Here is my favorite salad to make. I got this recipe from a friend who is a caterer and it always receives raves.

Spinach Salad

1 to 1 1/2 bunch of Spinach...rinse and shake water off leaves
1/2 lb of bacon........cooked "fairly" crisp and cut into small chunks
10 mushrooms..... sliced..(not thinly)
1 or 2 small cans of mandarin oranges (after drained).
1, 1/2 avocado, cut into bite size chunks.

Toss all in bowl and top with following dressing:

1/2 cup olive oil
1/2 cup white vinegar
3 T sugar
1/2 tsp.salt
1/2 tsp. dry mustard
1/2 tsp. paprika
1/3 tsp pepper
1/4 tsp. celery salt
1/4 cup finely chopped red onion

Note:
...Best to make dressing 1 day before for flavors to blend.
....Dress and lightly toss salad just before serving.
....You will have extra dressing left for other salads.

I like to take baby spinach and combine it with mandarins, sliced strawberries, red onion and toasted slivered almonds. Then I use a poppey seed dressing to finish it off.
Very nice and light. Great on a hot day!
