Not a fan of lentils. I haven't had a decent meal that included lentils. JMO

Brown rice and lentil soup: 14 oz. can of peeled tomatoes, 4 cups of water, 1/2 cup lentils, 1/2 cup instant brown rice, fresh spinach, frozen broccoli, salt, pepper, basil, parsley. I just throw in the vegetables and seasonings in decent amounts without measuring. You can add other vegetables if you want (ex. one small bag of frozen vegetables) but if you do, you may need to add some extra water. Boil for about half an hour, stirring occasionally. Be advised that the lentils and rice will absorb water, so when you store the leftovers you may need to add a little water when you reheat soup the next day.
