I see these questions:
1. - "...just curious about a country/cowgirl and I am a novelty to them?
2. - "... are genuinely attracted to a down to earth woman who can be both soft but hard at the same time?"
3. - "Do some men actually like women that are more fit than curvacious?"

1 - Different men, different answers. Depends upon the guy.
For me? Yes. It seems there are few women who don't want to live in the big city, so that is something of a novelty.
2 - Again, depends upon the guy.
For me? A definite yes. This is certainly my preference.... if I actually understand what you are asking.
3 - Depends upon the guy. Seeing a pattern here?
For me? "Fit" is always a very good thing, and more important than the classic hour-glass figure or being rail-thin. Models walking on the runway may look good with makeup, expensive fashions and professional lighting, though they don't look so good in real life.

Everyone changes over time, at least a little. I think it would help to ask different questions.
May I suggest:
- "What do I want?"
Very few of us (if any!) meet our own goals of perfection; I bet there are things you know about yourself that you would like to improve upon. Pick one goal that is doable within a week, then get it done.
Repeat. These small successes are contagious!
May I also suggest:
Look around you and identify people you admire. Spend as much time with them as possible, and emulate the behavior you find admirable.
Repeat as necessary.

Pretty much every guy would have a hard time maintaining interest in that situation

Sounds like you are asking our permission to break up with a woman after you have been intimate with her.
Recommendation #1 -
check your double-standard index.... If she threw herself at you and you ended up in bed, then you are just as "guilty" for catching her.
Recommendation #2 -
Get better at judging if a woman is relationship material. The first step in this is to decide that you want a relationship, and to decide that "just sex" is not something you want.
All-too-often, these "just sex" episodes happen with someone who is bat-shit crazy.

Cigars are an occasional thing.... "Smoking" is something you do a few times a week or more often.

My name is often mis-spelled, and it does bother me a bit.
However, this annoyance is very low on the list.
If a person would continue to get it wrong after meeting a few times, and after pointing out that my name is spelled differently than what they have been using, then it would be more of a concern. Until then? Not so much.

Door number 2, please. I lived scenario #1 for way too long, and had no interest in continuing.
...now if "my" stuff is scattered & messed up, we'd have to talk. And at least one side of the sink has to be open. Stacking dirty dishes in the sink so it's completely unusable won't fly where I live. I get a bit cranky if that happens.

Couple points -
1. A woman in a battle for custody of her kids had best be fully committed to that rather than trying to meet guys.
2. A 20-year-old single woman with three kids has been way too "busy", and will be VERY busy for a number of years. You have made significant choices; attend to them.
3. You want to have your "head screwed on". I do not think anyone in your position could possibly have it screwed on; your life is WAY too complicated. Adding another guy into your life is "not recommended".
I have learned that there is NO WAY I can 'save' a woman, no matter how much I'd like to. Yes, guys can be a d@mn fool that way, me included. You really don't want this kind of guy in your life - you'll always be the broken one in that relationship.
Does the past matter? Absolutely!
Do arising problems at present matter? Absolutely!
Would I contact you to see if you'd be interested in a date? Absolutely not. Any man who would be is either looking for a quick roll in the hay, or is on a crusade.
A couple general points about your post:

Well, yes and no.
Women do have "expiration dates" as far as having children goes. It's simple biology.
If the guy is looking for a woman to raise a family with, then age is certainly a factor - he won't be looking for a woman in her mid-40's or older.
30 is not too old; 40 is getting there.
If the guy does NOT want to start a family, then the whole expiration date thing does not matter.

I remember in the '70s people were all worried about the impending ice age.
The "Global Warming" scare is now becoming "Climate Change" because the data is changing, or was faulty.
The most significant greenhouse gas, by far, is WATER VAPOR.

First, take care of yourself. Be selfish about this.
It also helps to look for things to be grateful for... things to be happy about. If you're not used to this, it will take some practice.
Ask for good things to a part of your life. Figure out what you want, then ASK FOR IT.
This is not trivial... knowing what you want, seeing it in your mind, is not an easy thing. This, too, takes practice.

Some more useful questions might be:

INTJ here - rarest (and finest) of the rare.
I was first introduced to the MBTI in the mid-80's. The woman I was dating was a corporate instructor, and she used this type indicator. Every time I have taken the indicator I have come up INTJ.
I've been in technical fields almost all of my adult life, and find a lot of techie things easy. I didn't know that was strange for a long time.
Over the years I have seen the value of (and developed) non-introverted & social skills. Most people are skeptical when I tell them I'm an introvert.

I'm his client.
If he is a provider of any kind of health care (your doctor, therapist, chiropractor, etc...), then there are some very strict limits on what is permissible.
If a doctor dates (or even marries) a woman who is a client, or was a client, then that doctor will likely lose his license.
