy seeds

It takes at least 6-8 hrs. (overnight is better) to get the cabbage a bit soft and flavors blended so mix/stir it up well every hour or so, 4-5 x's. It makes it's own liquid so I don't add milk etc..

boiler onions out the wazoo
Posted: 5/14/2009 9:50:50 PM
Onion soup works well, just halve them.

Cheesy Sprouts and onions.

9x9 casserole dish or a loaf pan,

Equal amts. of Brussels sprouts (frozen type works well) and boilers to fill pan 3/4 full
if using regular onions, 1/4 the onion, then thick slice/chunk them.

Add 1/4+ lb. sharp real cheddar (not low fat since it doesn't melt well) cheese, a few (or more) shakes of good (hot) Chili powder and mix it up well.

Add approx. 1/2 cup milk, cover and bake @ 325 until the sprouts are fork tender.

You will love this even if you usually hate sprouts.

Cream Of Soups
Posted: 5/14/2009 9:21:57 PM
Creamy butternut squash soup w/ sausage

I do this in a 3 qt. crock pot and get 4+ big bowls of soup, adjust qty. as needed.

2+ lbs. (depending on how many your feeding) peeled/cubed butternut squash, cooked until very tender, then mashed coarse (nice texture) or pureed (creamier).
add
1/2 sm. red pepper seeded, diced.
1-2 scallions cut in 1/4" rings and cook the above on med./low heat until peppers are slightly tender. These two are for color, not taste and are optional.

Add 1/2 tea. apple pie spice or a few good shakes ea. "ground" nutmeg, ginger and cinnamon to taste.

Stir well then slowly add med. hot (microwaved) 1/2+ pint half and half or cream per 2 lbs squash and mix to your liking/consistency. I prefer something thick like loose cream of wheat rather than a tomato soup.

Add 1/4-1/2 lb. "cooked" maple flavored breakfast sausages cut into 3/8-1/2" long pieces. You could also use 1/4 lb. good quality smoked ham (I like Black Forrest or Smithfield hams) slivered or cubed. If it's a 1 dish meal, add more meats.

Stir it up and serve.

Warm Sourdough rolls/bread and butter goes great with it!

Want a great Thanksgiving dinner soup? add diced Golden delicious or Macintosh apples cook until they're semi tender and leave out the meat! Or not...

Limit the beef (all cuts are 40-80%+ fat) and replace it with pork, chicken and fish in your recipes.

Oily fish like mackerel, bluefish, salmon etc. are great for the Omega 3 oils they contain.
Tuna is also low fat.

Easy on the real butter (never use margarine) and it still gives the real flavor.

Oatmeal, beans, broccoli, asparagus, cabbage and corn are great filler foods loaded with fiber.

Add chicken or shrimp to a corn chowder or veggie/barley soup.

Add shrimp, scallops, fish, chicken or pork to rice and bean dish's (Gumbo, Creole, wild rice mixes etc.)

Macaroni/Spaghetti/Angel hair etc. and tomato sauce is great with seafood added to replace those high calorie meatballs or sausages.

Any real Asian markets near you? Get some Shrimp or Lobster balls in the frozen section and add them to the sauce 10 mins before it's done or steam them and add later for an interesting meal. While at the market, Dumplings are cheap and stick w/ the seafood or veggie types. A bag of 48 dumplings is about $5 here.

brown sugar and butter in carrots is good but try real maple syrup instead, it's yummy.

Fresh fruit cobblers w/ oatmeal are usually filling, very healthy and satisfy the sweet tooth cravings.

Buffalo steaks, hamburger etc. is very lean, only 20% fat and has a texture more like chicken than beef.

Clean the tubes and skin them but don't cut them. Stuff the shell with blanched spinach, garlic, grated Romano cheese (or your fav. hard cheese) , sliced black olives etc. then bake at 325 F w/ some red sauce (vodka or Alfredo sauce works well) covering them in a covered casserole type pan until tender. Adding Shrimp/Scallops/Lobster etc. to the stuffing is also a nice touch. 2-3 per person w/ veggies like grilled Asparagus or Zucchini makes an easy elegant meal.
