buy a rack of lamb and fabricate it into double chops. Pan sear it and finish in the oven to Med. Glaze with honey/ rosemary... heat one cup or honey in saute pan. Add 1 tbs. fresh chopped rosemary and 1 tsp. crushed red pepper

this also works well with pork chops... just use sage instead of rosemary. Just cook the pork all the way. Not too much... overdone means dry. when the juices start to run clear... they are DONE.

shouldn't give this one out... but... take a rack of lamb and cut it into chops... double chops (two ribs per chop) pan sear and finish in oven till medium or medium rare. However you like. glaze: 1 cup of honey 3 Tbsp fresh rosemary chopped fine Heat honey and rosemary in small skillet glaze chops while in oven several times and after you remove it (just before serving) This is an amazing thing... the best lamb I have had.

Super simple and fast!!! Take a dinner plate and place fish fillet on it with a small amount of butter... REAL butter. Season with small amount of fresh dill and salt and pepper. Cover and seal with plastic wrap. Microwave... yes you read right! Untill the plastic wrap balloons. Shut down Microwave and let sit for 2 minutes. Enjoy. We used to serve it this way in a restaurant I worked at. It is better than you could imagine.

Most Cali Viogniers are BLENDED. Usually with Chardonnay. I stay away from the Aussie 'Critter' wines (anything with a critter on the label). They do some wonderful things there... but when you see a critter on the label... it's made just for the US market... usually on the plane ride over here! Not kidding. It is bottled HERE. Critter wines are like a potent Glen Ellen. Ewww Bottling it here is what keeps the price down... but it is made from the poorest quality grapes... sugars are added, maybe acid. Depends on how bad the fruit was.

As you said... on meats and fish. Depending on the wine and vinigar used as well as what dried fruit... MANY flavor profiles can be acheived. Think of it as a French sweet and sour... but more complex Carmenizing the sugar and incorporating the vinigar is a TRICK! Carmelize sugar in pan...slowly add vinigar... next wine. Add whatever it is you are going to use for fruit, I like adding hot peppers as well. REDUCE! This should be thick. It will thicken as it cools as well!!! Le Cordon Bleu!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

That's very cool! It does take it from authentic Spanish into Italian. The oil is the best part!!!!!!! Olive oil rocks. It is a flavor magnet. The butter should be clarified if you are going to add it.

Again... flavor profiles... Open up your spice rack and start smelling! Learn what goes good! Rice will take on all kinds of flavor. Same with chix. Chicken loves Rosemary and Sage. Try brining the chix! Rice... add saffron (not much!) for flavor and a beautiful yellow color. Onion? Shallot? Garlic?

I smoke on a Weber Ranck Kettle. I have used Texas Smokers as well. I like the Weber. I can do larger amounts and still store it. Hickory, dude. Brining the meat is important... let a pelicle form!

Super easy! In a saute pan heat olive oil (1/4 cup) and add liberal chopped fresh garlic (5-6 cloves depending...) and 1 tbs. dried hot red pepper. After 1-2min (don't let garlic brown) add shrimp (fresh, shelled) and cook to done. Salt and pepper to taste. Serve with the olive oil poured over... WOW!!!!

Later harvest always means more sugar and less acid in the grapes. I'm a Pinot Noir dude. Master Grape. MacRostie winery in Cali has fabulous Pinots. Try the Reserve. Just be smart and buy extras to age off for 8 years to REALLY get a treat. Most reds should be aged off significantly. For a white treat do a Viognier. Condrieu or Chateau Grillet will do. Cali is also producing this variety. Go with the Rhone, though. Peace Trivia fact... Syrah and Shiraz are THE SAME!!!!!!!!!

Here... Make a good no meat sauce... Get some Chix breast tenderloins... pound flatter if you want. I wouldn't unless you really know how. T-loins go to mush fast. Mix flour with Italian seasonings... dry... Garlic powder, Oregano, Basil... Make an egg wash. Dip the Chix in the flour mixture... into the egg... anto the flour... egg again... flour. Pan fry and serve with your pasta and sauce. Enjoy.

Dump the Lawry's and make a brine and brine the bird first. This is what all the rotisserie joints do! Let's make one! Oh... 6 cups water 2 cups cider vinigar 1/2 cup KOSHER salt 1/2 cup sugar That should do for a base Now add sage, chipotle peppers, paprika, and whatever else you think! Be creative. Recipes suck. Just go! Learn to profile flavor! A brine causes certain reactions and makes the meat absorb the salt and spices. THE TRICK!!! After brining for a day or 2... and prior to cooking... DRY THE BIRD!!! A clean kitchen towel will do. Season the outside with KOSHER salt and pepper... maybe paprika for color. You will never get a crisp skin if you don't dry it. GBD, baby!!! Golden, Brown and Delicious! I just can't see it getting all that crisp in a crock pot.

Ding Ding Ding! Perfectly explained McLovin... I dated and really fell for a gal who just could not get serious. Same issues... low self esteem and needing to be wanted continuously. It didn't make me feel real good to find out she was dating many more guys than just me. Learning experience. Figure out the warning signs and find someone who is real. In the moment with you to stay.
