Hi, just wanted to say I had a GREAT time and so glad I got to meet some new friends. Sorry I missed the after party but hope you guys enjoyed my baked eggs lol... Can't wait til the next get together cause you all seem like fun people.

And was great to meet you! I think the Egg Strata was was almost GONE! I did not try any of the eggs, not even the Huevos Rancheros, which I want the recipe for! That was a work of art!!!

Huevos Rancheros
Recipe courtesy Emeril Lagasse, 2002

Prep Time: 30 min
Cook Time: 15 min
Serves: 4 servings

Ranchero Sauce:

1 tablespoon vegetable oil
1 cup chopped white onions
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon minced jalapeno
1 teaspoon minced garlic
1 cup chopped tomatoes and their juice
1 cup chicken stock
3 tablespoons chopped cilantro
2 teaspoons vegetable oil
4 large corn tortillas
1/2 cup warm refried beans
2 tablespoons unsalted butter
8 large eggs
1 1/2 cups pepper Jack

To make the Ranchero Sauce, in a medium pot, heat the oil over medium-high heat. Add the onions and bell peppers, and cook, stirring, for 3 to 5 minutes. Add the cumin, salt, cayenne, jalapeno, and garlic, and cook, stirring, for 30 seconds. Add the tomatoes and their juices and cook, stirring, for 2 minutes. Add the stock and simmer until thickened, about 15 minutes. Remove from the heat and add the cilantro. Adjust the seasoning, to taste, and cover to keep warm.
In a large skillet, heat 1/2 teaspoon of vegetable oil over medium-high heat. Add 1 tortilla and cook until warmed through and just starting to brown about 30 seconds. Turn and cook on the second side. Remove, cover to keep warm, and repeat with the remaining oil and tortillas.
In 2 medium skillets, melt 1 tablespoon of butter each, over medium-high heat. Break 4 eggs into each skillet and fry until beginning to set, about 1 minute. Sprinkle the eggs with the cheese and cover to finish cooking, about 1 1/2 minutes.

Place 1 warm tortilla on each of 4 plates and spread each with 2 tablespoons of warm refried beans. Place 2 eggs on top of each tortilla and top with the warm Ranchero Sauce. Serve immediately.

I got turned on to Charizo

I was not in the recipe I posted but you could remove the outer skin from the Chorizo and sautee it crumbled finely an then sprinkle it on top of the refried beens before you place the eggs on it. Would definantly add a great flavor! Chicken or Bacon also could be used I believe...

I will be your taste tester anytime you want to try it!

I have a mexican lady that makes Chorizo for me! It is one of my faves! She has me so hooked on fresh mexican peppers I won't even touch the canned/jarred ones they put on nachoes and what not. Collinsville has several Mexican rest owned and operated by the Mexicans that settled there. I have tried several of the chains and "up scale" ones in St Louis, I still haven't found one that beats them.

I want to thank everyone for coming out, but mostly I want to thank Kat. She's usually the one who's always on top of all the details and in all honesty this was her baby so be sure to throw your kudo's her way.

I had a friggin blast even if I was hard to spot most of the night as I was here there and everywhere! I also want to appologize for missing the after party, I was sacked out shortly after midnight as I had worked that day and actually came straight from there with name tags in hand, but from the looks of things the next morning in Kat's room I'd say a Hella time was had! lol

Wow teach me to stay away from the forums after a party hehehe.. As for the corrupting I would have to say that I think you corrupted sis more than myself.. she kept stating that she began the party Blowing(ballons) and Leighed( Hawaii leighs) 4 guys in less than 5 mins. Myself was still the that is, as Theresa says still in training.. I remained a good girl that night.

I did have a blast and thanks ALL that gave their time and efforts on making it one HELLAH of NYE Bash. Kat any time you need assistance on "blowing"(ballons of course) things you can count on the sisters hehehehe

It was nice meeting all the new fishies and partying with all those that I have meet along the way at the Fishie 2008 parties. I hope the new year brings us ALL, all the happiness that we can phathom in our lives.

glad all had a blast!! We did too, no pics to post though, I almost brought my camera; the most fun I had was watching the one guy in That 80's Band, mock play his guitar and lip sync, too funny he looked like he was on something!! The other fun was kissing my guy at midnight...he made it in time to enjoy most of the I think between the 2 of us, we drank an entire bottle of champagne; and I'm not much of a champagne drinker!!
