Creative oatmeal dishes? Unusual but tasty combinations?

Best oatmeal is Steel Cut Oats. Sort of nutty texture and much more flavour than normal oatmeal, and better for you. It tastes different depending on how long you cook it - tastes very nutty if not cooked too long, and more like regular oatmeal if cooked a long time. Supposed to be one of the all time best foods for you, for lowering cholesterol, and helping your digestion/intestinal tract.

Mangos

I love Mangos. Mango Chutney, Mango on chicken, Mango shakes, liquered Mangos over ice cream, Mango Salsa - just use your imagination and you can put it in almost anything. Problem is they are expensive in Canada, and sometimes spoil before they ripen, are hard to cut up without making a mess. But love them. Did I mention my favourite is homemade mango ice cream?

My best advice is to always follow the recipe exactly. Use the best and freshest ingredients. Do not substitute ingredients or omit any, until you really know what you are doing.

baking problems

Nobody has mentioned the fact that the type of muffin tin or cake pan used can also make a difference (same thing as the oven temperature issue). Most ovens are dramatically off. I have one now I call the Towering Inferno and always have to remember to compensate for it. The same with muffin tins and cake pans - some are thin and cheap and cause the muffins to cook too fast. Depends on the metal and the thickness. Same with glass (Pyrex) versus metal cake pans - big difference in the result.

And I do find when steeping tea at work compared to home, that there is a big difference depending on how hard or soft the water is, so I am sure absoltuely everything affects baking.

The thing that nobody has mentioned - that when people are nervous, it is a scientific fact that their breath smells. Ask any policeman that is questioning somebody - the person is nervous and his breath stinks. We emit something when we become nervous - just like some people sweat when nervous.
Maybe the guy is nervous trying to get to know you, and it is not a usual occurrence. Time will tell.
Or maybe he had garlic or a Cesaer salad for dinner .......depends on if it is all the time.

Just tell him nicely- no other way.

Mom had only one edible dish...yours?

Wow, I thought everyone would write in here raving about all of the good things their Mom cooked, but it is just the opposite - nobody's Mom could cook it seems - except mine.

My Mom, bless her soul, used very basic ingredients like good cuts of meat, butter, salt and pepper, and onions, and little other spice. She certainly had the knack. It was fairly plain meat and potatoes, but she knew how to brown things perfectly. We always had chicken breasts, pork chops, or scalloped potatoes along with macaroni and cheese served with spareribs, - and always roasts on Sunday night. We had a lot of New England Boiled Dinners, or rich stew with lots of meat.

We did not have a lot of money, but we sure ate like kings! We always had the best sandwiches at school - we never had cheesewhiz or peanut butter or bologna - always thick left over roast beef, salmon, tuna, left over turkey or chicken. Not sure how she did it.

Actually, we never had jeans or running shoes either - but one or two really expensive dresses and good sturdy shoes and warm boots and winter coats. But sometimes we wished we could have cheaper clothes and more of them. But I digress ......

And her spaghetti was the plainest in the world, but everyone said it was the best ever. Lots of meat, browned well, and onions, salt and pepper, and a can of tomato soup and boiled down with tomato juice. Oh yes, with two cloves of garlic boiled down with the sauce. No tomato paste or mushrooms or peppers, but yet it had the most flavour of any spaghetti anyone has ever had. People raved about it, yet it was so simple. All in the knack I guess. Get that meat good and browned! :)

Her desserts were made from scratch and we had to always use butter. Chocolate cake, fresh strawberry or apple pie, awesome cookies and tarts.

I have travelled the world and eaten a lot of different food. One time at Christmas I asked everyone gathered what was the best thing they had ever eaten in their life, and no one answered at first, as they pondered, and then, it seemed, everyone happened to answer in unison "anything Mom made!" Which was so true!

I have become an excellent cook also, and am a master at desserts and cheesecake and fancy squares. But living alone, I don't cook or bake as much anymore, just mostly strawberry or Dutch apple pies as people constantly beg me to make them one.

I guess this was therapeutic for me to write, as my beloved Mom is gone.

Unfortunately somebody has tried to discredit Diehard Romantic and they have changed his profile to a rather unpleasant one. His posts are now under Waiting 4 a Woman, but he wants everyone to know that it is not his posts or profile.

Update .... the person has just now contacted Diehard Romantic and said that it was a mistake. Or maybe the person just doesn't want to get booted off POF for nasty games.

Anyway, the real Diehard Romantic is alive and well and appreciates all of your contributions to the post, so keep them coming!

New Forum Heading Needed

I think if some how a new forum could be started, with a heading such as "Please Donate Poem for Cancer", it might attract more attention, as people would know what the forum was about. Currently, I think people may brush over the existing forum, thinking it is just another group of poems. Even if the new site only directed people to the original "Food for Thought" forum, it would help.

And I think that positive or even funny poems are also needed, as the book is a collection of poems to raise money, but not necessarily poems just about cancer. All types of poems can be included. I think DH has mentioned this before. Maybe more people would buy a book that had a wide variety of poems, as otherwise it might appear a bit too depressing or heavy duty for purchasers. You have to reach a market of potential buyers, and to reach a wider number of people, it may be better to have a diverse range of poems included. It may also mean that more people have poems they can contribute.

Finally someone mentioned the old Purity and Five Rose cookbooks! These books are in hot demand - the old ones that is. Anybody have an old Purity or Five Roses cookbook they don't want, please let me know! Please! These have all of the old basic recipes to make good old cakes, cookies, pies, roasts, stews, etc. from scratch and I swear by it. Just uses plain old butter, sugar, basic ingredients, but they are the staples of all good cooking.

Apparently research has shown that ear infections in children are linked to cow's milk (probably the hormones added to it). Children who are taken off cow's milk and given goat's milk instead, don't continually have ear infections. I know people who swear this to be true.

how much should you take in a relationship?

We need more info. How long have you been with him? Was he "sort of" like this before, and now it has worsened, or was he very respectful, caring, etc. before and this is a whole new behaviour you are seeing?
They interviewed people who lived to be 100 or more. They were happy people. They did not have any less burdens or tragedies in life than the rest of us, it is just how they dealt with it.
When I see people treat others with disrespect and then blame it on what they are going through, I always reply that no matter what some people have had to go through in life, they never treat anyone badly. Yes, we need to make concessions and support others, but sometimes there is a pattern that some people always use their problems as excuses to treat other people badly and take out their frustrations on others.

Definately he is going through very difficult times. And as others have suggested, he needs outside help as you aremaybe too close to him to be of assistance and may actually be an enabler to prevent him from picking himself up and moving on to solve some of his issues.
I know two girls who have breast cancer, no money and two small children. But they are cheerful and are determined to beat it. They know that the mind and body are not separate, and that a good attitude and strong will, will help the healing/battling process to defeat this terrible disease. So maybe to be of assistance to him, he needs a reality check that you will help him but not be abused by him, and that he is the only one that can take control and turn things around.
But don't beat yourself up over it. You know in your own heart if this is too much for you to continue in this relationship, or whether you saw signs of this type of behaviour before. It depends on if you love him, how long you have been together, and how long these problems have gone on in general. I have seen where one person is abused and feel guilty if they complain when the other person is going through stressful times, but then find out that every girl/spouse this abusive person had, suffered the same as you are, and it is a pattern and nothing to do with you.
Then there are those who always will seek out others in need to date, as it makes them feel more worthwhile and they think the other person will love them so much if they support them through thick and thin. However, this sometimes annoys the needy person who feels guilty and also who sometimes has no respect for the caring one, as they feel they have no backbone.
You could always get some counselling yourself, as they have care-givers support groups for people being drained by sick friends and relatives and they might help you gain some perspective. Step back from the situation and try to look at it as objectively as you can.
GOOD LUCK. And don't feel guilty if you decide that your life is more important and that you need to move on.

Is it OK to date your friend?

I have seen it go both ways with people I know. Sometimes it bombs as you are used to the comfort zone of friendship and it is like dating your brother if you cross the line and try to have an actual dating relationship. I have heard it is just too uncomfortable. However, other friends have said that it did work as they had a strong foundation of knowing each other and caring for each other, and when they finally started an actual relationship, it was for reasons other than the bells and whistles that are felt with instant attraction.
But ......... there is the chance it will bomb and you will lose your best friend. But most comments are that you will never know until you try it, and most people think you need to at least try it or you might have regrets. Besides, people's situations change, and sometimes the friendship starts when one person is in need, or trying to get over a past relationship, and it is not a good time for anything but friendship, but later on, they are both ready to move on to something more.

Migraines

Good news.

A lot of women get migraines after the birth of a child because of their hormones and blood supply out of whack.
I used to have them for three hours exactly and was totally paralyzed by them. If I wasn't at home, I was in big trouble, rolled up in a ball unable to move. Even the thoughts of going in an ambulance was more than I could bear as I couldn't be touched or moved, they were so bad. I almost died in childbirth but always said that migraines were worse.

I totally eliminated mine by adjusting my diet - no coffee, or things with similar nitrates like hot dogs, pate, some aged cheeses. If I have a cup of coffee, 20 minutes later to the minute I get a migraine. For some people it is chocolate.
Barometric pressure has a lot to do with it also, but if you can eliminate the food triggers, the barometric pressure does not seem to affect you. I used to think it was barometric pressure and lack of sleep, but since eliminating the food triggers, I can go on four hours sleep indefinately and not get one.

I worked for a group of doctors one time, and I read one of their medical bulletins, and it said "Doctors! Don't underestimate the effect of normal tylenol on migraines when nothing else will work for your patients". I found that if I took a tylenol immediately at the first signs of a migraine, it worked when stronger meds wouldn't.
But now I have been free of migraines for over 10 years, and am so thankful I hit on the nitrates/coffee trigger. It is well worth experimenting to cut things out of your diet.

Turkey Cooking Tips?

I agree. No need to cook the turkey to such a high internal temperature. People always cook their turkey too much and it is stringy and tough. You should be able to slice large juicy slices from the breast, not end up with chunks of stringy turkey on the serving platter. If a lower internal temperature has been tested and is acceptable for killing salmonella, why overcook it? Just a habit that should be broken.
I cooked a turkey this Christmas. Everyone raved about it. I also went to two different friends' houses and their turkey was dry and tough and lying on the plate in strings and chunks. Yuck. Why do that when you don't have to?
People mostly get sick from leaving poultry out too long on the counter after dinner without refrigerating it, and from having the raw juice on the counter top and on utensils and cross contaminating, not from under cooking it.

Turkey Cooking Tips?

I cooked a Butterball turkey for the 100th time but it was so greasy it was disgusting. It had fat attached to the underside of the skin (not the oil they inject it with, or the globs they put under the skin), this was the turkey itself. We had to pour 2 cups of grease off of the gravy, and the dressing inside was soaked with grease. Never had this problem before. Anybody else had this happen?

Is coffee bad or good for you?

Coffee is bad for you. It causes migraine headaches and people don't even realize it. It is a diuretic and not good for your system. It affects everyone differently but lots of people have irritability, mood swings and intestinal problems from it, not to mention sleepless nights. It is like any other crutch - makes you feel good while you are drinking it, but later you feel crappy when it wears off and then that is why you have to reach for another one, and it becomes a see-saw for your system.
And all of that sugar and cream is not good at all. Just cut down at least on that, by decreasing the amounts you put in, slowly, and gradually you will get use to less and less. There are very few pure coffees - most have additives, dyes and flavourings that you are not aware of.

Not my fault I was born with a screwed up immune system and allergies and can't tolerate dairy or gluten or wheat, etc. and can't stomach breakfast in the morning. It is a scientific fact that we crave sweets when we are tired, and I have a sleep disorder and only get a few hours sleep a night, and without something sweet in the morning to raise my blood sugar, I am doomed - I would faint in the shower without raising my blood sugar. Not all of us have the capability to eat as healthy as we would like.

Eggs smell because they have sulfur in them. However, I have never had eggs smell. Maybe you are cooking them in too hot a pan, or overcooking them. Cook them gently on low heat. If you are frying them in butter, don't scorch the butter first. Or .... maybe you just don't like the smell of eggs and think they smell bad - ask someone else if they find them offensive.

We eat pastries for breakfast because it is a comfort food, is quick and easy, can be eaten on the run, but mostly because lots of people have low blood sugar in the morning and they use it as a quick pick me up. I can't stomach breakfast in the morning, but have to have some type of sugar.

I do know that a lot of people didn't go because of the type of band. Would it be possible to have the next get together when a different type of band is playing - more of a danceable/mixing type of band that would lend itself more to meeting people and being able to have a conversation. I know there wasn't a choice this time but maybe next time?

You know you're a cook WHEN...

Having only been married for one week, your mother-in-law tries to embarass you and shows up at the door with a bus load of people from out of town. She has told them all that they were invited to our place ......unknown to us of course. You smile sweetly, pull out alot of homemade squares and cookies out of the freezer, grab whatever cheese, crackers, dip, etc. that you have on hand, and serve them all some really great stuff. Then make sure in the course of the conversation, that you mention that you had no idea they were coming over, but so glad they did. Then watch the look of embarassment on the mother-in-law from hell's face. Then for the next ten years, everyone brings up how fantastic a new wife/cook I was, to have all of those great things on hand to serve them without having had any previous notice. :) Needless to say, after 10 years of those type of tricks, I divorced my ex. :)

You know you are a good cook when your team leader at work has to come down the hall and intervene because the men are all arguing over what I should make for our team meeting the next day.

And you know your mother was a good cook, when one time at a family gathering I asked everyone to name what the best thing was that they ever ate, and suddenly in unison, all of my brothers and sisters shouted "anything Mom makes".

This is such an interesting thread. Well, all of the forums are interesting, but you guys on here are truly food connoiseurs. I can't believe some of the recipes people have. Wow. Am spending way too much time reading and copying these recipes, but they look fabulous.

I have never heard of a Turkdunkin - I want one! Who the heck thinks up these things? And the comment about scientists later trying to figure out what the heck it is - well that is priceless!

Help; can someone give me a basic turkey recipe?

Many basic ways to cook a turkey. I have seen chefs on T.V. say that the best way is to cook it upside down, so the juices will flow to the bottom, over the drier part of the turkey, which is the white breast meat. Best to put it on a rack in your roasting pan, if you are going to do it that way.

I always cook mine without a paper bag - butter the turkey all over, after rinsing it well. Stuff with homemade stuffing or store bought. You can also stuff it with lemons, oranges, and different spices. (Some people even cook it upright with an open can of beer in it.) I start it off for half an hour at 375 degrees, then lower the temperature to 325 degrees and cook for another three and a half to four hours, depending on the size of the turkey. Make sure and preheat your oven first. People generally overcook turkey, and there is no need to. After each hour, baste the turkey in it's juices. Put a piece of foil over the top of the turkey if it is getting too brown. Let rest for awhile before cutting. Do not prick the turkey as it is cooking.

shoe on freeway

In Canada, there is a particular tree along a major highway. Everyone that finds an odd shoe on any roadway, comes and hangs it on this tree. The tree is covered with shoes. It is hilarious. You really would have to see it. I often stop by to see if there is a nice pair of high heels there ....... but mostly smelly old sneakers. :( Maybe because high heels don't have laces, so are difficult to hang .........

In another city I recently bought some Iranian pastries at a bakery and they were the most fantastic things I ever ate. A lot of phyllo pastry was used I think. anybody have any Iranian pastry recipes?

I was really disappointed with the itinerary, as for that price I would have expected better/more islands. St. Thomas is fantastic but the other places are the pits and are the cheapest ports so that the cruise line doesn't have to pay expensive port fees. If you look at the fact that there are two days at sea, and the first and last day you really aren't on the ship, you basically lose almost four days. Just not good value for the money.

There are many other cruises that go to Barbados, St. Lucia, Antigua, St. Thomas and St. Maartine for 7 days with newer ships that are only $599. without the flight. And the cruise line and ship are not the greatest. :( Someone hasn't researched this trip very well before offering it to us, or is making an awful lot on it, for that high price. More people would be able to go if it had been a cheaper (and better) 7 day cruise without two days at sea.

Czech or Hungary (Prague or Budapest)

Just came back from Prague and Budapest and loved them both. I met up with my daughter in both places, as we were criss crossing eastern Europe on different itineraries. I would choose Prague if I could only go to one. The Old Town Square just takes your breath away and it is magical at night. The buildings and archeticture are unbelievable. The bridges over the river are lit up at night and people love to walk across the bridges at night - there are artists and musicians on the bridges.
however, Budapest has it's own merits also - and again, old archeticture and bridges across the river. If you go to Budapest make sure and go to the thermal baths - awesome. And go to Fatal Restaurant, right on the main shopping street that runs parallel to the river - for $11. you can have a piece of schnitzel about a foot across, and more than you could ever eat and delicious too. Now that i think about it, Hungary was just as good as Prague, but in a different way
Prague is supposed to be the top travel destination right now.

Make sure and go to the Orchid Gardens, as the grounds are magnificent. Also the aquarium and dolphin pool are really good - the aquarium has the rare Leafy Dragon creature. You will love Singapore!

In the Caribbean, the Virgin Islands and Grand Cayman Island are the best.
In Europe : Prague, Czech Republic or Swizerland.
In Asia, Shanghai or Singapore or Thailand.
The Mediterranean Islands are fantastic.
But I need to go to Bora, Bora and people say that is the ultimate place to go.

Vacationing Solo

I always travel alone - to China, Japan, Thailand, Vietnam, Singapore - and I did Italy, Turkey, Greece alone also. I am a 52 year old woman and got tired of waiting for someone to travel with. The best way to start is with a cruise, because then there are people to sit with at night and you don't feel lonely at all. Then you gain confidence and go for it!
Once you travel alone it spoils you, as you do what you want when you want.
It is just mind over matter. I didn't travel for years because I was afraid of getting lonely, but now I just up and go! I am not a very sociable person, but you are forced to talk to people, and that makes a trip.

Places to see in Poland

Just got back from Poland. It is fantastic. Krakow is very nice, with a huge town square, and lots of horse and carriages, and the Salt Mine is something you should see. Warsaw is nice also, but I preferred Krakow. You must take a trip to Aushwich, and if you have time, travel into the countryside in Slovakia, as it is really scenic. And if you have even more time, Prague, Czech Republic is the ultimate city to visit .....
