Left over corn tortilla chips?Page 1 of 2    (1, 2)
You could layer taco stuff on top of a bed of them and eat it with a spoon. Yum!

Chips on the bottom
Taco meat on top of that, then
Melted cheddar cheese, then
Lettuce chopped up really small, then
Tomatoes chopped small then
Salsa, then
Sour cream on top?

Just a quick thought.

I'm a scale watcher and a half, that IS a lot for me. I got a hangover from all the salt..lol

Thanksgiving , I didn't have any French's onions to top the greenbean casserole , and used mashed up Pringle's sourcream/onion on top .

YUM!!

That's WAY too much work for crumbs SS... Do you hold on to the breadcrumbs leftover from your white bread and make meatloaf or something every few months?

I'd use them there crumbs on top of a bowl of Chili along with some Cheddar, Onions and JalapeƱo...

Take a can of chili without beans, a small onion chopped (if you like onions), your tortilla chips, and some grated cheddar cheese. Cook the chili and place on top of the tortillas in an oven safe container/microwave safe. Add the cheese and onions to the top and place in microwave or oven till melted.

Similar to Frito Pie.

- Make taco salads with them.
- Eat them with a bowl of chili.
- Eat them as is. Nothing wrong with that.

Mars, you are making Migas, a very typical Mexican breakfast item also works well as a taco. Originally, that recipe calles for stale torillas to be added, but broken chips work as well, just watch how much salt you add, because the chips have a lot already, esp at the bottom of the bag.

Here's another idea that makes them a real part of the recipe, not just a topping.

This one also calls for stale tortillas to be oven roasted until crisp, so you can see where leftover chips work as well.
Brown some chorizo sausage or ground beef and drain off extra fat, season beef w/taco seasonings. Add a can of chopped tomatoes, some cilantro and of course, a little cumin. Now, it starts to look like a lasagna. In a 9" sq oven-proof pan, starting with a little tom/meat mix layer in some chips, then tom/meat, finishing with some chips(maybe save some of your bigger pieces for the top). Pour 2 C. of chicken stock over the whole thing and sprinkle with a 80z bag of shreded cheese. Bake in a preheated 375 dgree oven for 40 mins. I like to top it with some diced yellow onions mixed with red & green pepers, to add a little color. Put these on in the final 10 mins.
Watch your moisture level, don't add too much stock. Much of the stock will be absorbed into the mixture, but too much and the top will burn and the middle will still be wet. Let it sit for 10 mins, then cut into squares and serve with a fried egg or two and some refried beans or salad.
