I've never heard of those potatoes, but the cooking technique is dead on. Soaking the potatoes is key as it removes excess starch. The first fry (325F) is to cook them, the 2nd (360F) is to brown them. Using peanut oil is still the best, but pricey.

Everyone in the US yaps about beer batter, but I heard that many British fish n chips joints use seltzer water, which would you suggest?

First thing is the meat. Either get 80/20 chuck, or if you have a grinder, just do a chuck roast (which is amazing).

#1 rule ONLY MEAT....no breadcrumbs/onions/ice cubes, etc.

Form 8oz patties (don't mush it, use a light touch and press down the middle a bit). Season the meat with kosher salt and cracked pepper, let rest for 10 min.

Sliver (slice paper thin) an onion, and slice up a tomato

Heat up a cast iron skillet or grill to med and oil it.

Throw the burger on there with some of the onion, and cover with a metal bowl.

If you want cheese, put it on after 5 minutes.

Don't flip it. The burger is getting steamed...just let it go

After about 8 minutes (or done how you like), put the burger on a big toasted bun and add the tomato....no other condiments...

Right now, I have 4 bbq sauces, 7 hot sauces, homemade ketchup, 3 mustards, A1, A1 thick and hearty, ranch, balsamic vinaigrette and italian dressings, worcestershire, horseradish and Iron Chef General Tso sauce.

I use Siracha, Tabasco Chipotle, Tapatia, and A1 the most though.

Mexican:
Grill a chicken breast
Top with shredded cheddar, salsa, guacamole, sour cream, serve with refried beans and rice.

Italian:
Sweat garlic in olive oil, cook up some penne pasta, top with canned artichokes and roasted red peppers, top with parm cheese and fresh basil

BBQ:
Get a pork butt or chuck roast, coat with salt/pepper, wrap in foil. Mix 2 parts bbq sauce to 1 part water, put in foil pouch. Cook at 275 for 4 hours. Shred meat, and serve with slaw.

You can never go wrong with ramen either!!!

Webers are way overpriced in my opinion, I have one. You can do just fine with a normal charcoal grill for most applications.

If you're doing real barbecue, get 2 of those thermometers that act like a pager. One for the fire, and one for the meat. I got mine for $30. Spray (not mop) and chip every 1/2 hour, wrap the meat in foil for the last 1/2 hour, if ribs, finish on a hot grill, and baste for 15 min. Just keep the temp while cooking to 225-260, and use the thermometer as a guide. After a while, you won't need it.

My thing was there is a place for singing, and a place for screaming. If the balance is right, it's powerful as hell.

My singer could do Cradle, Cannibal Corpse and Anselmo good, but couldn't actually sing. He didn't have his own voice, just copied, so we got branded as a copycat band.. I don't like constants of one or the other, you need both. Screaming for the sake of it "being heavy" is crap.

Okay, where do I start....

Oscar. You won't meet women on here by attempting to be a feminist.

I used to like Madonna in the 80's when she sang good songs. That's it. She keeps "reinventing" herself to try and still make a buck.

I don't like wannabe musicians going overboard to "make a statement against the establishment" for no other reason than to stay in the spotlight.

And of course, I have to do this...

Cyndi Lauper can still sing circles around her, she still looks like a woman, and doesn't portray herself as anything but what she is, just a normal woman who can sing her ass off.

What's missing? Real disc jockeys. Since ClearChannel and the like repeat the same 100 songs over, and over, and over, and over, and over, and over again. I'm 29, and I still remember having stations that had one dj playing metal, the next guy would do the pop stuff, etc, but they had the power then on who to play. If one of them liked a demo, they'd play it. Now, in Pittsburgh, I get to hear the same country song, in sync, on 3 stations at the same time, and maybe a rock version on another.

The music is still there, but it's being hidden because one won't pay a king's ransom for your daughter to see Hannah Montana unless it's on 24/7. It won't make ClearChannel money .

Yeah, they have those stovetop smokers, but you're better off doing it outside. The smoke flavor is great, but not so good 3 days later when the smell is still in the house. Just throw the soaked chips in foil, poke a few holes, and throw it into the fire on the grill.

For the wood, I use mesquite for beef, potatoes, etc, but everything else I use a hickory/apple mix. I've never tried cherry, but that can't be a bad combo either. Check out Cabelas online. They have a ton of stuff if you can't find much in your area.

I learned from my Baba and Jeff Smith. I just picked up stuff when I was a kid, and learned how to do it later. The "how" in a recipe is much easier to understand than the "why", but once you understand the "why", you control the "how".

That's my philosophy lesson for the day. It sounds stupid, but it's very true.

There are 3 main sauces in Carolina Barbecue. South is mustard based, eastern North is vinegar, western North is a vinegar base with some tomato sauce/ketchup added. You can also check out a site called "thesmokering". I've learned a lot there.

Do you mean the first date part or the other one for "the what do do" stuff? That is tough. I figured the pics were bad, and in the 2nd one, that was me trying to smile! I don't think I've smiled in a picture since I was around 9. When I try, it looks (and I feel) awkward. It's an old school, hunky family thing I suppose. You should have seen my old one.

Italian Roses

Stuffing Mushrooms, cored
Hot Sopressata
Bocaccini Mozzarella, drained
Green Onions
Olive Oil
Sea Salt

Preheat the broiler

place one slice of sopressata in a mushroom (try to shape it so that it resembles rose petals), then a mozzarella ball. Drizzle with oil, add a pinch of salt, and repeat for however many you want. Put on a baking sheet and broil for around 5-7 minutes, until the cheese is somewhat melted and the mushroom is done, but not mushy. It needs to be firm.

Here's the fun part. Get the green onion. Cut into 2" pieces. Then slice lengthwise 4 or 5 times, but leave about 1/2" intact. It should open up like a palm tree. Do one for each.

After the mushrooms are done, put one of the onion things stem side down between the mushroom and sopressata, then plate. I like to arrange sliced tomatoes marinaded in olive oil, and balsamic vinegar, Parm-Reggiano shavings and basil chiffonade around the mushrooms and maybe serve with real Bruschetta (toasted bread rubbed with a clove of garlic). You could also just get rid of the tomato/basil thing, and just put the vinegar on the shrooms.

Obama will not do anything unless it adds to his socialist juggernaut poll numbers. How can a "potential" Commander in Chief not face the people who have given everything to ensure our safety when he is the one who could ultimately command them?

He has had no interest in visiting the troops once he learned the press couldn't follow . That is intolerable.

The only sauce in a cheesesteak is grease/meat juices. Cheese Whiz is a "relative" newcomer, as Pat's started making the sammiches in the early 30's, and Cheese Whiz wasn't invented until around 1953. I would have thought American cheese was the original, but the owners' name was Oliveri, so I'm assuming provie, which is my favorite by far.

Either way, Pat's and Geno's have become tourist traps. Other places make them much better. Hell, there's a joint around Pittsburgh who the owner was originally from Philly that despises Cheese Whiz to the level of "no ketchup on a dog" in Chicago.

For a real Cheesesteak:

#1 good roll, a thin, slight crust on the outside, soft in the middle (not Italian/French bread)
#2 have chopped onions cooking already on the grill
#3 very, very thinly sliced ribeye or round (call your butcher ahead of time on this to do it for you), cooked until gray with some oil
#4 sliced provie on the meat while it's cooking
#5 put the meat and cheese on the roll, add the onions on top.
#6 chopped hot peppers on top if you want them.

No lettuce, no, mayo, no swiss, no ketchup, it's just the way it is.

Put it in a squeeze bottle, you'll find more uses for it, garnish, topping for any potato dish (especially chips), blini, chili, anything Mexican, broccoli, cucumber, tomato salads, I've used it in mac and cheese, mixed with salsa and spread on tortillas, mix with other sauces (A.1., bbq, siracha, etc, but use immediately, or else it will curdle). Google "Eastern European cooking", you'll find a ton.

MontrealGuy on the first post was pretty much right. But, I'd get some basic lessons for 6 months or so, then go on your own to develop what you learned. I think that if you get taught too much, you can become an excellent guitarist, but won't be a good guitar player. There is a difference. The more you learn (basically copy) from a teacher, the less of your own style will come through in what you play. There are very good technical players like Malmsteen, Vai, Satriani, but Angus Young still sounds better because he plays with more passion instead of just wanting to play perfect. Any instrument should be an extension of your heart and soul, not your brain.

The trick for making KFC original recipe is to fry it in a pressure cooker. If you want extra crispy, then just plain ol deep fry. Chick Fil A uses a pressure cooker too. I've made both, and that's the main thing. You do need to be careful with those things especially with hot oil.

For others, check out topsecretrecipes.com. I have all of his books, and they're usually really close, if not better. Try the Heinz ketchup one. You'll never buy it again.

Has Obama stated his stance on anything meaningful regarding any policy besides "it's time for a change"? Are we getting the hang of this?

Which candidate will say "illegal immigration is wrong"? None. They will go for the votes wherever they may be.

Ignorance = stupid people. Vote for the best person, regardless of party affiliation. (There are too many people who vote across party lines because of the old stereotypes.. democrats for poor, republicans for rich, my grandparents are of that still thinking).

I would love to have some candidates who aren't concerned with (or have had) a lifetime job in politics.

The republican that tries to be democrat to get votes, and democrat that tries to be republican to get votes, versus the guy who has no views, opinions, stances on anything. I don't like any of them. Couldn't either party find a good candidate? This is like the last 3 people you have to pick to play dodgeball in gym class....they all suck. I may be playing the Brewster's Millions card....I don't want to be responsible for what will happen with any of these schmucks. Imagine the bumper stickers "Don't blame me...I voted for none of the above"!

It means nothing if a QB doesn't win a championship. If the owners can't put a team together, how is that the QB's fault? Marino is easily top 5, top 3 with what he had to play with. So following your logic, Mark Rypien, and Joe freaking Gibbs are better than Marino?

As for most overrated, I'd have to say Aikman
Most under-rated, Warren Moon or Jim Kelly

Stupid trivia: The guy that played Al Bundy (Ed O'Neill) was drafted by (or tried out can't remember) for the Steelers in the late 60's. If we would have kept him, he'd have some rings, but...he may have never been in the best tv show of all time!!!

Hockey is much rougher than soccer or football. Soccer is worse for the knees and ankles maybe though. But I'd rather compare it to the "toughest sport in the US". Lets see an NFL team play 82 games in 6.5 months. Gary Roberts walks off of the ice with a broken leg on his own power. Players lose a teeth or get a bad cut, they're back in the game in minutes. If a lineman in the NFL stubs a pinky, he gets the ambulance (exaggerating ..slightly). Now if football players played offense and defense without subs like in the olden' days, it might be different. Australian rules football is pretty sick though. I wish it was still on ESPN.

Another thing you can do if you don't have time for the dough which could take 24 hours, just get some from a pizza joint that you like. They'll probably sell it to you. Then just do it how you like.

I've had one in Pittsburgh called a Philly Steak pizza. Other places have their own ideas on this, but I thought it was killer. They make a normal pizza, then add the hoagie steak meat, onions, mushrooms, green peppers, banana pepper rings, extra cheese, extra sauce, and the kicker is...curly fries (the seasoned ones like Arby's), and yes it made the difference. I usually like my pies really basic, but man...that thing is awesome!

How to cook a really great steak?

First off, don't try to do a steak in nonstick. It won't sear (just brown). Alton Brown did a show on that because there is a myth about nonstick killing birds or something. Either way, it just doesn't make a good steak. You should only flip the steak once..you're looking for a sear. As for the cooking times, it depends on the thickness, and how you like them. For really thick ones, you need super high heat to sear it, then flip it on a medium heat on the grill. It'll take practice. Use the hand technique. Loosen up you hand, and press the part between your thumb and index finger that's rare. Tighten it up straight like a slap, that's medium. Make a fist..it's well. You could use a thermometer, but poking it will only spill out the juices. Also, take the meat off of the grill slightly before it's done to your liking. There is still heat in it too keep cooking. Lets it rest for 5 minutes to let the juices redistribute. If you don't, when you cut it, all the juice will be on the plate instead of the meat.

I agree about the charcoal. Use a gas grill only if you have to. I'll take it a step further...Charcoal briquets don't give off enough heat, and have nasty chemicals in them. Get pure lump charcoal (it's natural, and more importantly..burns at twice as hot). You can get it at Home Depot or Lowes. The stuff weighs a fraction of the Kingsford stuff, and leaves almost no ashes. You can also go for wood chunks like hickory, mesquite, etc. Be sure to use a chimney starter or something....no lighter fluid!

Gluttony is a sin. Finding a use for bacon fat isn't. You hit the nail on the head about people now though. People are lazy, and blame McDonald's for getting fat. Of course you are going to get fat by eating food all of the time! It's not their fault, they didn't put a gun to you head to order a Big Mac. I go there, and I usually order 2 plain old hamburgers, small fries and a Coke. If you do it every day, yes, you'll be a plumper. I live it when you see a huge person order 2 Big Mac's, large fries, milkshake, and a ......diet Coke. People should eat until they're no longer hungry, not until they're full. As I said before....MODERATION. Back to the original intent of this post....rub a steak with bacon grease, add kosher salt and cracked pepper before grilling.

How does one become a better cook?

I'm writing a book about that. Not with a lot of recipes, but on HOW to cook. Give suggestions on what works and what doesn't, and encouraging others to go off of that. People can follow recipes, but that doesn't mean that you can cook. I learned some from my grandmother, TV, etc (I used to watch Jeff Smith after school when I was around 8..(insert joke here). After you know the basics, you go on your own, and make things that you like, and refine it. Ask people why they do certain things, not just how. Alton Brown is an excellent example. After a while, you'll have a bunch of ingredients, and be able to make something out of that without using a recipe.

An example. You like tomato sauce. Why? Do you like the garlic in it, the freshness of the tomatoes, basil? Get a can of tomatoes, add what you like, and taste it. After a couple of tries, you'll have it. Simplicity is key. Making good food is adding a few ingredients to compliment the main one. You can impress others by presentation too. Make it look good, and people will think it's good. For a grilled cheese sandwich, cut in half, stack one side on top of the other crosswise, throw a tomato slice on the plate, and sprinkle it with some some dried basil. You've made a $1.00 grilled cheese look like a $6.00 grilled cheese, and to people, it will TASTE like a $6.00 grilled cheese.

Any good recipes for Kielbasa ??

I put kielbasa on pizza!

You can really do anything with it, but for a different presentation, butterfly it, make cross cuts on the inside, then fry it in a little oil. Looks fancy. One other I can think of is to make some dough for a stromboli, and wrap the kielbasa, with sauerkraut, and onions in it. Brush the dough in garlic/herb butter, and serve with horseradish. I make my own kielbasa from scratch too. Easter time, I'm busy as hell.

Sounds good Astelia, but I'd substitute siracha for bbq sauces, and add cilantro after it's done. I've heard of people making pizza crusts out of ramen. I love that stuff.
